London Dining: Digital Performance and authenticity
In London’s competitive restaurant industry, social media has become an essential tool for survival. Platforms like TikTok and Instagram dictate trends, inform customers's expectations, and often centre the visual aspects of dining out rather than the culinary ones. As part of this digital anthropology practical project, I examined how restaurants leverage digital performance—particularly through decor and influencer partnerships—to attract clientele, sometimes at the expense of food quality. Working as a waitress, I managed the TikTok account for the restaurant where I’m employed, in an attempt to participate in the London digital gastronomic scene. I unfortunately was not able to dedicate much time to this method as I was not paid for it, and only did so when I had time when working on the floor.
In London’s Instagrammable dining culture, restaurants increasingly design their spaces with social media in mind. Neon signs, floral walls, and quirky interior details are omnipresent in recommendations from food influencers, who often prioritise photogenic backdrops over the taste or quality of dishes. While dining out as an experience has long been a status symbol and a tool to communicate class position, it is increasingly understood through the lens of a camera rather than eyes and tastebuds.
For this project, I observed how restaurants incorporate visually striking performances— cocktails served in smoke-filled cloches, tableside food preparations, comically large versions of foods—to encourage user-generated content. While these features boost TikTok engagement, they also risk overshadowing the food itself. Many influencers who visit these restaurants focus more on the aesthetic, "insta friendly" aspect of the space rather than discussing flavours, reinforcing the idea that in London’s digital dining economy, aesthetics often trump gastronomy.
Observing the customers who would take pictures and videos at the restaurant, I noticed how they would rearrange tables, order dishes purely because they "looked good on camera", or order an excessive number of dishes for a dramatic effect on an instagram story.
Despite the benefits of social media visibility, the pressure to maintain an online presence places a significant burden on restaurants, particularly independent ones. Algorithms favour constant content production, forcing many establishments to invest time and resources into digital marketing—often without guaranteed returns. For the restaurant where I work, creating daily TikTok content was a challenge, balancing authenticity with the need to follow viral trends and use the correct sounds. I did this work for free so I would do it when I was already working on the floor- which meant I could not do it when the restaurant got busy, which ideally would be the best time to film. Therefore, I focused much more on the food itself than the vibe and decor of the restaurant, and got very little traction on the TikToks I posted.
For this project, I employed digital ethnography by managing the restaurant’s TikTok account, paying attention engagement metrics, and observing customer interactions with our space. I also interviewed colleagues in front of house and back of house teams to understand their perspectives on social media’s role in dining. This hands-on approach highlighted the tensions between commercial imperatives and authentic culinary experiences—a key concern in digital anthropology, which examines how technology mediates human behaviour.
London’s restaurant scene exemplifies the broader cultural shift towards experiential consumption, where the value of a meal is increasingly tied to its online circulation. While social media offers opportunities for visibility, it also distorts priorities, privileging aesthetics over authenticity and placing unsustainable demands on businesses. Digital anthropology provides a critical lens to understand these phenomena, revealing how platforms like TikTok reshape not just how we eat, but why we choose where we dine.
