Visited BonBon-Land for my friendās birthday because thatās where she wanted to go. The tickets were a little expensive imo, but overall I think it was an enjoyable trip. I got to hang out with people who I hadnāt spoken to in a while. Also, Iām realizing that I donāt enjoy amusement parks the same way as I did when I was a child. When going on rides I get dizzy easily and the motion sickness factor is much more sensitive now as an adult.
Either way, we drove to restaurant Watami afterwards to get dinner. Surprisingly, the food appeared to much better in comparison to what I remembered from last time I was there. But I also didnāt order any raw salmon sushi this time and mostly got vegetarian dishes. Overall, it was a nice sunny day, though the animal at BonBon-Land were kind of creepy. They remind me of the mascots in Five Nights at Freddyās.

Wednesday: June 11, 2025
Had some busy days volunteering at Presidents Summit 2025 in Copenhagen. It was cool listening to presentations of experts from different fields and industries. I helped out with catering of the food and got to walk around a lot those two days the event was held. Honestly, I think it was really good for my mental and physical health to try something new and meet new people. Iāve been volunteering before at other events, but it had been years since.
At the end, there was an after party for the volunteers only, and pizza was served. I left early though to go see my boyfriend as he lives nearby. It was nice getting to talk to the other volunteers. There were some great teamwork in my team, and they all made it enjoyable for me to be there. It was cool.

Iām visiting Malmƶ a lot lately. Today, I went with my friends to hang out in the city and check out some shops. For lunch, we had tacos at Dirty Taco. š® Their concept were quite unique as they offered a combination of Mexican and Korean food. I can definitely recommend their Sticky Chicken Tacos and their Nachos.
As snack, Iād brought some muffins that Iād baked the day before with some leftover rhubarbs. I was glad that they turned out fluffy and spongy, and my friends enjoyed them too.
After walking around for a while, it started to rain a little, so we took a break at a boardgame cafƩ to play Pandemic. Here, my friends ordered some chai latte which I got a sip of. It was delicious! As dinner time arrived, I was craving some good pomodoro pasta, so we went to an Italian restaurant called Da Zio Central. The food was great.

Monday: May 26, 2025
Itās been about two weeks since I ran out of conditioner, so I decided to go buy some. I wanted to try a new (luxury) brand so I went for Zenz. It was a bit pricey, ngl, but I rather spend money on a good conditioner than shampoo. š
Also, the brand is supposed to be clean in terms of ingredients. I tried the Zenz hair treatment product once many years ago, and I did really like it. For me, itās a plus that a lot of their products donāt contain perfume.
I also got a heat spray from Maria Nila to provide some extra protection for my hair during the Summer months. Itās actually supposed to be applied before straightening or curling your hair, but Summers here in Denmark can get quite brutal. And if I do feel like adding some fresh scent, I can just spray a bit of this in my hair.
I also tried a waffle recipe using a new 3-in-1 toast machine that Iād bought. After hearing about the harms of PFAS, I spent all last week replacing a lot of my familyās cookware. Waffles turned out great, but I think I need to try it out a few times more before sharing a full recipe!

Friday: May 23, 2025
Attended a concert with Hugorm in Tivoli. Iāve never heard of the band, but my friend invited me to go, so I thought why not. I almost didnāt go because the weather had been weird all day ā itād been hailing and raining. Decided to go anyway, and it was a blast, which I didnāt really expect! Although, my friendās mom had been really hyped about seeing Hugorm, lol.

Been wanting to learn how to knit lately, so I bought some different types of yarn to practice with. For that Iām just going to use some of my momās knitting tools, although, I might go buy my own later as she doesnāt have everything required for knitting a sweater. Also, got a bubble tea from Saigon 45 in RĆødovre Centrum. Even though I want to try new flavors, I always end up ordering Blue Sky.

