Want to throw this out there because it helped me so much and maybe it could help someone else, but rice based meals specifically for breakfast are miraculous (especially if you've been raised on Western breakfasts)
Rice cooker/instapot some the night before or a few days since it stays good in the fridge for a while, and just add it to a pan of like just green onions and egg if im really low spoon takes max like 3 and a half minutes (dishes too), i find its good when my CFS kicks, but my sister finds it helpful for her depression too,
It requires a little prep to be real quick, but often worth it (additional tip to add some spices and butter [or ghee] to the rice, or coconut milk or broth if you can/want to mix it up) good for the autistic folk who might want to make the same thing every time, but also adhd pals who might not
And for my Poor fellows, its cheep; rice, dozen eggs (or tofu but thats a tad less lasting) and 3ish Canadian-dollar sause of choice can keep initial investment under $10-15 if you get a small bag of rice, and Bulk Barn spices can stay way under $3 if you go for just what you need.
totally agree with you. rice rocks! here's what i make pretty much weekly in the instapot:
2 cups water
2 cups rice
8 minutes on high pressure
natural release of 20 minutes (usually)
warning: the pot WILL have rice residue. it is very important to put it to soak or wash it immediately or you will have a very nasty pot! if this happens, you can put water & a few drops of soap in it and turn on the "saute" function for a few minutes - it will boil and help the pot be less crusted & difficult to clean. but the best thing you can do it set it to soak immediately!! you will be so grateful to yourself for doing this!
additionally, for a special treat, sometimes we get FORBIDDEN RICE. it's black rice that is more like wild rice - it's chewy, rich, and nutty. feel like trying something new with a different texture? check it out! you can use the same instructions from above. it's most affordable from the bulk bins and you can find it in stores that carry "health foods."
