For all you freezing people, here's a quick and easy recipe for a super cosy and warming Curried Vegetable soup! Stay warm! 😊 🍜 * 1/2 Turnip, roughly chopped * 2 carrots, roughly chopped * 1 parsnip, cored and roughly chopped * 1/2 butternut squash, roughly chopped * 1/2 large onion, diced * 1 leek, cut into discs * 1,2 l Vegetable stock * 1 tsp turmeric * 2 tsp cumin * salt & pepper to taste 1) In a large pot sweat the onion and leek for about 5 minutes, until softened 2) add the other vegetables and cover with the stock 3) leave to simmer on a low heat for about 30 minutes, until the vegetables are tender 4) blend until smooth, then add the cumin and turmeric and season to taste!