Visited Davidās Collection in Copenhagen. Admission was free, and the museum was bigger than Iād anticipated. It was nice. Then, I went to get fresh smoothie and pasta at Torvehallerne. Fresh Market smoothies are to die for, and they may become a Summer favourite of mine. š¤©

Recipe: Rhubarb Crumble Cake
Duration: 45 min | Size: 3 portions | Difficulty: ā

My friend served this rhubarb crumble cake during a gathering, and it was so delicious, I had to ask her to share the recipe! I was surprised by how easy it was to make and how few ingredients are actually needed. Since then, Iāve been obsessed and made it three times in the span of just one month, lol. The original recipe can be found here in Danish. My modified version of this recipe is that I halved the ingredients as I used a smaller baking form. I also used wheat flour instead of oat flour.
Ingredients
Rhubarb:
Rhubarb (250-300 g)
Sugar (60 g)
Vanilla sugar (0.5 tablespoons)
Potato flour (1 tablespoon)
Crumble:
Flour (75 g)
Sugar (60 g)
Butter (60 g)
Topping & Extra:
Almonds (25 g)
Sour cream
Steps
Rinse and cut the rhubarbs into smaller cubes (about 1x1 cm). Also, remember to only use the stems of the rhubarbs, not the leaves as they are poisonous to ingest!
In a bowl, mix the rhubarb with the sugar, vanilla sugar and potato flour. Put it in the fridge and let it sit for at least 30 min or ideally overnight for the sugar to dissolve into the rhubarb.
Before pouring the rhubarb into the baking form (about 24x16 cm), make the crumble by melting the butter and mixing it together with flour and sugar until it has become a dough.
In a buttered baking form, pour the rhubarb and spread it out evenly. Crumble the dough on top, and then add crushed almonds on top.
In a pre-heated oven, bake the rhubarb dessert at 200°C for 20-25 min. (Itās ready if you see the rhubarb bubbling up on the sides of the baking form).
When done, take out the rhubarb crumble cake and let it cool for about 3 min. Serve the dessert with a healthy dollop of sour cream. Leftovers, can be stored in the fridge for about one week ā itāll become more solid, but tastes just as amazing, if not better!

Had a get-together dinner at a friendās place. She cooked us middle-eastern-inspired food. It was scrumptious. Another friend had brought churros dessert from her workplace. I was extremely full afterwards, but I just couldnāt stop eating!

Update: I didnāt get the job. Iām fine with it honestly since I was kind of worried if I could stand the heavy perfume scent in their shops for hours at a time. š®āšØ I also donāt really use their products anyway, because they contain chemicals that are suspected to cause hormonal disruptions. Though, Iād have lied for the money since I do need a job. Also, Iām not a big fan of heavy fragance in general.
As for the products I received, Iām giving it away to a friend who know loves their products.

I had been invited to attend a Rituals Recruitment Event as Iād been applying for a part time summer job in their shops. It was an interesting, if not, fun experience. Part of it included case assignments in groups, and I somehow prefer this format much more over the usual 1-to-1 job interviews which can be quite daunting in my opinion.
At the end, everyone who had attended got a free goodie bag ā I suppose they still wanted to thank people for their time, no matter if they get hired or not, which is a nice gesture. Overall, I had an okay impression of Rituals as a company, but as with anything related to capitalism, their focus seemed to be on selling.

Thursday: April 8, 2025
To celebrate the 99th birthday of David Attenborough, they played the film Ocean in Grand Teatret in Copenhagen which I watched with my friends. The focus of the documentary was on the vast destruction caused by bottom trawling. It was kind of upsetting to witness as they destroyed beautiful underwater communities in literally minutes.
So, now, in the UN Ocean Conference 2025, theyāre going to push to ban fishing and trawling from 1/3 of the ocean to help it recover. I always knew bottom trawling was bad, but watching the documentary was shocking, and I generally love the work of David Attenborough. Because of this movie, Iām now interested in following the development of this yearās ocean conference.
āThe ocean is fundamental to life on our planet and to our future. The ocean is an important source of the planetās biodiversity and plays a vital role in the climate system and water cycle. The ocean provides a range of ecosystem services, supplies us with oxygen to breathe, contributes to food security, nutrition and decent jobs and livelihoods, acts as a sink and reservoir of greenhouse gases and protects biodiversity, provides a means for maritime transportation, including for global trade, forms an important part of our natural and cultural heritage and plays an essential role in sustainable development, a sustainable ocean-based economy and poverty eradication." - Political Declaration of the 2022 United Nations Ocean Conference
Anyway, before the movies, we went to Pizzeria Luca, and I got to wear my cool cat sweater from Etsy. I waited 2.5 months on it to arrive! It was so hot wearing it because itās a Winter sweater, lol, but I was eager to wear it, so I had to do it once before putting it back into my closet. Now, Iāll have to wait for the weather to get colder again to pull it out.

