These Italian almond cookies have a delicate almond flavor and are a delightful treat. They have a crisp exterior and a chewy interior, making them ideal for a cup of coffee or tea.

Ingredients: 2 cups almond flour. 1 cup granulated sugar. 2 large egg whites. 1/2 teaspoon almond extract. 1/2 teaspoon vanilla extract. Sliced almonds, for topping.

Instructions: Warm the oven up to 325F 160C and put parchment paper on a baking sheet. Put the almond flour and sugar into a bowl and mix them together. Beat the egg whites in a different bowl until they form soft peaks. Mix the egg whites into the almond flour mixture very slowly. Mix the dough until it comes together after adding the almond and vanilla extracts. You can make balls out of small pieces of dough. Put the balls on the baking sheet that has been prepared, and then gently press down on each one to make it a little flatter. Add a few sliced almonds to the top of each cookie to make it look nice. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just barely golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down.
