[ID: 3 photos of an oval baking dish with marinated chicken thighs, tart cherries, and rosemary show 1) the dish before baking with the chicken barely visible under the pile of cherries, 2) after baking, with the chicken in a brown sauce with the cooked down cherries, and 3) with a spoon and only one piece of chicken left. End ID]
the beginnings of the end of farmers market cherry season, celebrated with genuinely my new favorite recipe: bone in skin on chicken thighs + olive oil + balsamic + lots of shallots + honey + tart cherries + rosemary + salt + pepper

“Don’t overcrowd your baking pan” I just want all of dinner to fit on one tray so I can just throw out the tinfoil at the end. It will brown. It WILL brown.

Tried making toast. Threw up toast. Managed a bath but it set off my arrhythmia and I threw up again. Finished Constantinople chapter and now catching up on Age of Napoleon podcast. Sometimes you get got by gastroparesis and try again tomorrow

awesome & appealing photo of the chicken sandwiches I made tonight
the sandwich was good but I also just put a piece of chicken on a big pile of arugula and that was divine

honestly the more recipes i read and the more cooking videos i watch the more i'm like.... no offense but pro chefs live and cook in simply a different reality from the rest of us. like a guy just said his goal for a chicken sandwich recipe was for the chicken to come together in "a few hours". like in what world is a home cook going to devote that much time to a chicken cutlet.

keeping soup/stew bases on hand is truly the most useful thing for cooking. like, if you have a thing of miso paste and/or a thing of gochujang and/or a can of tomatoes and/or a box of curry roux suddenly your cooking repertoire suddenly expands exponentially. not only can u make soup but u can also suddenly make super easy flavorful marinades. a bunch of sauces. add a little zing to ur carb of choice. instantly make any meal less sad. transform one meal into three so u dont get bored. the possibilities are endless.