Recipe: Hokkaido Pumpkin Soup š

If youāre like me, and you love pumpkin and soups, I definitely recommend you to try out this recipe! The flavours are simply amazing, and itās one of my to-go comfort foods as it always makes me feel warm and cozy inside, especially during the winter months. This soup is also rich in fibres and other healthy nutrients. For vegan option, you can just skip the sour cream topping. Itāll taste amazing regardless!
Ingredients
Soup:
Hokkaido pumpkin (1)
Potatoes (2-3 medium-sized)
Red bell pepper (1/2)
Carrots (2-3 medium-sized)
Onions (2 medium-sized)
Garlic (3-4 fat cloves)
Vegetable boullion (1 cube)
Olive oil
Salt and pepper
Topping & Extra:
Sour cream
Pumpkin seeds
Fresh herbs (e.g. basil, parsley)
Garlic bread
Steps
Wash and cut open the hokkaido pumpkin and scoop its insides out with a spoon. Cut the pumpkin into thinner boats (about 12-20 pieces).
Wash, peel and cut the remaining vegetables in half or 1/4. The garlic can be left whole.
Place the pumpkin and all the vegetables on a baking tray. Brush over the vegetables with a mix of olive oil, salt and pepper.
Bake the pumpkin and the vegetables in the oven at 200°C for about 20-30 min until theyāve become soft.
Once the pumpkin and vegetables are done, take them out and let them cool off for about 3 min. In the meanwhile, you can prepare the vegetable broth by dissolving the bouillon cube in 500 mL boiled water.
Blend the pumpkin (with its skin) and vegetables together with the vegetable broth until itās become smooth ā do it in several batches if necessary. Pour the soup into a pot and let it warm for about 10 min. Remember to stir.
Garnish the portions with sour cream, pumpkin seeds, fresh herbs, or simply leave as is. Serve the soup with some garlic bread. Enjoy!

Saturday: April 26, 2025 (Part II)
Here is the promised second part on my visit to Malmƶ. So, after visiting Moderna Museet, me and my cousin went to Galleri Gustus as it was only a walking distance away.š¶š»āāļøGalleri Gustus sells ceramics and glass sculptures. They had some really cute ceramics with silly-looking animals and other interesting, well, art concepts. I didnāt buy anything as it was expensive,
Right next to the gallery was Form/Design Center, and here they had an exhibition called āSense of Soilā. It was about encouraging people to explore soil and its properties. š± They had some interactive displays about soil, including one where you could scoop up soil with a shovel and add it into a frame, and thus, take part in creating an artpiece made of soil with other visitors. I added some yellow flakes on top to the very left, and my cousin picked a green colour to go on top (middle photos). Both Galleri Gustus and Form/Design Center were free.
Then, it was time for a food break! Here, we decided to order pokebowl at Poke Poke. I thought it was pretty good as the ingredients were fresh and well-prepared. After, we headed towards Malmƶ Konsthall (free entrance btw), š¼ļø and we only had 30 min left to check it out until closing time. They swap out their exhibitions several times a year, and I donāt even remember who was featured, lol. The exhibition didnāt speak go me whatsoever. However, they had an activity, where if you filled out a sheet with drawings, you could get a free prize. I got some temporary tattoos which was pretty neat!
After a long day outside, I went to visit cousinās home to say hi to my other cousin (they are brothers, and heād decided to stay home and relax rather than hang out with us in the city). Anyway, we talked about nerd stuff and what weād done all day over some tea and snacks. It was pretty peaceful at their house since they live in nowhere, so traffic and noise were minimal. Late evening, I headed back home to Copenhagen again.

