Oh sweet slow roasted tomatoes - lush and gorgeous - sweet and sticky ... they ll be preserved tomorrow in oil .. ( if I don’t eat them all) they re not quite dried out as it takes hours on a very low heat in the oven ... but it’s going to be sooooooooo worth it. . . I used mainly cherry tomatoes cut in half - I oiled the oven tray first - cut up all the tomatoes - tried to chop the bigger ones to the size of the cherry tomatoes - so they cook around the same speed. . . I added - basil - oregano- sea salt - and cooked them at 100 degrees - keep checking them .. . . Once they re done I m packing them in levels with more herbs till jars are filled then adding rape seed oil. 🙌. . This is a great way to use the tomatoes you ve not got time to process - but can’t freeze as they are a bit battered. . . ( I cut the battered bits off and the chickens got those !!) . . No filter needed here!! . . I harvested most of the green tomatoes in my garden because the cold weather is about to hit and I can’t just let them die on the vines. I do lots of stuff with these (blog has some recipes) but this recent chutney combo was one of the most delicious. Recipe in the profile and on my blog. Green tomatoes, grapes and apples so I got to use lots of “leftovers.” I don’t sterilize in equipment. I store these in the fridge.
