SPICY TOMATO SAUCE 🔥 I’m a big fan of spice and I love finding local people in the city who grow numerous hot peppers. This was really fun to make and I am thrilled with how it turned out 😍 Of course I used edamame bean noodles, which have 20g of fibre and 36 grams of protein per serving… woah! Ingredients: 10-12 garden tomatoes 6-8 garden carrots sliced in half 6-8 cloves of garlic 2 fresh local banana peppers 3 tbsp avacado oil 2 tbsp fresh parsley 2-3 tbsp oregano 1 tbsp paprika 2 tsp thyme 2 tsp sea salt 4 leaves fresh basil 1-2 tbsp dried basil 1 tbsp pepper 3/4 cup oat cream 1/4 cup boiling water Instructions: Preheat the oven to 425 On a baking tray, place down parchment paper. Add your vegetables, pepper, garlic, oil, parsley and a pinch of salt and pepper. Bake for 30-40 minutes Place in a large pot and add in your boiling water. Using the cusinart hand blender, begin to puree the vegetables. Add in remaining herbs and oat cream. Blend well. Simple, easy, so GOOD. You can also use a food processor to make this sauce! If you don’t like spice, omit the peppers. RASPBERRY CRUNCH YOGURT PARFAIT The perfect snack with a crunch. This is easy to whip up and enjoy after dinner, or mid-day! 😋 Ingredients: 3/4 cup coconut yogurt (I used riveras unsweetened) 1/2 cup Vega sport choc protein 1 cup organic fresh raspberries 1/2-3/4 cup vanilla crunch sunrise cereal by nature valley ( GF, LOW SUGAR) 1 tsp ground flax for topping Directions: Mix your yogurt and protein until thick and creamy.