Saturday: April 26, 2025 (Part I)
Since I had to hand back the digital camera to my cousin in Malmƶ, we had simultaneously agreed to hang out and visit art museums that day. For me, it was a nice escape from the usual scenery in Copenhagen as the environment in Malmƶ is much more relaxed and less crowded. šøšŖ But because I experienced so much, Iām going divide my visit to Malmƶ into a two-part post ā I want to share the photos I took in the three art museums that I visited!
First, we went to Moderna Museet which is a museum that features contemporary art only. š¼ļø They change out their exhibitions quite frequently, and currently they are showcasing Vivian Suter āI Am Godzilaā and Kiki Smithās āWoven Worldsā. I really enjoyed the Woven Worlds exhibition as Kikiās art had so much personality. Each of her tapestries were interesting and unique (bottom photos). There were tapestries depicting people as well, but Iām just showing those with animals on as I liked them the best. I also think the art of Vivian Suter was interesting, but it was all displayed in one room only (top photo). I was surprised to learn about her old age.
As for the interior, everything including the toilets were really colourful. Being at Moderna Museet was a positive experience. Plus, naming the lockers after famous artists instead of numbers was a fun detail š» ā there were even quotes behind the lockers! Entrance to Moderna was extremely effortable as it only cost 50 SEK (4.5 euros) for adults. I definitely wouldnāt mind going there again to see some of their other exhibitions!

Recipe: Healthy Green Burrito šÆ

If I have the energy for it, this meal is one of my favourites to make. For a beginner, these burritos might be considered a bit labour intensive, but theyāre super delicious, especially after a good workout session. They contain all the healthy nutrients youād need to restitute, including greens, proteins and fats. The pesto and the lime mayo dressing are the stars in this recipe and should not be forgone. Trust me, all the cutting of the vegetables will be worth every single bite! To make the pesto, youāll be needing a food processor or blender.
Ingredients
Chicken & Pesto:
Chicken breast (300 g)
Coriander (20 g)
Garlic (2-3 fat cloves, chopped)
Cumin (1 teaspoon)
Olive oil (60-80 ml)
Salt and pepper
Salad:
Avocado (1)
Cucumber (2-3 thick slices)
Bell pepper (1/2)
Mixed kale, chopped
Lime Mayo:
Mayonnaise (3-4 tablespoons)
Lime (1-2, depending on how sour you want it)
Tortillas
Steps
For the pesto, chop the garlic and pluck the leaves off the coriander. Blend both with the olive oil and cumin.
Cut the chicken breast into bite-sized pieces and season with salt and pepper. Place them in an unheated pan, and mix the pesto into the chicken. Let it sit to marinate a little before turning on the stove.
While waiting for the chicken breasts to marinate, make the salad by cutting up the avocado, cucumber and bell pepper. Mix it all into a bowl and add some kale. (Remember to wash the knife and cutting board first if you used them for the chicken).
Now, turn on the heat and cook the chicken until theyāve turned fully white and are cooked through.
For the lime mayo dressing, grate lime zest into the mayo in a small bowl and squeeze lime juice into it. Mix well with a spoon until itās become liquidy.
Now, that all the components are ready, warm the tortilla for 30 sec in the microwave or in the oven or in a clean pan on low heat. Place the tortilla flat on a plate.
Start assembling the burrito by spreading the lime mayo dressing onto the tortilla. In the middle of the tortilla, put the chicken and salad (careful with putting on too much, or closing the tortilla might become difficult). Add some more dressing on top. Now, fold in the sides of the tortila and its bottom up into a burrito. Enjoy!
