Tasty potato pie squares. My entire family loved it. With extra onion on a side and green salad. Perfect for both, lunch and dinner. 💛 For the cheese pastry: 🥔 200g plain flour @podravka_hrvatska 🥔 75g cold unsalted butter 🥔 75g white vegetable fat @plodinehrvatska 🥔 25g parmesan @kauflandhrvatska 🥔 25g mature cheddar 🥔 3 tbsp very cold water 🥔 1 egg For the filling: 🥔 1kg potatoes 🥔 1 medium onion 🥔 375g mature cheddar 🥔 50ml milk 🥔 2 tbsp chopped chives (I used dried @kotanyi.hrvatska ) 🥔 salt and white pepper 24x20cm metal baking dish, 5cm deep (or porcelain) Instructions: Mix with your fingertips flour, butter and vegetable fat until resembles breadcrumbs. Add the cheeses to the flour and mix well. Put in cold water and mix well. Form the ball and wrap into the cling film and place into refrigerator. Heat oven to 200°C. Cook the potatoes and mash them. Add the onion, cheese, some salt and white pepper. Mix well. Add the milk and chives and mix again. Put the cheesy mash mixture into the tin and spread evenly. Now roll out the pastry to cover the mash mixture. Place it on top of the mash. Brush the pastry with beaten egg and bake for 25 minites Tips: 1. Pastry that you need tp roll out, one that was in refrigerator, you can put at the bottom as well and spred it out with your fingertips, to save your time 2. Serve pie well cooled out, because hot is going to be falling apart.
