Repost @vegansvillage Chinese chive pockets/dumplings '韭菜盒子' with crispy, chewy crust & a flavorful filling.⠀ .⠀ By @woon.heng ⁣⠀ Recipe (makes ~9 palm size pockets)⁣ 🌱Filling ingredients:⁣⠀ ~ 1/2 - 3/4 lb Chinese chive - cleaned, drained & finely chopped⁣⠀ ~ 8oz firm tofu - mashed, pan fried & seasoned with salt & white pepper⁣⠀ ~ 1 bundle mung bean thread - softened in hot water & cut into fine shred⁣⠀ ~ 1 tablespoon toasted sesame oil⁣⠀ ~ 1 1/2 teaspoons salt (adjust to your preference)⁣⠀ ~ 1 teaspoon organic sugar⁣⠀ ~ a few shakes of white pepper⁣⠀ ⁣⠀ 🌱Dough ingredients:⁣⠀ ~ 2 3/4 cups all purpose flour⁣⠀ ~ 1/2 cup hot boiling water⁣⠀ ~ 1/4 cup cold water⁣⠀ ~ pinch of salt⁣⠀ ⁣⠀ ✅To make the dough, place flour & salt in a mixing bowl, then gradually pour in boiling water into the dry ingredients while stirring continuously using a spatula/chopsticks. ✅Continue adding cold water & knead into a soft dough, then let rest for 30 mins, covered.⁣⠀ ✅Meanwhile, place chopped chive, mung bean thread & mashed tofu in a bowl. Season accordingly with toasted sesame oil, salt, sugar & white pepper (adjust taste accordingly).⁣⠀ ✅To make the pockets, dust countertop with flour & divide dough into 9 pieces. Flatten each one with your palm & roll it into a circular disk by keeping the middle slightly thicker than the side. Fill each dough with fillings & pleat to seal by pinching the side.⁣⠀ ✅In a heated non-stick/cast iron pan with a drizzle of oil, toast pockets until golden brown on all side over low-med heat (covered). “If you don’t take care of your body, where are you going to live?”💫 Often we forget to show enough gratitude towards our own bodies. We tend to take our health for granted but it’s nothing to take for granted. That’s what you become aware of again when you’re body is not healthy, when it is not functioning the way it usually does, when you realize how important your physical health is just for simple everyday tasks. In times like these when I’m not feeling well, when I feel weak and when climbing a few stairs feels like a 10km run, in these times I appreciate my own body and health so much more. While I’m obviously not happy about the way I’m feeling right now, I’m still so grateful that it brings me back to realizing again how important my health truly is.🙏 My current sickness actually motivates me to take better care of my body in the future. Not saying that I didn’t treat it well in the past but I definitely know that I had a few too many drinks over the last couple of months, maybe a little too many sweet fatty treats here and thete and definitely not enough sleep.🙈 Not saying that I will remove all of the not so healthy things from my diet, definitely not. #Repost @vigorous.food • • • • • • These apple cinnamon crepes are perfect for the holiday season. The recipe is vegan, gluten-free and easy to make. Tastes best with a caramel sauce or vanilla sauce. 😍 • • • Ingredients 1 cup oats ground into flour or oat flour (90 g) 1/2 cup rice flour (80 g) 4 tbsp cornstarch or tapioca flour (32 g) 2 tbsp coconut sugar or brown sugar 1 tbsp ground flax seeds or chia seeds 1 tsp baking powder 1 1/2 cups plant-based milk (360 ml) 1 small banana (80 g) 1 tbsp lemon juice or lime juice 1/2 tsp vanilla extract oil for frying • • • Apple Filling 3 apples, peeled, cored and chopped 3 tbsp coconut sugar or brown sugar 2 tbsp plant-based milk 1/2 tbsp lemon juice or lime juice 1/2 tsp cornstarch 1 tsp cinnamon • • • Instructions To make the crepes simply put all dry ingredients into a bowl and stir with a whisk. Process all wet ingredients (except the oil) in a food processor or blender. Pour the wet ingredients into the bowl of dry ingredients and stir with a whisk to combine. Let the batter rest for 5 minutes. Heat a little bit oil in a small/medium sized non-stick skillet. Pour 1/4 cup of the batter into the skillet, swirl the batter around to coat the pan evenly. Cook for about 2-4 minutes or until you can easily lift a side of the crepe. After you flipped the crepe, cook for a further 1-2 minutes. After a while, the batter will get thicker, so you might need to add a splash of milk. Continue until you have no batter left. To make the apple filling, put all ingredients in a skillet, stir and let simmer for a few minutes over low/medium heat. Crispy baked smashed potatoes topped with vegan pesto 🌱 and parsley with a side of