It turned out lovely. Here’s what I did! Feel free to share this with your friends. **Wet Ingredients** 4 bananas, cut into 1-inch pieces 1/4 cup Masarang Arenga Forest Sugar syrup 1 vanilla pod ¼ teaspoon Himalayan salt 1 teaspoon cinnamon 1 teaspoon nutmeg powder ¼ teaspoon cloves powder ¼ cup @Marylebonegroup coconut oil spread, melted 1 cup filtered water **Dry Ingredients** 2 ½ cups coconut flour 1/2 cup golden flaxseeds, ground ¼ cup psyllium husk 3 apples, cubed METHOD Blend wet ingredients in a food processor till combined. Place dry ingredients into a mixing bowl and mix till well-combined. Add dry ingredients into food processor with the wet ingredients and pulse till combined. Fold in cubed apples and pour mixture into loaf pan. Dehydrate in Excalibur food dehydrator at 45 Celsius. I dehydrated mine for 3 hours. LEMON SHORTBREAD 🍋 So I tried out this vegan shortbread recipe which appeared on Veganuary since it looked so simple. Made some tweaks and used the following ingredients: INGREDIENTS 🔸100g @marylebonegroup coconut oil spread 🔸50g organic molasses 🔸The zest of 1 lemon 🔸150g @bobsredmill 100% Stone Ground Whole Wheat Pastry Flour 🔸50g ground rice It was ok. I’ve made better tasting shortbread cookies before so I think I’ll stick to those instead and omit the ground rice. POTATO GRATIN with an ASIAN TWIST (cooked vegan) Made a potato gratin coz was craving for it plus Mr Jazz Guitarist likes anything with potatoes.🥔🥔🥔 . Here’s how I made it: INGREDIENTS 400 g potatoes 400 g water ½ cup cashews soaked @marylebonegroup coconut oil spread @mu.soysauce organic tauchu Nutritional yeast Masala spice Kala namak Mustard Curry leaves Chilli flakes Salt Pepper METHOD: Make sauce using water, cashews, coconut oil, tauchu, nutritional yeast, masala spice, kala namak, mustard, salt & pepper. I used my Thermomix to process the mixture till smooth and then boiled it. Slice potatoes thinly using mandoline. Pour in potatoes into sauce in Thermomix. Cook for a few minutes. Pour entire mixture of potatoes and sauce into baking tin. Cover with foil to bake 15 mins. Uncover and bake 10 mins at 200 C. Garnish with curry leaves and chilli flakes.🌶️ . ✳️✳️✳️If you’re interested in getting a Thermomix, DM me so we can arrange for a demo. It’s not easy to get a Thermomix advisor who understand vegan food. EASY IRON BOOSTING PESTO RECIPE featuring fresh spirulina from @simpliigoodsg💪 I’ve tasted this spirulina pesto at the @singaporeveganfestival and wanted to try making this back in KL. I’ve changed up the ingredients based on what I have with me and I also wanted to highlight the local edible leaves availables in Malaysia. See previous post on how the leaves look like in their whole form. INGREDIENTS: ¼ cup daun kadok (wild pepper leaves) ¼ cup ketumpang air leaves (shiny bush) 1 Belimbing buluh, sliced (belimbi fruit) 1 tablespoon pine nuts 1 clove garlic, sliced 2 tablespoons coconut oil spread from @marylebone, melted 1 pod of @simpliigoodsg fresh spirulina 1 tablespoon soft vegan cheese (see Cheese Log recipe on page 21 in my eBook, Fun with Vegan Cheese) . METHOD Add daun kadok, ketumpang air, belimbing buluh, pine nuts and garlic in food processor and process until very finely minced. Stream in the coconut oil and process until the mixture is smooth. Add the cheese and process briefly, just enough to combine. Store in the refrigerator. You can use this on crackers, pasta, quinoa, noodles or even crudites. . TEMPEH BALLS by #RawChefYin, adapted from a laddu bliss ball recipe by @straitsroadkitchen. 