Tumblr media
South Indian cuisine is famous for its unique flavours, aromatic spices and delicacies that tantalize the taste buds. A key ingredient often taking center stage in these culinary creations is curd, known for its creamy texture and tangy flavor. This article explores how you can enhance the flavor of your South Indian cooking with the best quality curd. From understanding the importance of curd in South Indian cuisine to choosing the best quality, we’ve got you covered.
Importance of curd in South Indian Cuisine: curd, also known as curd, plays an important role in South Indian cooking. It’s not just an ingredient; It is a staple food that improves the taste, texture and nutritional value of many foods. In South Indian homes, curd is often made fresh daily and used in various forms, from buttermilk to thick curd.
Nutritional Benefits of curd: curd is rich in probiotics, which improve gut health and aid in digestion. It is packed with essential nutrients like calcium, protein and vitamins. Adding curd to your diet can help boost your immune system, improve bone health, and maintain a healthy digestive tract.
Culinary Uses of curd: curd is incredibly versatile in South Indian cooking. It can be used as a base for gravies, as a marinade for meats, as a cooling agent in spicy dishes, or enjoyed on its own with a sprinkle of sugar or salt. Popular dishes like curd rice, buttermilk and avial show various ways to incorporate curd into the diet.
How to choose the best quality curd? Choosing the best quality curd is important to achieve the desired taste and texture in your dishes. Here’s how to make sure you’re getting the best curd:
Check for freshness – Always choose fresh curd. Fresh curd has a slightly bitter taste and a smooth, creamy texture. Avoid curd that is watery or has a sour, unpleasant smell.
Look for natural ingredients – When buying curd at the store, check the label for natural ingredients. Avoid curd with added preservatives, artificial flavors or thickeners. Organic or homemade curd is often the best choice for authentic taste and health benefits.
Uniformity – The consistency of curd varies from thick and creamy to thin and runny. For South Indian cooking, thick creamy curd is generally preferred, especially for dishes like curd rice and raita. Make sure the curd you choose matches the consistency required for your recipe.
Tips for storing curd: Proper storage is essential to maintain the freshness and quality of curd. Here are some tips for storing curd:
Refrigerate immediately — Always keep curd fresh in the refrigerator. Once the homemade curd is set, keep it in the refrigerator.
Use airtight containers- Store curd in airtight containers to prevent it from absorbing odors from other foods in the refrigerator.
Consume within a week- For best taste and quality, consume curd within a week of making or purchasing it.
Finally, curd is an indispensable ingredient in South Indian cuisine, giving it a unique taste and health benefits. By choosing the best quality curd and incorporating it into your cooking, you can elevate your dishes and enjoy the rich, authentic flavors of South Indian cuisine. Whether you’re making simple curd rice or a complex buttermilk gravy, curd will enhance your culinary creations. So, go ahead, unlock the flavor and elevate your South Indian cooking with the best quality curd!

Onam is Kerala's major annual festival
Onam is t.he major festival in kerala.Onam festival although it is known to all, even then I wish to mention one line that according to legends, the festival is celebrated to commemorate King Mahabali, whose spirit is said to visit Kerala at the time of Onam. Further, it is a harvest festival. Anyway, few dishes which I enjoyed during Onam inter alia are a) Chor which is a variety of red rice. I personally feel if anyone has not tasted this variety of rice then please taste it, b) Morru Kachiyatha is prepared by boiling curd with black sesame seeds, shallots, ginger and garlic, c) Avial is a mixed vegetables prepared with grated coconut and coconut oil and milk, d) Kichadi, although it is called Kichadi but preparation is different than Bengali preparation. It is prepared with spicy curd and vegetables which can be ridge gourd, cucumber, bitter gourd etc, e) Kootu Curry is a dry curry prepared with raw bananas and black Bengal gram mixed with grated coconut and local spices. And another one which I remember is Thoran which is a staple item in every Malayali household. Generally, it is prepared with cabbage, carrots and beans with grated coconut. In addition, varieties of local pickles, along with Rasam, Sambar, Pappad are served.
Still, I remember these tasty vis-a-vis eye-catching dishes. Also its aroma can never be forgotten. While I am writing this article, my mouth is full of water. Hope next year, I will enjoy the dishes. I personally feel simply going to a Malayali restaurant and eating food is totally different than dishes prepared at home during festival.
Wishing all the people in general and Malayali people in particular on this auspicious occasion, prosperous, peaceful and healthy life

the “shield around you” visualizations have never worked for me. energy shields “filter” and “soften” but don’t Numb. i’m a little too mentally/emotionally overstimulated to Process It As It Comes, like i normally do. ;;
i need to sleep-- it’s 4:40am and i’m taking my chins to the vet first thing in the morning (exotic vets open at 9:00am, and Dusty and Sisu got into a fight last night, they looked fine but i discovered a couple hours ago that Sisu’s bleeding from a wound on his neck and re-opened the little one on his foot, and Dusty’s ear is nicked, and bite wounds can get some awfully nasty infections. i want to get them on antibiotics, if possible.... so, vet ASAP. //and// i have to work tomorrow. but.)
two people in the house have a stomach bug. i think someone’s menstruating because I’m Hurting but It’s Vague like it usually is when it’s empathy. and between the stomach upset from the sickness and vague pain from either someone menstruating or someone having a rough bout of gas (???? i’m an empath not a doctor),
i can’t.