steamed asparagus and of course a drizzle of tahini 😋😍 . For the smashed potatoes: 1 kg small potatoes. Olive oil. Sea salt. Toppings of your choice. . Instructions: Bring water to a boil, add the cleaned potatoes and cook them for about 25-30 minutes until they are soft (knife/fork test). . Preheat the oven to 220 degrees celcius, put the cooked potatoes on a baking tray, smash them down with a potato masher or simply a bowl, add a drizzle of olive oil and a pinch of sea salt on the top of each potato and bake them for about 30 minutes until crispy and lightly browned. . Put them on a plate and top with whatever you want. Just get creative. Eating your sushi with fish is so 1995..😴 (Not that there’s anything wrong with the 90s, don't get me wrong. #90slove) Veggie sushi is just as delicious, seriously!🍣 And the best part: It’s better for your health and the planet plus our fishy friends don’t have to be killed for your sushi.🐡🐙 You might think „I don’t care, I love the taste of fish“. Well well, let me tell you: I used to LOVE eating fish before going vegan. Pizza Tonno and roasted salmon belonged to my favourite dishes and I guess I still love the taste of fish.🐟🍕 However, did you ever think about other things maybe being more important than your taste buds?🤔 Well, for me personally, 2.5 years ago I came to a point in my life at which I realized that my ethical beliefs and the resposibility we have for this planet are way more important than those 5 minutes of pleasure eating my fish.😐 I couldn’t even enjoy it anymore anyway as the only thing I could think about while eating was where this fish came from. Went vegan overnight and never looked back although I still love the smell of roasted fish, can‘t deny it - and why should I? It only proves that you can easily go and stay vegan even if you loved the taste of animal products before.🙌 And you probably can’t hear it anymore but: Going vegan has been the best decision I ever made and the only regret I have is that I didn't make it earlier.🌱 The reason why every vegan says this is because it simply is the way we feel. Repost @wholesome.meal - Unbelievable creamy tahini-garlic sauce with spaghetti, peas and mushrooms 🍄 , oven roasted broccoli , turmeric cauliflower and some more tahini on top 😍🙏 . Ingredients 400 g pasta of your choice . For the Tahini-Chickpea Sauce 2/3 cup dried chickpeas (equals 2 cups cooked chickpeas) 1 cup cauliflower - chopped in small florets 1/3 cup tahini 2 red onions 2 cups water 1 tbsp coconut oil 1 tsp salt 1 tsp garlic powder (or 1 clove fresh garlic) 1/2 tsp pepper * (white pepper is more tolerable) 2 tbsp yeast flakes * (optional) 1/2 tsp lemon or lime juice * (optional) . Instructions 1. Wash the chickpeas and soak them in water overnight or for a minimum of 8 hours. Drain and cook them as recommend on the package in fresh water until soft. I always use my InstantPot to cook beans which makes it so much easier and faster. 2. Cook the pasta as recommended on the package 3. Bring water to a boil, add the cauliflower and cook for about 10 minutes until soft. Then strain and put it aside 4. Peel the onions and chop them, how big or small makes no difference, they’ll be going in the blender. Heat the coconut oil in a pan, add the onions and chickpeas and fry until everything gets lightly browned. The roasted flavor really brings this sauce to the next level! 5. When the pasta is al dente remove from heat and strain 6. Put the cauliflower, fried onions, chickpeas, tahini, salt, pepper, yeast flakes, lemon juice and water in a blender or food processor and mix until you get a smooth and creamy sauce. 7. Enjoy with the freshly cooked pasta or anything else you desire! . Notes 1. The preparation time doesn’t include the soaking and cooking time for the chickpeas 2. Need to eat more lentils..🤔 Always thought they're a little boring (except for my mum's lentil soup, of course) but I found out: They just need the right dressing! Well, everything tastes just so much better when the dressing is on point, right?👌 Do you like lentils? What's your favourite way to eat them? (Für'd Schwoba: Linse & Spätzle isch ja ned so meins..🙊😂) . . 📸Lettuce, cucumber, avocado & lentils with crispy tofu & tahini dressing.🌿 Cook the lentils until they're soft, cut up some tofu, put it in the ofen until it's crispy and then add the tofu and tahini dressing to the lentils.
