Yooooo i have this really amazing recipe for delicious ginger cookies but the website is laggy as hell and filled with ads. So. Many. Ads.
So i decided i should post it here with a few very minor changes! (The website is called Taste of Home and the recipe is called Big Soft Ginger Cookies if you're curious)
keep in mind one batch makes a lot depending on how big you make the individual cookies. i just made this recipe and got 40 cookies, it usually makes roughly 2 1/2 - 3 dozen
Ingredients:
3/4 cup butter, softened
1 cup sugar
Additional sugar (Do not include this with the butter in the beginning, it is used at the end)
1 large egg, room temp
1/4 cup molasses
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
(Everything below this mark can be changed for taste. I personally always increase these measurements a little as I love the cinnamon-type spices)
2 teaspoons ground ginger
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
Directions:
Preheat oven to 350° Fahrenheit (or roughly 176° C according to google)
In a large bowl, cream butter and sugar until light and fluffy
Beat in egg and molasses
in a medium bowl, combine the flour, baking soda, ginger, cinnamon, cloves, and salt; gradually add to the creamed mixture and mix well
Roll into 1 1/2 in. balls, then roll in sugar (this is what the additional sugar was for)
Place 2 in. apart on ungreased baking sheets. Bake at 350° F until puffy and lightly browned, 10-12 minutes (its 11. I always use 11 minutes.)
These things cool incredibly fast and bake quickly too and they're absolutely delicious, highly recommend

Did I just buy a decant of Serge Lutens Five O’Clock Gingembre because I’ve been reading Butcher & Blackbird, and I absolutely *needed* to know what Sloane’s perfume smelled like?
Yes. I absolutely did that.
(It smells like menthol when you first spray it, but if you can get past that the dry down is incredible. The menthol completely disappears, and it turns into this warm, spicy scent that sorta smells like eating a ginger cookie while drinking a cup of earl gray tea, hot.)

If you like soft ginger cookies you will love these. I made a batch this weekend and introduced my one year old grandson to them. He wolfed them down.
MOLASSES SUGAR COOKIES
Cream together: Sift Dry Together:
3/4 cup shortening 2 cups flour
1 cup sugar 2 tsp. baking soda
1/4 cup molasses 1 tsp. cinnamon
1 egg 1/2 tsp. each: salt, ground ginger
and ground cloves

Stir dry into creamed mixture. Roll into balls. Roll in granulated sugar and place 2 inches apart on greased cookie sheet. Bake at 875 degrees for 8 -10 minutes.
Flatten the balls to 1/4 -3/8 inch with a glass dipped in sugar. Bake. They will puff up during baking. Cool for 5 minutes before removing from the cookie sheet to absorbent paper. Let cool completely. Store in a tin for soft chewy cookies or a paper sack for crisp cookies. They usually don't last long enough to worry about storage.

Lord Eshteross’ Maple Ginger Cookies with Tumeric

Recipe
3 cups flour
2 tsp baking soda
2 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground turmeric
1/4 tsp kosher salt
3/4 cup unsalted butter room temperature
1 1/4 cup light brown sugar
1 large egg room temperature
1/3 cup maple syrup
1/2 cup turbinado sugar*
Combine the dry ingredients (flour, baking soda, cinnamon, ginger, turmeric, and salt) in a bowl. Cream together butter and brown sugar until fluffy and then mix in the egg and maple syrup. Mix the dry ingredient into the wet ingredients until uniform. Rest a minimum of 2 hrs or overnight. Roll balls if dough (about 2 tbsp large) in turbinado sugar and space about 3″ apart on the baking tray. Bake in a 350F oven for approximately 13-14 min.
*I didn’t have turbinado sugar, I used regular granulated sugar.
*It felt too soft and I left it in for a little longer, but then it became really hard. Should have took it out earlier.
*Very similar to the Crackle Top Molasses Cookies, which is softer and I like better. See recipe here.

Celebrate the national gingerbread cookie day!
Do you know the compounds behind the pungency of ginger and how they change when you bake gingerbread? The pungency of fresh ginger comes from gingerol, which activates heat receptors on the tongue, while zingiberene also contributes to the flavor. When making gingerbread, break down gingerols into the compound zingerone. Zingerone is less pungent, and a significant contributor to ginger's flavour.
