Vegetarian E-Fu Noodles with Shiitake mushrooms. This is a Cantonese dish often found in Hong Kong and Cantonese restaurants around the globe. 1 E-Fu noodle 4 dried Chinese shiitake mushrooms 2 fresh shiitake mushrooms 1 tbsp of light soy 1 tbsp of dark soy 2 tbsp of vegetarian oyster sauce 2 TBSP of water 1 tbsp of vegetable oil 1. Soak the dried shiitake in hot water for at least 30 mins 2. Cut the mushrooms into slices 3. Pour oil into a large wok 4. Add mushrooms into the wok and water and cook for 2 mins 5. Boil water in a large pot and add E-Fu noodles in to cook 6. E-Fu noodles are very finicky to cook. If you cook them too long, they become soggy, if you cook them not long enough, they will be too hard. Make sure to stir the noodles for even cooking and test the noodles after 2 mins. Once the desired texture is achieved, take them out immediately and leave to dry. 7. Add soy and oyster sauce to mushrooms and mix. 8. Add noodles into mushrooms and mix and ensure each noodle has the color changed. 9. Turn the heat high until the bottom of the wok is dried and no sauce is remaining. The Chinese translation of this dish is called dried braised noodles. The key being the noodles should be dried meaning there should be no sauce on the bottom of the wok. 10. Happy Hump Day! Fresh made pasta with tomato sauce and mushroom cream sauce. Nothing taste better than handmade pasta! Follow me and keep updated with new vegetarian and vegan recipes. 1. Mix 100g of 00 flour with 1 whole egg (use water if making vegan). 2. Knead the dough until smooth and round and wrap it or put it in a bowl with lid into the fridge for 30 mins at least 3. Take it out of the fridge and knead it a couple of times more and cut it into smaller pieces to run through the pasta roller. 4. You want to start with the thickest setting on your roller first and roll it through twice before going to a thinner setting. 5. Depending on how thin you want your pasta, usually by the second or third thinnest, it should be ready to be cut. 6. If you have a cutter on your roller than cut it through there, if not, you will need to fold the pasta and cut it by hand. 7. Put some semolina flour beneath the cutter for the pasta to land on so it doesn't stick together 8. Hang the pasta on a pasta rack to dry before cooking. 9. Pasta should be cooked in boiling salted water for about 2-3 mins until al dente 10.
