Where the German thought the dinner would be done but the Vietnamese thought the host and guest would be cooking together. The Ultimate Coffee Banana Bread Recipe

A modern twist on an all time baking favourite, our coffee and banana bread is a must try recipe for all avid home-bakers, snack lovers and coffee enthusiasts out there!
Banana bread is a classic bake that’s a great way to afford food waste and put those over-ripe bananas to good, or rather great use. Also it requires no additional wrapping/packaging and can be stored in a reusable tin. We are all about sustainability after all, and we are huge fans of being frugal and environmentally conscious! This coffee and banana bread can be eaten as a hearty breakfast, toasted with butter and fresh slices of banana, as a quick and yummy treat, or can even be served at a home-made afternoon tea

This delicious recipe also happens to be vegan friendly! Not only that but other ingredients can be easily swapped to make this suitable for those who need to avoid nuts, gluten and/pr oil, so fortunately nobody has to miss out!
Ingredients:
The mixture:
3 ripe Bananas (must be brown and spotted)
1 tsp Apple cider vinegar  
1 tsp Baking powder
1 tsp Bicarbonate of soda
1 and ½ tbsp Finely ground coffee
1 cup of Brown sugar
½ tsp of Sea salt
⅓  cup of Artemis coffee concentrate
½  cup of Milk of your choosing
(We used Soya. Water can be substituted for milk)
½  cup of melted Coconut oil
(Or alternatively Rapeseed oil for allergies/milder taste. You can also use any nut butter and Flax/Chia seed paste to for an oil free and healthier option)
1 cup Rolled oats
1 and ½ cups of All purpose flour
(Swap out plain flour for an alternative gluten-free flour if you are coeliac)

(Optional)
1 tsp Vanilla extract (strongly recommended)
1  tsp maple syrup (or other liquidised sweetener of your choosing)
½ tsp of Cinnamon
(Recommended Toppings)
Almond flakes
1 Sliced banana
Prep time: 15 minutes (½ hour)
Cooking time: 60 minutes (1 hour)
Method:
Begin by preheating your oven to 180°C (use the fan setting is possible) and line an 8’’ loaf tin with non stick parchment/baking paper or grease thoroughly with dairy-free butter.
Slice up the bananas and add to a small bowl. Using a masher or fork, mash the bananas up into it forms a runny texture. (Try to remove as many lumps as you possibly can - adding the (optional) maple syrup to this will help). Then set aside.
Make sure all dry ingredients are sifted thoroughly before beginning this next step.
In another, larger bowl, add in your sifted, dry ingredients one at a time, beginning with the flour. Stir in each new ingredient into the mixture until they are fully combined. (for a smoother bread, you can lightly blend the oats in a food processor until they form a flour-like consistency. We didn’t do this however, as it gives the bread more spring to it).
Retrieve your small bowl with the banana mixture and add all the remaining, wet ingredients, combining thoroughly with a whisk. Whisk until you have reached an even, liquid consistency.
Slowly and carefully add this wet mixture to the dry mixture, stirring well with a wooden spoon, until all clumps have disappeared from the batter completely. The batter will be smooth, but thick. (Runny batter will result in the bread not rising properly or being to cake like)
Pour this batter into the lined or greased loaf tin, smoothing the top off with a spatula. You may add any additional toppings such as sliced banana and flaked almonds. Place them generously on the surface of the batter. Or keep it minimalistic and let the loaf speak for itself).
Place in the oven for around 60-70 minutes (timing will vary slightly with diffeent ovens). The bread will be golden brown and lovely deep cracks will have formed on top. To ensure it is cooked all the way through, pierce the loaf with a toothpick check to see if it comes out clean. If so, it’s ready!
Remove from the oven and let it cool for 10 minutes in the tin. Then you may remove the bread from the tin using the sides of the parchment paper sticking out the sides to lift it upwards.  
Allow the bread to cool completely before slicing. Store in a container at room temperature for up to one week.

