Chocolate banana baked oats
In it:
3 bananas
3 eggs
2.5 c oats
4 tbsp chia
2 c milk
Espresso powder
Vanilla extract
Cocoa powder
Cinnamon
Cardamom
On it:
1 banana
Cacao nibs
Choco chips
Pour into 9x9 pan and bake at 375 F for 45 min. Cooled, wrapped in Saran and froze.

Strawberry white chocolate chickpea muffins
I used peanut butter because that’s what I had and they were good. I also used freeze dried strawberries instead of fresh. They have great texture and just taste like peanut butter muffins. I’d leave out the white chocolate next time because they didn’t need it, and just make them PB&J muffins instead by focusing on the strawberries and the nutty base. No taste of chickpeas. I only cooked 20 min. It made 12 with some extra that I put in a mini loaf pan and it made a brownie thickness loaf

This is a staple now. I usually double it. I think it’s easier to blend the liquids and beans and then mix everything else in a mixer bc it’s hard on the blender with a batter that is more dough like. Make in a 9x13 pan

Sweet potato brownie
I want to make this daily till I die. Cakey. Only cooked batter 2 min in microwave. I would try maybe even a tiny bit less syrup and a tiny bit more sweet potato? Curious if it would still be good that way. Add a little sea salt on top at the end

Greek chicken meatball bowls
Delicious! Meatballs are easy to make. Tzatziki sauce was great. Did 2 kinds olives, tomato, cucumber, sweet cherry peppers, olive oil, red wine vinegar salt and pepper for the salad part. Feta on top. Make again!

Half avo (Kate said add furikake next time)
Seaweed
Brown rice + rice vinegar + sprinkle of sugar

Miso mushroom beans
I used cannellini beans. Use pot not frying pan (it’s too big for a pan). Took 30 min not 20 even when trying to work quickly. You can taste the nutritional yeast but it’s still good! Loved adding kimchi on top