😍 I was initially going to just follow Chef Sabrina’s recipe but then I didn’t really feel like having anything too sweet today and I thought since it’s tempeh, perhaps I’ll experiment and turn it into a savoury one instead. I’m not quite sure how others feel about it not being sweet but then again, I’ve seen loads of recipes using cacao in a savoury dish, so why not? Here’s what I did… INGREDIENTS: ~ 100g organic, handcrafted chickpea tempeh from @angiesveganpantry ~ 1 piece of spicy preserved beancurd ~ a little liquid from the spicy preserved beancurd ~ 1.5 tablespoons coconut oil spread from @marylebonegroup ~ raw, organic cacao nibs from @organiculesuperfoods METHOD: 1. Cut tempeh into cubes. Place in food processor or blender. I used my @nutribullet. 2. Add in coconut oil, beancurd, beancurd liquid into Nutribullet and blend till it becomes a smooth paste. 3. Leave in fridge for 15 minutes to firm up. 4. Roll into balls and gently press in cacao nibs. Since these were savoury, I ate them with my quinoa for lunch. CENTER OF PLATE, LESSON 5: LAYERED VEGETABLE ROULADE 🥕💚😃😋🌟 🥕My submission to @foodfutureinstitute “I loved the flavours! Had to make substitutions as I can’t get a lot of the ingredients here in KL… I used beetroot instead of purple carrot. Shiitake mushrooms instead of button mushrooms. Leek instead of fennel. It took me quite a long time to understand the instructions...I must have read it 5 times to understand it. Can you please do a video of it so I know whether I assembled it correctly? How do I get the roll tight? Mine is not tight at all…Thank you!” 🌟INSTRUCTOR FEEDBACK 🌟 “This recipe requires some good rolling techniques and lots of patience. The key to this one is to be sure that all the slices are as thin as possible to allow them to adhere to each other making it easier to make a tight roll. Also to allow the cylinder to freeze slightly before cutting as the vegetables are best cut when cold. I feel that your roll could have been a bit tighter or cold which would have made the cuts more round. This being said the layering in your roulade looks just right and the variation of vegetables you used were great. This one might be a good igtv video for me to do. THE HUMBLE POTATO, LESSON 2: POTATO PAVE 🥔🥔🥔 Here’s the assignment I submitted to @foodfutureinstitute. I don't have access to a working stove top at the moment so doing this was a challenge. The workaround was just browning the potatoes in my toaster oven. . Yes, I don't have a real oven because I gave it away to make space for 2 dehydrators 😅 . I might just have to buy an oven again very soon in order to complete my assignments! . In terms of plating, I was wondering whether I should have cut the pave into smaller pieces. But I liked the idea of having it as 2 big chunks as sometimes I get complaints that my portions are too tiny. . Confession: I seriously couldn't bring myself to slather the vegetables in more butter so I kept them raw, which is true to my current calling. I know I'm supposed to learn how to mount with butter but because I worked with sooo much butter on the potato, I just couldn't... maybe next time I'll make some raw vegan butter. This time I used Nuttelex coz it was given to me to test. And then I used @marylebonegroup coconut oil spread too which I liked because it’s made with organic, cold pressed, extra virgin coconut oil 🥥🥥🥥 . No yellow mustard seeds were available so I took that wonderful avocado mousse I made with @misteravo 🥑 and added turmeric to it instead. Went soooooo well with the pave. . Extremely delicious 😋😋😋 . Exploring symmetry as part of my homework for my food photography & styling course. I decided to make a chickpea curry! INGREDIENTS: ~ Chickpeas ~ Curry powder ~ Garam masala ~ Ginger ~ Galangal ~ Lemongrass ~ Red chilli ~ Tomatoes ~ Freshly squeezed coconut milk ~ Salt ~ Kaffir lime leaves ~ Belimbing buluh ~ Sweet basil, mizuna, beetroot, broccoli microgreens from @greenpatchmalaysia ~ Sunflower seed parmesan shards ~ Calamansi lime ~ Thai basil ~ Nasi dagang cooked with pandan leaves and @marylebonegroup coconut oil spread Blue plate by @bendangstudio_official The chickpea curry was oil-free, I just used water to replace the oil. The rice and chickpeas were cooked, the rest of the ingredients were raw. YEAH!