Using Alternative flours:
Recommendations for Gluten-free flours: I recommend either using Coconut Flour,  or half Buckwheat flour and half Oat flour for Gluten-free banana bread baking.
Why these flours? Coconut flour is a very popular choice amongst bakers, especially for Banana Bread recipes. I’ve found a lot of recipes that favour this flour. The main reason I don't use it myself is that I cannot get it from the shop down the road. Lazy Baking at its finest. Alternatively, substitute All purpose flour for half Buckwheat flour and half Oat flour. Oat flour tends to make bakes extremely moist and I love that in a Banana Bread. I then recommend using half Buckwheat flour as this usually results in a dryer product, so I find that combining these two fibre-rich flours produces the perfect balance, also without creating an odd taste.
Assuring your flour is Gluten-free: As with many different ingredients, cross contamination is always a possibility, especially when using ingredients from popular/big brands. To ensure that the flour you are using is completely gluten-free and safe for those with Gluten allergies, the packaging will state a certification mark.
Choosing the right flour for you: At the end of the day, it is completely all about preference and accessibility. Different flours have different health benefits and baking properties. The bread’s texture and appearance will of course vary with each different flour, however this isn’t necessarily a bad thing, if you prefer a very moist banana bread, choose oat flour. Do you prefer it more dry and crumbly? Buckwheat flour will suit you. Sweet and flavourful? Coconut flour. Or do you want your banana bread to be more like, well bread, then Brown Rice flour is ideal. I wanted this recipe to be as accessible as possible, from personal experience and discussing this with many other bakers and home-cooks, it was clear that flax/chia meal was not a kitchen cupboard essential for most people, unlike oil. I have tried this recipe with peanut butter and chia paste and it came out pretty much the same, except with a slightly nuttier taste. But for convenience reasons I prefer to use oil.

And the water should already be at a rolling boil when the noodles are added (butta la pasta and all that). I was always told that a standard box of dried spaghetti needed about five to six quarts of water, to keep it fully submerged, and to provide enough space so that it wouldn't clump together into a sticky ball.
Somewhere along the way, I was clued into the fact that after cooking spaghetti super al dente, I should finish the noodles along with the sauce, plus a hefty splash of the starchy cooking water, for maximum emulsion and sauce binding. Which is a neat trick—and one I'd later learn to take even further.
In 2009, food scientist Harold McGee posed a question in The New York Times that changed my life: How much water does pasta really need? So heartened by his experiments with less cooking water (no sign of the feared-for glueiness) was McGee that he actually reached out to pasta legends Lidia Bastianich and Marcella Hazan, to ask them to give it a go. Ultimately, McGee found that he actually preferred not only cooking his noodles in less water, but even starting with cold water, so that the individual noodles didn't stick together too much. He noted that the resulting cooking water was much thicker than what you'd get with the old-school quarts-upon-quarts boiling method, calling it "almost a sauce in itself."
Some months later, Serious Eats' J. Kenji López-Alt got on the case after he walked in on his wife—gasp—cooking noodles at a mere simmer, in a small saucepan. He explains the science behind starchy pasta water of any kind in the first place:
Pasta is made up of flour, water, and sometimes eggs. Essentially, it's composed of starch and protein, and not much else. Now starch molecules come aggregated into large granules that resemble little water balloons. As they get heated in a moist environment, they absorb more and more water until they finally burst, releasing the starch molecules into the water... The starch eventually washes away into the water (assuming that you separated the pieces of pasta by stirring), and the pasta pieces become individuals again.
So, it makes sense that less water equates to a higher starch content for the same quantity of noodles. And, as López-Alt explains, starch acts as an emulsifier as well as a thickener—meaning it helps to keep fat molecules dispersed and suspended in a sauce, creating something light in texture and creamy-seeming, which coats the noodles as best as possible.
Ten years after McGee wrote about his initial tests, I'm still turning to this method of cooking my noodles whenever I need extra emulsion insurance. Like, when I want a thick, creamy coating for my pasta without any cream or butter—just pasta water—and I want it to come together quickly. I place my noodles, a bunch of salt, and cold water in a shallow skillet or saucepan, and bring it to a boil. From there, it only takes a few minutes to achieve a perfect al dente, with super starchy water to boot.
When I recently had mind-bogglingly creamy and delicious aglio e olio—spaghetti with just garlic, red pepper flakes, olive oil, and Parmesan—at New York's I Sodi, I knew I had to call in this trick to assuage my cravings at home. Most versions of aglio e olio ask you to cook down the pasta water for the sauce, so using a shallow skillet for the thickest, starchiest version of that water was a no-brainer.
The rendition I came up with riffs on the classic by adding deeply browned Italian sausage, and using some of its rendered fat along with the oil to cook the garlic. It's creamy, satisfying, and slightly spicy—and best of all, it takes only 15 minutes:

Okay, maybe not totally clean. This is biology we’re talking about. There are no clean slates. Vestiges of past consumption, behaviors, and decisions always remain and affect us into the future. Unless you clone yourself and rear the baby, you’ll always be left wondering “what might have been had I stayed pure…” But this protocol is about the cleanest you’re going to get.
After the elimination phase, after symptoms have improved, you enter the maintenance phase. You marinate in the diet. Allow it to seep into your pores, do its magic.

A leaky gut allows proteins, toxins, and other compounds into circulation that aren’t supposed to be there. The body mounts an immune response to the invaders. If the gut stays open, the inflammatory response stays elevated. And if the immune system gets its signals crossed and starts targeting your own tissues that resemble the invading particles, you have the beginnings of an autoimmune disease.
Who’s It For?
1. Folks with autoimmune diseases.
Until recently, the autoimmune protocol was based on biological plausibility, educated conjecture, and a convincing stream of anecdata. It hadn’t been demonstrated in a legitimate study. There are limitations here. 15 subjects is quite low; I’d like to see ten times that many. There was no control group; this wasn’t a randomized trial (which the authors acknowledge). But it’s quite impressive and bodes well for other autoimmune conditions.
Although this was the only study to examine the entire autoimmune protocol, we know that specific foods play roles in certain autoimmune conditions. Gluten-containing grains are a major, perhaps the major offender, since gluten has the tendency to wrench open the tight junctions in our guts (leaky gut) and allow passage of food particles and endotoxins into our bodies where they can trigger inflammatory and autoimmune processes. Gluten-free diets have been shown to help with:
Autoimmune hepatitis.
Type 1 diabetes (an autoimmune disease).
Rheumatoid arthritis.
Multiple sclerosis.
Coffee has a perplexing relationship to autoimmune disease. For instance, it’s well-known to be protective against type 2 diabetes, but appears to increase the risk of autoimmune type 1 diabetes.
Legumes, other grains, seeds, and nuts are all potential triggers of further gut irritation. While I’ve softened my general stance on some of these foods in recent years, they remain problematic for people with avowed food sensitivities or autoimmune conditions.

We eat a lot of food throughout the course of a given day or week. It’s hard to keep track. It’s impossible to keep track, unless you, well, keep track in an explicit manner. Maybe we’re lucky for awhile. Maybe we nix the right food. But if we don’t know what we’re doing, we’re just as likely to eat the wrong thing, or eliminate too many things.

Once the symptoms improve or go away, maintain the protocol for several weeks, then begin adding foods back in one at a time. When the symptoms return, match it with the food you’ve just reintroduced.
3. Curious folks.

