Dinner Recipe: Slow Cooker Southwest Chicken
Tumblr media
TIME: ★★★★
PRICE: ★★★★
EASE: ★★★★
CLEANUP: ★★★★
This is another insanely quick and easy crockpot recipe. You're just throwing the stuff into the pot for 3-4 hours. It takes about 10-15 minutes to prep.
The ingredients are all fairly cheap, and this is typically served over rice, so it's also filling!
It's basically a southwest-flavored chicken chili! Tips: -I added half an onion, a tablespoon of minced garlic, and a serrano pepper to this recipe. I was surprised to see none of it was in there already, but I highly recommend at LEAST doing the onions and garlic. (Garlic/ onion powder would also be good.) -I halved the amount of salsa, black beans, and chicken broth. I had been reading some reviews that said the recipe as-is turns out a little soupy for their tastes, so I pre-empted it. -I doubled the pepper, salt, and cumin. But this is something you can do to an individual serving! -This recipe is REALLY good with corn-chips. You could also totally put avocado, cheese, or sour cream on it!

Leftovers: Apparently this recipe freezes and reheats in a pot/pan VERY well, so this would be great to cook in bulk on a weekend and reheat periodically over the course of a month or two!

Slow cooker chicken tacos for dinner. The easiest fucking meal ever and it tastes so amazing. Here is the quick and dirty recipe
You need chicken, a jar of salsa, taco seasoning. Maybe some stock or water.
Breasts or thighs work, just make sure they are boneless and skinless. You can use whatever salsa you want. If you like it spicy, use spicy stuff. If you use a ton of chicken, maybe use a couple of jars. Taco seasoning is just one packet, but if you're making more than four pieces of chicken, maybe get a second packet.
Dump all of this into a crockpot and maybe add a touch of liquid so the chicken doesn't dry out. You can also use frozen chicken breasts but maybe skip on the liquid.
Cover and let cook on low for 6 hours or high for 7 hours. Once it's done just shred the chicken and make tacos with whatever toppings you like.
It's dead easy, cheap as fuck, and it's really hard to fuck it up.

I know you’re a baker but do you have any quick dinner go to recipes you might be able to share? I need some inspiration to get me out of my cooking rut
I hate cooking. Despise it. But it’s a necessary evil 😂 I’d be okay with sandwiches. But alas, my people aren’t.
I’m big on crockpot meals. Big! I can put them together the night before, just leave the pot in the fridge. And before I leave for work put it in the electric pot. And one of my favorites for that is chicken, your favorite salsa, and some taco seasoning. My people love this on tacos or even nachos.
Breakfast for dinner is big at my house. And we eat a lot of eggs.
Chicken with garlic Parmesan wing sauce and roasted sweet potatoes and broccoli is a favorite here too.
I also do around 2 meals of Blue Apron every other week.
I don’t eat beef 😬 so there’s a lot of chicken eaten at my house. Or pork. I do love chorizo enchiladas. They’re not traditional. But they’re what Sam the Cooking Guy taught me, and they’re amazing.

Frank, what can I make with kidney beans, chicken broth, ground Turkey and butter? I can buy other ingredients to add to it.
(I'm not that Frank, I'm Frank's brother, but your question might make a good post.)
I don't know what kind of meal you're describing but this sounds like the main ingredients of, like, what casseroles usually are.
Judging from the ground Turkey, it sounds like you're asking this because you want to know how to feed a crowd. (That's a hard question.)
One good thing about chicken soup is that it's hard to fuck up, and that's a useful skill to have if you have to feed a crowd – you make the broth, put in some chicken and/or noodles, and you get a dish that you can serve to people and know that it will taste good. (Although this meal would probably be better after, like, 12 hours in a crockpot.)
What you might do is start with the broth and the beans (you'd also need some noodles, let's say), and make that a "dump" meal. "Dump" meals I like are cheap and easy to make, and they don't take too long to cook – they're excellent for a shitty apartment with bad cookware. There are a lot of variations, but something like this is good:
salt and pepper
eggplant, tomatoes, garlic (crushed), red peppers (canned)
olive oil
manteca [high-fat chicken-fat-based dressing, used in Italy for vegetable-based sauces]
balsamic vinegar
sugar
salted fish sauce (recommended)
squash (from the tomatoes, spiky as an element of the texture)
Chili powder
a few bay leaves
a grated zest or aromatics of something (recommended)
see also: this recipe which has some variations I might make
As for other ingredients, I think it would be a good idea to add some butter, some garlic powder, possibly some Worcestershire sauce, some cayenne pepper, and so forth.
Or, alternately, you can just make this and add some good salsa in the place of the sugar.

