Kathal biryani is a lovely rice preparation of raw Kathal combined with Indian spices. The Menu for the Day ⁠ ⁠ MUSHROOM BHAJA Mushrooms are grown all over the country specially during the monsoon season. However, one must be very careful to harvest only the edible ones. Due to this fear, most mushrooms are gone untouched. The ones that make to the local restaurants, are considered to be a delicacy. Allergens: –⁠ ⁠ CHOTO CHOTPHATA Choto, means small and chatphata refers to a dish that has a combination of sour, spicy and sweetness. This dish is made using small cubes of potatoes which are boiled and pan fried until crispy, and mixed with handful of chickpeas and tossed together in a dry roasted spices and topped with homemade coriander, tamarind sauce and vegan yogurt. Allergens: gluten ⁠ ⁠ KATHAL BIRYANI Growing up in Bangladesh, I have fond memories of all the jackfruit trees around the house and the amount of fruits they produced. Mum often came up with different ways to use all the fruits, and one of my favourite was the biriyani. Biriyani is a food of festivals and celebrations all over the Indian Subcontinent Allergens: Nuts ⁠ ⁠ BHAPA PITTA Bhapa means steam, and this is a most sought after traditional dish of Chittagong. {Get 2 tsp of Poppy seeds.
{Take as required of Whole spices mix.
{Prepare 1 tsp of Garam masala powder.
{Prepare 2 tsp of Veg biryani masala powder.
{Make ready 1/2 cup of Curd.
{Take 3-4 of For garnish fried cashewnuts.
{Make ready 10gm of Crushed almonds.
{Get 1Tsp of Ghee.
{Make ready 1/2 cup of Green coriander chopped.
{Take 3-4 of raisins.
{Get 1 cup of Deep fried onions.
{Prepare 1/2 cup of Saffron milk.
{Get 100 ml of For chhachh: curd.
{Get 1 tsp of Mint powder.
{Get 1 tsp of Cumin powder.
{Get 1/2 tsp of Black pepper powder.
{Get 1 tsp of Kala namak.
{Make ready 1/2 tsp of sugar.
{Take 2 tsp of Green chilli and green coriander paste.
Steps to make Kathal biryani with pudina dhania chhachh:
First of all wash the rice and soak them for 30 mn.
Then cook the rice in sufficient water and add 2 bay leaves, cardemom, cloves, salt, lemon juice and some ghee..
Remove rice from gas when they cooked 80 percent and drain them..
Heat up the pan and add oil to it..
Now add cumin seeds then ginger garlic paste..
Then add onion paste, when the onions begin to golden add all the spices one by one.Now add tomatoes and salt to it..
And add remaining ingredients..
Deep fry the jackfruit pieces.And add them in masala.Now add some water to it to make thick greavy.Mix it well..
Mix it properly..
When it is done assemble the rice layer..
In second layer add golden coloured onions, khada masala.Add veg biryani masala powder to it..
Finally add golden onions, saffron milk, cashewnuts, ghee almonds, raisins and coriander leaves..
Now cover the lid and coot it on low flame for 10 mn..
Open the lid and garnish with cashewnuts, almonds, raisins, green and coriander leaves..
For making chhachh mix curd and remaining ingredients and blend with water..
Serve biryani with chhachh and riped mangoes..
