Spinach-Cheese Stuffed Chicken Breast. Used the leftover cream cheese-peppers jack cheese mixture to stuff this piece of chicken breast. I basically “butterflied” the breast and stuffed it with spinach I sautéed in bacon fat and the cheese mixture. Rolled it up, then browned, on all sides, in more bacon fat. Bacon wrapped jalapeño poppers. Stuffed with a mixture of cream cheese and pepper jack cheese. Baked at 375•F for 30 minutes, then 3 minutes under the broiler on low. We are starting back on Keto. My son celebrated his birthday on May 1st, so I baked his favorite treats and our recent household staple - beef and beans chili. Nope. Not Keto at all. Keto diet has to be re-evaluated in our household because of certain genetic traits that affect chemicals in the brain, that can trigger a whole lot of other undesirable outcome. No doubt Keto is one of the best, and fastest and seamless way to lose weight. I think our son is eventually going back on Keto. My husband is off Keto right now and is re-evaluating a good median, while I float between paleo-LowCarb. Wild Caught Alaska Pink Salmon Cakes served with roasted Brussel sprouts and brown rice. Salmon cakes are Keto/LowCarb/Paleo. I used cage free eggs and coconut flour to bind them. I used the recipe in the back of the can as a starting point. I omitted milk and breadcrumbs, so the salmon cakes are dairy free. Of course I added my signature spin to it by adding a few additional ingredients to suit my husband’s taste. My husband swears these Salmon cakes taste exactly just like his Dad. His brother agrees to! That makes me happy.😍

Pulled Pork Nachos or Quesadillas More pulled pork ideas for you guys! Or you can use leftover roasted chicken or other meats. Simply, quick and delicious! I was scrambling this morning for my son’s lunch. And this is the dish I made in less than 20 minutes. You can definitely make this Keto or Low Carb by using Keto/Low Carb Wraps. What you need: * Keto/ Low Carb tortillas or wraps * Four Mexican Cheese, shredded. Amount is based on how many you are making. Allow 1/2 cup of cheese per Nacho/Quesadilla * Left over pulled pork or roasted chicken, chopped * Chopped red onion * Chopped red bell pepper * Chopped green onions For Nachos: 1. Heat a large nonstick skillet. 2. Warm tortillas or wraps on both sides. 3. Top tortilla or wrap with about 1/4 cup of cheese. 4. Scatter about 1/4 to 1/3 cup of meat over the cheese layer. 5. Scatter a tablespoon or more of each: chopped red onion and green onions. 6. Finish the top layer with 1/4 cup cheese. By this tortilla should be slightly crispy at the bottom. 7. Slide the tortilla(s) or wrap(s) into baking sheet. 8. Place under the broiler until Cheese is melted, about 2 minutes. 9. Slice into triangles. For Quesadillas: 1. Follow instructions above, up until #8. 2. Warm another tortilla(s) or wrap(s) on both sides on the hot skillet. 3. Once the cheese has melted, per instruction #8, place the warmed tortilla or wrap on top of the melted cheese. Continue broiling until until the top tortilla/wrap is golden brown and crispy. 4. This came really good. Repurposed roasted pork. I basically chopped up the pork, then sautéed in garlic, onion. Added the pork. Sauté a few minutes then added chopped red bell pepper. Seasoned with salt and ground black pepper. Poured in 6 extra large beaten eggs (seasoned with salt and black pepper). Let it cooked a few minutes then topped with sharp cheddar cheese. The best coconut flour pancakes I’ve made. But the recipe needs to be simplified. I don’t like beating the egg whites by hand.
