Easy Quinoa Salad Recipe
Ingredients:
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1/2 cup chopped fresh cilantro
- 1/4 cup extra-virgin olive oil
- 1/4 cup fresh lime juice
- 1 teaspoon ground cumin
- Salt and black pepper, to taste
Instructions:
1. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover and simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
2. In a large bowl, combine the cooked quinoa, black beans, diced bell peppers, red onion, and cilantro.
3. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and black pepper.
4. Pour the dressing over the quinoa mixture and toss to combine.
5. Serve immediately or chill in the refrigerator for a few hours before serving as a cold salad.

Mango and Pineapple Salad
Ingredients:
- 1 ripe mango, peeled and cubed
- 1 small pineapple, peeled and cubed
- 1 kiwi fruit, peeled and sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1/2 cup blackberries
- 1 tablespoon honey
- Juice of 1 lime
- Fresh mint leaves for garnish
Instructions:
1. In a large bowl, combine the mango, pineapple, kiwi fruit, blueberries, raspberries, and blackberries.
2. In a small bowl, whisk together the honey and lime juice.
3. Pour the honey-lime dressing over the fruit mixture and toss to coat.
4. Chill the salad in the refrigerator for at least an hour before serving.
5. Garnish with fresh mint leaves before serving.
Enjoy this refreshing and healthy fruit salad as a dessert or a snack!
