Sweetness is all around us during this time of the year. The creative delicious process of cooking beautiful cookies, pastries, and desserts inspired by nature inhace’s all kinds of emotions. From beginning to end cooking has it own blue print when verting your emotions into the process.
Cooking from scratch, milling my own flours is something I never thought I would find so meaningful. In part because it’s healthier!!.

Here I’m with my thermie cooking, teaching, finding and giving more inspiration to/from others as from nature itself.
Coconut, icing sugar, sugar icing and a combination of wholegrain flour were used to make this cookies. Crunchy, white and sweet enough.

Lentil soups are absolutely a must in every diet. If you are incharge of feeding a group with diferent diet life styles, this is a recipe for you. Two in one recipes at the same time. It can’t be better!
Remember always to Relax before cooking. You are about to prepare something delicious.
Ingredients
350 gr. 2 hours soak lentils, 100 gr. Green pepper, 100 gr. Carrots cut into slices, 100 gr. Pink potatoes cut in small squares, 100 gr. White onion, 2 tbs, veg. stock., 50 gr. Olive oil, Himalayan salt to taste, 2 garlic cloves, 1 bay leaf, 800 gr, water. 1 tbs Spicy or Spanish paprika
For canrnivorous one 100 gr. chorizo piece cut into slaces,
Thermomix Method
1- Soak fresh lentils for 2 hours or very dry ones soak them overnight before cooking. Rinse the lentil before using
2- Chop Green pepper, garlic and onions for 10 sec/speed 6
3- Place all the ingredients into the mixing bowl and program for 35 minutes spoon speed, reverse. 10 min before ending separate some portions for vegan people and continue with the recipe for. Last add seasoning to your taste :)
4- For Onmivorous add the chorizo 10 minutes before it ends cooking decorate with cheese.
Traditional Method:
1- Soak the lentils for at list 2 hours or day before cooking. Rinse the lentil before using
2- Chop everything except the carrot into small pieces.
3- Cut slices of carrots. So your soup can look more appealing.
4- Chosea pot for 2 liters. Sauté onions garlic and green pepper with olive oil medium heat for 3 min or until onions are translucid.
5- Place all the ingredients into a pot with medium heat for 30 minutes, Stir constantly. If you see foam or some bubbles take them out of the soup when cooking.
6- Separate some portion(s) for vegans, and add chorizo. Keep cooking untils chorizo is soft (10 more min.)

How to roll out puff pastry dough? Here a visual guide for you to practice your pastry skills. Some quick tips and tricks:
1- Always relax before cooking, you want to imprint in your food the best of you to be delicious.
1- Keep your pastry always cool, use freeze your thermomatt or/and rolling pin.
2- When dough is sticky work on a lightly floured work surface, place it into de frige for 5 min and rool again. or use cling film to roll it.
3- Roll it like dancing forward, backwards, left and right, repeat. Only on one side, never flip it upside down.
4- Be creative use mold shapes to make small canapes, cake’s base vol-au-vents.
5- Freeze the butter in square cubes before using it .

Enjoying food with friends from all over the word. This time we had a special treat from Portugal.
Portuguese Tarts or Pastels of Belem
Active time: 30 min | Total Time: 45 min | Yield: 12-16 servings
INGREDIENTS flavored syrup 250 g of water 500 g refined sugar 2 strips of yellow lemon peel, 3 cm cinnamon stick Filled 500 g whole milk or evaporated milk 40 g All purpose flour 40 g cornstarch 75 g of water 480 g of flavored syrup, previously prepared 6 egg yolks ¼ teaspoon vanilla extract Base 500 g of puff pastry, cold 60 g butter, room temperature for molds
Method Flevored SYRUP Put water, refined sugar, lemon peel and cinnamon in the glass, cook 15 min with thermometer in hand at 120 Celcious slowly stirring. For thermomix users 15min / 120 ° C / vel 2. Transfer to a bowl and set aside. FILLED Put milk, flour, cornstarch, water, syrup, yolks and vanilla and mix in your blender for counting from 1001 up to 1008 medium speed and then cook on the stove approx. 11 min at 100 C stirring until having a custard consistency, Thermomix method 8 sec / vel 5. Cook 11 min / 100 ° C / vel 3. Transfer to a bowl and reserve . BASE Preheat oven to maximum. Place the rolled dough inside individual metal flanries or inside a mold of cupcakes. Moisten your thumbs and begin pressing the dough from the center outward in circular motions. The dough should be thin. Repeat the process with the rest of the molds or see the pictures.
Place the filling inside the mold, leaving a space of 5-8 mm on the surface. Bake for 10-15 minutes or until the cakes are very golden.
Serve warm sprinkled with cinnamon or sugar glass.
