hi mr. journeys, any advice for dealing with a friend who measures xanthan gum with a metal teaspoon (if at all) because, and i quote, "it's only baking"? i love them but as i am an annoying pedant it's very difficult to get past 😔

Oh, now, this is a wonderful question and I'm so glad you've come to me with it, because it was either me or Paul Hollywood, and, between you and me, he's shit. His dough is always far too dry. King of bread, indeed.

I suppose I have some questions. Is your friend using the xanthan gum for dough/batter, for ice cream, or for flinging into the eyes of their enemies getting in the way of their baking? Because the quantity and precision required will vary. Is the teaspoon a precise volume teaspoon from a set, or a non-standardised tea preparation implement?

Generally speaking, baking is chemistry, and proportions have been figured out via trial and error to achieve the right reaction, so precision is required. For a small quantity, the volume of properly stored xanthan gum will not have too much variation in it, so a levelled, standardised teaspoon is ok, so I would try to forgive your friend and exercise some self-compassion; as a fellow pedant it is hard to recognise that good enough is good enough. If it is something like 6 teaspoons I'd say using scales for a specific mass would be more reliable. The "if it all" comment is deeply concerning, however; I can think of few scenarios where a devil may care approach to a specific setting or emulsifying agent is appropriate. Sometimes we have to practise radical acceptance when it comes to the failings of our loved ones, but in this case it sounds like something must be done.
