We found this recipe online and its rull good. I subbed chicken breasts for chicken thighs and instead of sweet potato made a mix of sweet potato, turnip, and carrot. The mix of garlic, rosemary, and lemon is 👌👌👌👌 and its reasonably easy to put together.
I also made too much vegg so I mixed the veggies in spice and oil in a bowl, steamed it over the oven in one pan then cooked the chicken in another pan alongside it.

-was out of state for a week -had covid immediately after for 2 weeks -had to remember to get sweet potato from the store

It should be noted- I do not care for sweet potato. However, I wanted to make this recipe fairly true to form...and by that I mean I also added half an onion and some broccoli. BUT OTHER THAN THAT!
And you know what? This was REALLY frikkin tasty!
(I suppose I also used a fresh sweet potato and peeled/diced it rather than getting frozen.)
It takes between 20-30 minutes of hanging out by the stove to make, but it's basically 1 pan (maybe a cutting board) so cleanup is easy, none of the ingredients are particularly expensive, and I found it pretty easy to make.
(I also cooked mine in a cast-iron, which is different from the recommended, but I love my cast-iron.)

So my online grocery order glitched and I ordered 3x more spinach than I had intended to last week. In a frantic attempt to find some way to keep it from going bad on me, I made a TON of Spinach Artichoke Dip.
Thankfully the recipe I found was AWESOME and stupidly easy! It's a crock pot recipe so while it takes 1-2 hours, you're really just dumping ingredients in and letting it cook. Though you wanna stir it a couple times throughout the cooking, you're really not spending much more than 10 minutes prepping the dish, and most of that is rough chopping spinach.

Tips:
-I HIGHLY recommending adding more salt (and cheese) than the recipe calls for. It'll ultimately be to taste, and you can always add more salt to an individual serving if you wanted, but the first time I made it, it needed a little more salt.
These go great with tortilla chips or thinly sliced little toast pieces!

While I have a specific recipe I started with, this is a really versatile recipe. You can basically throw in whatever toppings you want (even when I was working with the original, I cut down the bell pepper by half, added pepperoni, and tossed in whatever cheese we had on hand) and it turned out absolutely S-Tier! (We recently tried a version where I made homemade tomato sauce and we used it as a side dip (like you would for breadsticks) and that was absolutely phenomenal as well.)

We make our own pizza dough, but if you buy pre-made, the active time on this recipe is about 20-25 minutes and it takes another 15-20 to cook.
It's fairly easy- there's some veggie chopping and you briefly saute some veg. You also roll out your pizza dough. It is not difficult, however! Cleanup is decently easy, but you do have to roll your dough out and sprinkle flour on the counter, then clean that up. That can be a lot for some people. The only dishes you're really dirtying though are a frying pan, spatula, knife, and cutting board.

This recipe is a little bit of work, and so far the lowest ranked on the cleanup scale (but I am biased because I HATE cleaning up the waffle iron stuff.)
BUT!
It's SUCH a great dinner/brunch! Especially if you have someone willing to help you cook/cleanup! There are two parts to this recipe- the fried chicken and the waffle. If you already have recipes for those, feel free to use them! If not, here are some basic recipes I've found. hey jsyk while hellofresh is dummy expensive and i wouldn’t reccomend it if you already know how to cook (if you’re a beginner like i was when i had it for 3 months, then it’s worth it), you should know that ALL OF THEIR RECIPES are free on their website and they all fuck hard
i will say that all the cooking instructions for veggies are pretty much the same (season with salt + pepper and roast on the top oven rack at 425F), but if it ain’t broke don’t fix it.
that being said, it also introduced me to methods i wasn’t at all expecting. i would have never thought to use cream cheese in my meat sauce, and now all my friends are constantly asking me to make my special rigatoni.

Lunch/Dinner Recipe: Burrata Stonefruit Salad

I first found this recipe when I was watching a video by Caroline Franco, who does a lot of Mediterranean recipes. I couldn't find a separate recipe written up for it, but this is her website!
I gave this recipe "my own flare," and by that I mean "used what I had on hand." It's fairly easy and quick to make, especially if you already have cooked lentils on hand. This definitely takes 20 minutes or less to make, and only takes about 5-10 minutes if you have cooked lentils on hand. Some of the ingredients can get a bit pricey, (burrata cheese, pistachios, off season stone fruit,) but buying one set of these ingredients gave me lunch for a whole week. Ingredients: 1. Leafy greens for your salad base 2. Stonefruit (peaches, plums, nectarines, etc. I used 1 nectarine, 1 plum, and a couple dried dates for this) 3. 1/2 cup of cooked lentils (I cooked up some green lentils.) 4. Pistachios 5. Burrata Cheese -Cook your lentils. I cooked mine in a rice maker with some chicken broth, but you could do veggie broth or water to make it meatless. -Grill or pan cook your stone fruit with a bit of olive oil and salt until it gets some color. I used my cast-iron pan but you could totally do this in a regular pan. The color might just be a little different.

