On top of toasted ciabatta are slices of roasted beets that are sweet and earthy, goat cheese that is creamy, and arugula that is peppery. With a drizzle of balsamic glaze on top, this sandwich is a celebration of simple, fresh tastes.
Ingredients: 2 medium beets, roasted and sliced. 4 ciabatta rolls, sliced. 4 ounces goat cheese. 2 cups arugula. 2 tablespoons balsamic glaze. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Each beet should be wrapped in foil and roasted for 45 to 50 minutes, or until they are soft. After it cools, peel and cut it. For a light toast, cut the ciabatta rolls in half. On the bottom half of each ciabatta roll, spread goat cheese. Roasted beet slices and arugula should be put on top. Pour the balsamic glaze on top. Add pepper and salt to taste. Place the top half of the ciabatta rolls on top. Serve right away and enjoy!

Instructions: Mix the flour, sugar, baking powder, baking soda, and salt in a bowl with a whisk. Put the egg, vanilla extract, melted butter, and buttermilk in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Warm up your waffle iron and grease it if it needs it. Place the waffle iron that has already been heated with the waffle batter and cook it according to the maker's directions until it turns golden brown. Top it off with your favorite things, like whipped cream, maple syrup, or fresh berries. Serve it hot.

Ingredients: 1 cup of mixed nuts almonds, cashews, walnuts. 1 cup of sliced cucumbers. 1 cup of cherry tomatoes. 1 cup of baby carrots. 1 cup of sliced bell peppers assorted colors. 1 cup of sliced apples. 1 cup of sliced pears. 1 cup of seedless grapes. 1/2 cup of hummus. 1/2 cup of guacamole. 1/2 cup of olive tapenade. 1/2 cup of balsamic glaze. 1/2 cup of whole grain crackers. 1/2 cup of vegan cheese assorted varieties. 1/2 cup of dried fruit apricots, figs, or dates. Fresh basil leaves for garnish.
Instructions: Set up a large platter or board made of wood to serve on. Spread the mixed nuts out evenly on the board in a few places. Cut the cucumbers, tomatoes, carrots, and bell peppers into slices and place them on the board in different sections. In a different part of the board, put the sliced apples, pears, and grapes. Put guacamole, hummus, and olive tapenade in small bowls on the board. To make the hummus taste better, drizzle balsamic glaze over it. Spread the vegan cheese and whole grain crackers out on the board. Add some sweet dried fruit to any empty spaces to fill them up. Add some fresh basil leaves to the board to make it look nice. Serve right away and enjoy!
