For centuries, before the advent of modern commercial shipping routes, travelling merchants and their caravans made their way along the famed Silk Road, carrying with them exotic food, spices, animals, and goods, onward to exotic lands. Along the way, they put up in caravanserais, which are inns that provide shelter for them from the dangers of the road, before they continue their onward journey the next day. In a way, perhaps the most important legacy of the caravanserai was its role as a crucible for the exchange and interaction of cultures along the length of the Silk Road. Not only did they facilitate the movement of people and goods along these long and arduous routes, they also provided opportunities for these travellers to come together, to share stories and experiences, and ultimately, cultures, ideas and beliefs too. Persia, being at the crossroads of the great Near and Far Eastern civilisations, is naturally dotted with aplenty caravanserais. At the caravanserais that are preserved in Meybod and Kharanaq, you would be able to see how a standard room would have looked like in the past, albeit furnished with modern bedding and household items. Nonetheless, the very same buildings did host travelling merchants centuries before us, and it is not difficult to see how they are truly an oasis for those merchants forming at the edges of Iran’s vast deserts.
Along the way, we also made a stop at Chak Chak, where a Zoroastrian shrine towers above the desert plains. Before the advent of Islam and the extensive reach of its caliphates, Zoroastrianism was the dominant religion in Persia, which has a distinctive style of fire worship and an equally distinctive style of burial, where the dead are exposed at the top of Towers of Silence, and wild birds peck on the flesh until only the bones remain, before they are brought back to the ground. These practices have largely faded in modernity as the number of Zoroastrians dwindle. In Chak Chak, legend has it that the Sassanian princess, Nikbanu, fled an invading Arab hoard. She was then trapped at a mountain cleft, having nowhere else to run to. In desperation, she prayed devoutly, and the heavens who had pity on her, opened up the mountains and water trickled out of it. As a result, the area was named Chak Chak, which means drip, drip, in Persian.

Yakhchāls, ancient evaporation coolers, came into being around 400 BC. The giant conical structures allowed ice to be made and collected during the colder months and used throughout the year for things like preserving food and making faloodeh, a traditional Persian frozen dessert made with thin noodles and semi-frozen syrup.
Different design features kept different yakhchāls cool, from spiral structures to wind towers and vents. Some yakhchāls had holes near the bottom, to keep cool air flowing into the vast underground portion of the structure where the ice was made and kept, and holes near the top through which hot air would be funneled out.
Walls were often built to keep the water shaded as it was channeled in to the yakhchāls so it would freeze faster. Yakhchāls also served as places to store ice that was brought down from nearby mountains and often food as well. The extremely thick waterproof and heat resistant walls were made of a special mixture of sand, clay, egg whites, lime, goat hair, and ash called sarooj.
Many of these monuments to ancient Persian ingenuity are still around today, hundreds of years later. One of the easiest to find is the one near the Narin Castle in Meybod, Iran, but there are also some in Iranian cities like Yazd and Kerman.
I live in the HOT desert near Death Valley.  I was wondering, if anyone or group has used the idea of Yakhchals (which I have not known about, till now), to keep water cold, or tried to freeze, currently. What a great energy-saving idea Yakhchals are!
The engineering is not clearly explained, especially the part about “evaporative cooling”. It seems more likely that the owner applied straw on the sunny side to protect against solar heating, and cooling was by radiation into the north sky at night. The rest of the structure was merely well insulated. A fairly cool ground temperature was also part of the deal, as the water system was rather elaborate in those areas. If you want to experiment you could try Styrofoam insulation with foil on the sunny side. Any lumber yard carries that material.