Legumes, other grains, seeds, and nuts are all potential triggers of further gut irritation. While I’ve softened my general stance on some of these foods in recent years, they remain problematic for people with avowed food sensitivities or autoimmune conditions.
2. Folks who suspect they have sensitivities to foods.
We eat a lot of food throughout the course of a given day or week. It’s hard to keep track. It’s impossible to keep track, unless you, well, keep track in an explicit manner. And many of us experience odd symptoms we suspect are linked to food—rashes, stuffy noses, itchiness, grogginess—but without the written logs we flail around in the dark. Maybe we’re lucky for awhile. Maybe we nix the right food. But if we don’t know what we’re doing, we’re just as likely to eat the wrong thing, or eliminate too many things.
The AIP lights our way. It provides a baseline. Eat the foods you know are non-reactive and avoid all the foods that have the potential to cause problems. Once the symptoms improve or go away, maintain the protocol for several weeks, then begin adding foods back in one at a time. When the symptoms return, match it with the food you’ve just reintroduced.
3. Curious folks.
As a reader of MDA, you are probably a nutrition geek. You enjoy needing out on dietary minutiae. You like experimenting on yourself. You’re curious about how certain foods interact with your health, and an autoimmune protocol can reveal that. It’s just good information to have, mostly.
Who Isn’t It For?
Most people. Most people don’t have an autoimmune disease and don’t need to go on an autoimmune protocol.
If you’re happy with your diet and how you respond to foods, don’t bother. It will only create unnecessary headaches. Recall that extended dairy restriction may even induce lactose intolerance. Some claim that you were always sensitive to dairy, that your body had learned to deaden you to the subjective experience of the damage being done. I say dairy is a healthy food if you can tolerate it. Inducing lactose intolerance isn’t in anyone’s best interest, if they can avoid it. 
If you’re the type to obsess over food, and you know your sensitivity is a psychological hang-up rather than a true autoimmune response, skip the protocol. It will only feed your obsession and leave you unable to think about anything else but your diet for the duration.
This isn’t for life (probably).
You can certainly eat well and enjoy what you eat on an autoimmune protocol. But the point is not to stay on the diet indefinitely. It’s to wield it as an effective tool, a broad brush that isolates all the likely suspects for questioning. Then you use the scalpel of inquiry to determine which foods—if any—are truly problematic. If you have to keep milk or peanuts or chocolate out forever, so be it. But make sure that’s what your n=1 data is actually saying.
The protocol isn’t a magic bullet. It isn’t a cure. Many other factors contribute to impaired gut health, chronic inflammation, and likely therefore autoimmunity, like poor sleep, stress, lack of exercise, poor relationships, nature deprivation, sun deprivation, and circadian dysregulation. You need to address those too. But diet is a big one, and it’s an obvious target with an established protocol.

Season foods while they’re at serving temperature. Flavor perception is strongly affected by temperature. Saltiness, bitterness, and most aromas are accentuated in hot food. To season a food, taste it actively. Ask yourself questions such as these: Is there enough salt to avoid blandness? Would the acid of some lemon juice or vinegar make the flavor brighter and more mouthwatering? Acidity is especially undervalued as a general flavor booster and balancer. Is there enough savoriness or sweetness to carry the aroma? Would some pungency from pepper add a desirable edge? Have desirable aromas faded away or become masked? Should they be revived by adding a fresh round of those aromatics? Should the aroma be filled out with a complementary herb or spice, or butter, or grassy olive oil?

Bulb basters and pipettes exploit air suction to draw up liquid from a small space and place it somewhere else. Use them to draw meat juices up from underneath the fat in a roasting pan, or to remove vinegar from under the floating “mother” in a vinegar barrel. Gravy or fat separators are medium-size containers with a side spout projecting from the very bottom. When you pour the pan juices from a roast into them and wait a few minutes, fat floats to the top and the meat juices sink to the bottom, where they can be separated off through the spout.

Gas and electric ovens cook somewhat differently. Gas ovens don’t retain moist cooking vapors as well as electric ovens, which can make them slower to cook and cause less rising and lightness in baked goods.