-chop your pistachios -assemble ingredients into a salad!
You definitely don't need dressing for this, but if you chose to, I'd use something light and fruity.
I REALLY loved this salad and highly recommend it to anyone who thinks they might enjoy it!

There is a WIDE scope to salmon and veg recipes. Salmon, at least where we are, is a little on the pricier side, but we love it and the doc said it was good for our eyes so we ran with that as an excuse, LOL!
We are constantly looking for a variety of ways to cook and dress salmon. I believe these recipes would generally work for both frozen and fresh fillets, with some minor modifying.
It's a super quick thing to serve these with a handful of salad greens, but our go-to is broccoli! I made a short blurb on how we like to prepare broccoli in a tasty way! The different recipes could range between 20-40 minutes, depending on which one you're making!

Brown Sugar Soysauce Salmon (Key to My Lime) This is one of our go-to salmon recipes! Very classic and tasty!
Parmesean Crusted Salmon (Cooking Classy) Recently made this and it was a really nice change of pace with texture and flavor! Highly recommend it if you like parm!
We also enjoy making Salmon Bowls. Just dig up some veg we have lying around and serve it with salmon over rice. Below we had avocados, mukimame, cucumbers,carrots, and mandarin oranges over rice with some orange glaze salmon!

This is a pretty darn easy and light dish to make. It's also SUPER cheap to make if asparagus is in-season! Overall it takes about 20 minutes to make! I find it super tasty and a great, quick way to get some veg in!
You could totally serve this over rice, on pasta, or have it plain if you prefer!
I honestly don't have anything on the tip front because it's pretty damn straightforward!

I won't lie to you. These are a bit tedious. They take about 1 hour to make a batch and there are a lot of repetitive steps (you stuff each jalapeno, then you gotta dunk each popper into milk, then bread crumbs, then wait. Then do it again. Then wait again. THEN you fry them.) But you only have to make them once and then you have TONS of Jalapeno poppers. You can freeze them too, so one batch will yield a lot of value.
They're cheesy and Jalapeno-y and I honestly just LOVE these things! The ingredients are also SUPER inexpensive. So if you have a weekend where you're feeling like a little tasty side-dish prep, I can't recommend these enough!

Dinner Recipe: Spaghetti

This might seem like such a basic recipe to some folks. And even more probably think spaghetti is a cheap, bland, bulk necessity meal just to get them through the week. But spaghetti can be really really tasty with just a little care, and it still only takes about 20 minutes to make!

Ingredients: 1. Pasta of choice (doesn't have to be spaghetti noodles. Can be linguini, bow ties, angel hair, penne, whatever's cheap!) 3. 1/2 diced onion (I typically use red onion) 4. 1 TB minced garlic (or 4-5 cloves. Follow your garlic heart tbh) 5. 1 lb ground meat (I prefer Italian sausage because it's pre-seasoned, or 1/2 Italian sausage-1/2 ground turkey. But you can use ground meat of choice! Just be sure to season it liberally with salt, pepper, italian seasoning, garlic powder, etc.) 6. 1 can of diced (or crushed) tomatoes 7. 1 can (or jar) of tomato sauce (plain, marinara, vodka sauce, whatever.) 8. (OPTIONAL) Fresh basil, goat cheese, parmesean cheese, and/or cherry tomatoes
- -Cook pasta according to directions on the packaging (if you cook enough pasta, you start to get a feel for it and don't need to measure/time it/etc. but following the directions can remove a lot of that anxiety) Work on the sauce while the pasta cooks. -Heat some oil in a (large, wide) pan. Once it's heated, add onion. Cook the onion for a minute or two, then add your garlic. Stir for about 30 seconds. -Add your ground meat. Break it up, mix it nicely with your onion and garlic in the pan. This is a great time to start seasoning if you don't like touching meat! Salt, pepper, garlic powder, italian seasoning to taste! -Once your meat is 90% cooked through, add your canned tomatoes and sauce. (You can add the tomatoes earlier, but I find the red coloring of the tomatoes makes it harder for me to tell when the meat is no longer pink.) -Heat it through and let it simmer for another 3-5ish minutes while stirring. -Serve your portion of pasta and put your sauce over it! Top with your optional ingredients! (Crumbled goat cheese on spaghetti is a GAME CHANGER!) It's pretty damn easy, and EXTREMELY damn tasty.
- Leftovers: I cannot express enough how well pasta sauce freezes. Cook it in bulk and portion it into some tupperware. Freeze it. When you wanna make spaghetti, just get a portion of the sauce out the night before, leave it in the fridge to thaw overnight, then heat it up in the microwave or over the stove when you're ready! Cook a fresh batch of pasta to go with it- boom. Easy as heck. Just remember to try to finish your freezer leftovers within about 3 months!
