i’ve had a shit week but yesterday i had my horse therapy for 3 (!!!) hours, and today i’m visiting a riding school for a lesson to see if i want to start riding there .. very nervous but excited :)

Smut would be great (maybe guilty pleasure hook-ups that they both promise themselves won't happen again) but is by no means a must. Emotional intimacy is definitely the priority here.

Fermentation of Winter Kimchi

Finally, it’s time to ferment something and I am from the country with all kinds of fermented foods. The problem is, one of the most popular fermented food, kimchi, is too obvious and other types of jut-ggal(Fermented Seafood) is really hard to make anywhere because of typical smell during the process of fermentation. So, I thought about what I should make for a few days and that was the time when the weather started to get chilly. And there is a type of kimchi eaten during the wintertime called Dong-Chi-Mi which means ‘kimchi of winter’.

My Fermentation Method with Documentation
I could say basic method of Dong-chi-mi fermentation is quite typical, but each region in Korea has its own way of adding ingredients. I started off with a book called “Royal Cuisine from Joseon Dynasty(14C~19C)” which I got from “Institute of Korea Royal Cuisine” last year because I wanted to introduce something that is not widely known outside of Korea. However, after reading the recipe of Dong-chi-mi made in palace, I gave up for 2 reasons. First reason was, there were several ingredients which I did not understand even in Korean and I had no clue what they were. Second reason was that even if I knew what it was, they are not easy to find here in Canada. However, I could use this recipe as a base and mix with other recipes from different recipe books.
I thought of asking my mom for my family’s recipe but then, I remembered that even though Dong-chi-mi is very common in Korea, my family enjoyed more of white version of kimchi rather than Dong-chi-mi. So, I decided to search the National Folk Museum of Korea and luckily, they did have some more explanation about Dong-chi-mi. They summarized the definition of Dong-chi-mi as follows-“Dong-chi-mi (동치미) is a type of kimchi made from large pieces of white radish matured inside a full jar of salted water. In the section on the eleventh lunar month in the “Dongguk Sesigi (동국세시기, A Record of Seasonal Customs in Korea, 1849), the dish is listed under the name dong-chim, or kimchi made with small radish roots.” (Information from National Folk Museum of Korea, http://folkency.nfm.go.kr/en/topic/detail/3655 )
Dong-chi-mi is known as one of basic figure of kimchi and its record goes back to 5~6 century during Shilla dynasty(BC 1C ~ AD 10C). So, let’s bring up some ancient flavour of Korea back here in Canada!!

1. Get a batch of white radish.

5. After a few hours, waters will drain out from the radishes. Take them out and have them ready aside. To confess what had happened, I fell asleep that night and all the radishes had sat in the salt water for overnight!! (Hope it is not too salty...)

15. Wrap it with plastic and put it away in your refrigerator or kimchi refrigerator if you have one.
After One Month of Fermentation in Refrigerator
After one month of fermentation(Oct. 22nd - Nov. 19th), I wanted to check and see how it was going. So, here’s what I have found out.

- To my surprise, nothing much is seen from the dong-chi-mi. - Dong-chi-mi is a type of kimchi which you drink the juice(or broth) with the radish and if the juice is too salty, usually you add more water before serving.

- Have a bite!! and ooh~!! it is still not ready to eat!! It has good flavour but the juice and the radish is quite salty. I think it will be much better in December or January.

- But we cannot wait too long. Let’s try to make the clock go a bit faster. - Get those sliced ones in a small container with a 1/4 piece of pear and apple and add fresh water of 200 ml.

- Seal the container and I will put it in ordinary refrigerator. - Let’s see the result this weekend!!
Review of Dong-chi-mi 
As I had said earlier, my recipe is combination of 3 to 4 recipes including royal cuisine recipe found in the book. Even considering the fact that you cannot get every ingredients ready here in Canada, I think it would have been even better with some more ingredients added. From the tasting  2 nights ago, I could say 3 things should be considered for the better taste next time.
1. Fermentation time takes longer than expected. Thinking the fact that kimchi is a food to eat for over a year, it may need a bit of more time to be served. Or maybe I should not put it in the refrigerator right after they are done.
2. Add more water for the base or maybe even use cold vegetable stock. I used 4 litre of fresh water and to me, it is still a bit salty. Dong-chi-mi is supposed to give the person freshness of cool radish juice, I think I could add some more water for the better taste.
3. I should add some more ingredients such as,  - chilli pepper : it could give a bit of spiciness and better looks. + you can eat it  - green onion : I should add more and give more flavour into it.
I could not do the exact sensory evaluation because it is not ready to eat yet. But I could finish it In short for the radish and the broth from 2 night ago. - Smell : It was still fresh but had a bit of kimchi odour, - Texture(Touch) : Firm but good enough to chew. - Colour : Colours have not faded away yet. - Taste : Can sense the good flavour but not ready to be serve and a bit salty. - Sound : Very crunchy chewing sound, thanks to the texture.
I really want to try dong-chi-mi with yam and cold noodles which I have not had a chance to for over a decade. Oh, so the answer from the first quiz is #4, all of above. I guess most of you might have figured it out already.