6, 17 and 29 for the soft, stay at home ask game!
Thank you!
6. How you get relaxed when you’re struggling to sleep
One of 3 things: 1. start at my front door and clean my house in my head (a la sheep counting; idk why this works so well, but it usually does) 2. if I'm really revved up, smoke a joint 3. do Marital Things with my husband 🙃
17. A bath, shower, beauty or toiletry product that makes you feel revived, or that you always re-order when it’s running out
Honestly? I'm gonna sound like the oldest lady, but Noxzema. I use it in the morning and evening and have since I was like, 15 or something. It's been the one constant in my beauty routine for pretty much my whole life. My grandma always used it too, and told me that if I wanted to keep my skin soft it's what I should use too. It certainly does do that.
29. A favourite easy recipe: 5 ingredients or less, or takes less than 30 min to make
I am going to cheat a little for these chicken tacos, because there's a few more than 5 ingredients, but it only takes a hot minute to pop in the slow cooker, then it's ready when you get home. This one is really popular with our kids: 1. spray crockpot with cooking oil 2. add 3-4 good-sized chicken breasts 3. add onion, garlic, and a packet of taco seasoning 4. add a cup of frozen corn and a can of rinsed black beans 5. top with a small jar of salsa (spiciness of your choosing) 6. cook on low for 8 hours or high for 4 hours 7. shred chicken in the the pot 8. serve on hard or soft tortillas with toppings of your choice!

Crockpot Chicken Salsa Verde
1. Add a Quartered onion, 4 halved jalapeños or Serrano peppers, 12 small tomatillos (take off the husks and rinse well first) and 4 cloves of garlic to a pot and then add water until just covering it all. Bring to a boil then simmer for 10 min. Add 12 sprigs of cilantro and then blend.
2. Pour 2 cups of the salsa in crockpot, add 2 chicken breasts, 2tsp of salt, 1 tsp cumin, and 2 tblsp of oil.
3. Cook on low until the chicken temp reaches 165 then take out the chicken. shred and dump back in the sauce to slow cook for another hour.
4. Then add a slice (or more to taste) of lime juice!
*for the rest of the salsa: Simmer in a pot with 1 tablespoon of oil and 1 tsp of salt (or more to taste) for 15 min. After, add 1 slice of lime juice (or more to taste). And now you have extra salsa verde for chips!
I made this the other day and I’m still having the leftovers it is so good! I do burritos with the chicken salsa verde, Mexican rice, refried beans, and sour cream. And I ended up eating the whole extra half of the salsa with chips the day after. The Best (and Easiest) Chicken Tortilla Soup Ever
If my mom, who is the queen of salt and pepper and puts it on any meal she eats before she’s even tried it, thinks this soup is delicious and didn’t feel the need to add additional salt and pepper, you know it’s a good recipe.
I was looking for a quick and easy chicken tortilla soup recipe to make using the rest of the salsa crockpot chicken that PJ had made the night before, when I came across this one from Spendwithpennis.com. It’s super easy to make and it’s oh so good. Again, my mom is the pickiest eater ever, so imagine how surprised I was when she texted me the photo above (the only picture I have of the soup- oops) and said “Oh my God it’s so good!” to which I replied, “It needs more salt and pepper!!”
Then, she sent what might have been the sweetest text message I’ve ever received, one that let’s me know that moms are in fact and without a doubt, truly the best:
“NO!!!!!!! And you know how much I love salt! it is perfectly seasoned for me. It’s just the right amount of cumin.”
There you go. It’s Lila approved. And mom’s really do know best, don’t they?
Here’s what you’re going to need, directly from Spendwithpennies.com:
Ingredients:
1 tablespoon olive oil
1 onion chopped
3 large cloves garlic minced
1 jalapeño diced and seeded
1 teaspoon ground cumin
1 teaspoon chili powder
14 ½ ounces crushed tomatoes
1 can diced tomatoes with chilis such as rotel
3 cups chicken broth
14 ½ ounces can black beans rinsed & drained
1 cup corn drained if canned
2 chicken breasts boneless, skinless
¼ cup cilantro chopped
1 lime juiced
1 avocado sliced, for garnish
Directions:
Heat ¼ cup olive oil over medium-high heat a small pan. Add tortilla strips in small batches and fry until crisp. Drain and salt.
Heat olive oil In a large pot over medium heat. Add onion, garlic and jalapeño and cook until onion is softened.
Add remaining ingredients and simmer 20 minutes or until chicken is cooked through.
Remove chicken and shred. Add back to the pot and simmer for 3 minutes.
Spoon soup into bowls and and top with tortilla strips, lime wedges and sliced avocado.
Hope you enjoy it as much as we all did!!
