*Sambar* Recipe: Ingredients - For tamarind pulp - 2 tbsp imli, 1 small cup hot water, For dal - 1/2 cup arhar dal, 1/3 tbsp turmeric powder, 1/2 tbsp coriander powder, 2 tbsp sambhar powder, 1/4 tbsp red chilli powder, salt to taste, 2.5 cups of water (or as required), 1/2 tbsp mustard seeds, oil, pinch of asafoetida, 4 cloves of garlic (mashed), 1" ginger (mashed), 10 kari leaves, 1/4 tbsp coriander seeds, 1-2 dry red chillies, chopped coriander leaves. For vegetables - 1/4 cup peas, 1/4 cup cauliflower florets, 1/4 mixed baingan-ghia, 1 medium onion (sliced), 1 medium tomato (chopped), 1 green chilli (chopped), 1/4 cup French beans, or any other vegetables like okra, potatoes, drum sticks, baby corns, etc. Method - 1. In cup of hot water take the tamarind and keep it soaked for 15-20 mins. Later separate the squeezed part & keep the left out water to be added to sambar. 2. In a cooker take veges that take more time to cook like cauliflower, peas, babycorns, beans etc. And cook these on slow flame for 1 whistle. 3. In another cooker, take some oil and then add mustard seeds, coriander seeds, kari patta and dried red chillies (these may also be added in the last step as a tadka). 4. Now add mashed ginger-garlic (optional) and let it leave it's raw aroma. Now add sliced onions and chopped green chilli. Cook it for 2mins and then add other veges like brinjal, bottle gourd, capsicum etc. And cook it for few minutes. 5. Later add chopped tomatoes and cook it for 3 mins and then add the dry spices like, turmeric powder, coriander powder, red chilli powder, sambhar masala. Cook it for some time. 6. Now take arhar dal (properly washed and soaked for some time). Put it in the cooker used above and add water. Then take out the steamed veges and add it to this vessel. 7. Cover the cooker with its lid and on slow flame cook it for 5-6 whistles. After switching it off let the steam out by itself. 8. Now add the tamarind water along with some jaggery (optional) and mix it well. Keep stirring. Garnish with coriander leaves.