Day 23 – May ’22 challenge
31st May 2022
Oh I’m home so late so I really can’t delve into any subject which will get me rambling on, but I feel so alive! Just back in from a rehearsal with Stornoway Singers and it is so good to be singing again! As the conductor of a choir, it’s a different experience being the one waving your hands in front of the singers than being in amongst them. There were many occasions when I would’ve stopped the singers to correct a rhythm or a pitch, and that is a conductor’s prerogative, but at the same time it is so refreshing to not have to think so much about that and focus on your own singing! The temptation is so real but as I let go & respect the conductor in front of me, so do my stresses. They dissolve away and I’m just me!
Singing in choirs was something I really cherish from my childhood, but it dried up when I went to college and ended up being the harpist playing for choral societies and learning to conduct youth choirs. The time for me being the participant was over as I was then becoming the leader. But not anymore! I made a conscious decision last year to make more of an effort to do the things that I enjoyed, and singing is one of them. I knew they rehearsed on a Tuesday night, but my teaching schedule always got in the way. Knowing that rehearsals would be starting up again after Covid and a new programme was to be rehearsed leading up to a September concert, I got the dates set in my diary, re-jigged my lesson times to suit and hey presto, I’m in a choir again! It means a late night on a Tuesday, but the summertime is the perfect time to be getting into that routine as it’s still light when I get home around 10pm.
Tonight it was 10.15pm and I just caught the sunset as it was going down. I stopped around Dalbeag to grab a quick photo as I knew by the time I got round to Dalmore; I’d have missed it. My phone didn’t do it justice but I’m still glad I took the time to stop and appreciate it. After the awful start to the day, when I woke up with an excruciating headache and couldn’t get rid of it, so ended up taking pills before leaving for work (I detest doing that), I was so glad to be ending the day in a much better way – invigorated and happy to be alive!

I feel so refreshed at the moment and full of energy for life. However, it is time for bed, with a morning meeting online on the horizon, so I really need to chill out and unwind before getting to sleep. I’ll put some music on, drink plenty of water and spearmint tea, run a bath and do some deep breathing exercises. 
It reminds me of my boarding duties days in Taunton when, twice a week & every other weekend, I’d be on duty until 11pm and then back on again at 7am, having to go home in-between, which was a 20-25min drive away. The last hour of the shift was always “downtime” as it was monitoring the dorms after bedtime & this was where I’d usually find myself sleepy, naturally. I had to learn quickly how to get myself perked-up to drive home and then unwind again before midnight and get a few hours’ sleep before getting up again. It was torturous in the wintertime, living in a stone-built cottage with storage heaters & getting home to find the place had already cooled down by then as it didn’t retain heat efficiently. It was then that I bought our heated mattress topper so I could pop that on, run a bath and get straight into a warmed bed so I could relax my muscles and drift off to sleep as quickly as possible. However, the getting up in the morning was always tricky, no matter what time of the year it was, as I do not function properly on less than 8hrs sleep and I didn’t realise at the time why. Women with PCOS require the extra hours because poor sleep quality/routines are associated with obesity and insulin resistance. There was nothing I could do with my routines back then, but it definitely wasn’t good for me, I know that. Modifying my sleep patterns has become one of the key changes in my lifestyle and although Kevin sometimes does wonder how on earth I can sleep-in so well in the mornings when we’ve gone to bed later in the evenings, being able to be flexible with my morning routine by not having work scheduled first thing, is a key element in my healing process and longer-term maintenance.
I am very grateful for my OvuSense monitor “having” to be used for at least 6hrs a night too, in order to get a successful average reading. It forces me to think about my bedtime hours compared with when I might need to get up and as a result, I always get a good nights sleep. There have only been a few occasions where I have missed being able to use it because I was getting up early for the morning ferry and would only be getting 4 or so hours sleep but even then, I want to aim to be better at still getting 6hrs even on those nights, which would mean packing in advance so I’m not doing it the night before and eating into my sleep time - Kevin will enjoy that! He detests, so much, me packing late at night before an early ferry. He gets so frustrated with me and wants his own sleep so he can drive without feeling exhausted. So, hopefully in future it should only get better in that respect if I keep aiming to improve on it!
When I’ve mentioned sleep or needing to go to bed early to people before, I always got the response “you’re young”, well-being young has nothing to do with it. I was 23 when I was diagnosed with PCOS, had chronic fatigue, fought it, still tried to “be young” and burn the candle at both ends like all young folk do, lived on caffeine, out of service stations, driving up and down the country like a loon. I had a chronic condition which required me to act like an older generation, needing a full 8hrs of sleep each night, but I wasn’t getting it because everyone expected me (& therefore I expected it of myself) to be able to act my age, yet that alone aged me more rapidly than if I’d taken care of myself. If I’d had a steadier work routine which enabled me to support my condition’s needs, perhaps I wouldn’t have spent a decade feeling as ill as I did. 
Still, I wouldn’t change any of it because all of my experiences, bad or good, have made me who I am today. Perhaps living the way I did, I can now help others to see that we’re all individuals and we need to be compassionate with our bodies. We only have one, to live in throughout the duration of our lives. It’s not like a house which we can upgrade, extend, or move when we’re needing something different. We have to adapt to what we have been given and cherish it as long as we inhabit it. Not abuse it or take it for granted. It is merely the vessel we’ve been gifted to make us part of this world, which carries our soul for this part of our journey, and we leave it behind in the next part. Sometimes it breaks. Sometimes it needs a service. Sometimes it doesn’t serve us well. Sometimes it frustrates us. But all of the time, it is ours and ours alone and it keeps us ticking over as long as it is required for. We need to treat it with the respect it deserves.
