Experimenting with gluten-free, grain-free baking. Sunday morning coconut flour pancakes with warm blueberries! They need some work but the taste was there. Coconut flour is very mealy, so next time I'm going to use half coconut flour, half almond flour and see how that goes. Recipe: 1/4 C. Coconut flour 1/4 C. Organic, unsweetened applesauce 2 Eggs 1/4 C. Coconut milk 1/2 t. 100% natural Tahitian vanilla extract 1/8 t. Organic cinnamon Dash of sea salt Mix and add more applesauce/coconut milk as needed to reach the right consistency. Whole30, Day 24 Welp, I made it a strict 24 days. So close. Until this evening. We went into this challenge knowing that the last week would be tough as we are going to Philly for the weekend for the bf's college buddy's 40th bday bash. Lots of old friends, activities, drinks...yada, yada. Tonight we had a big opening to attend, the type of social event where drinks are pushed on you. Needless to say, the challenge was challenged and we willing #failed, as we cheers'd to the success of our 24 strong days and to our fun filled long weekend ahead. We're both okay with this. Whole30 has had a positive impact the both of us and we plan to continue the lifestyle. I thank you all so much for the support so far. I'm going to continue to post the meals I'm eating, recipes and my journey reintroducing some food groups...and who knows, we'll probably take on the 30 day challenge again when the social calendar is dead. Summer Salad v.Whole30
This is an altered version of one of my favorite Summer salads.  I usually make this with fresh sweet corn and black beans, BUT those are omitted to make this Whole30 ready.
1-2 Cucumbers (spoon out center)
2 Small Vine Tomatoes
1 Avocado
1/2 Green Pepper
1/2 White Sweet Onion
Cilantro
Juice of 1/2 Lime
Rice Wine Vinegar or Apple Cider Vinegar (Read your labels for Whole30 compliant)
S&P
Cut cucumbers, tomatoes, and avocados in 1/2" pieces
Dice green pepper, onion and cilantro 
Combine all ingredients, add lime juice, a couple of dashes of rice wine vinegar / apple cider vinegar, toss and S&P to taste.
This is an easy, fresh and delightful, pairing for seafood or chicken or in a bowl as is.  Enjoy!
