I’ve been experimenting using red quinoa lately, making it an addition to many creations. I added layers of this beautiful grain to polenta lasagna along with shredded carrots, tender Swiss chard and assorted mushrooms. On top of all these delicious ingredients is a generous amount of assorted cheese. When the cheese browns, it adds another dimension of flavor.
