Exercise by Bike Found an awesome deal on a bike seat at Walmart last week. Got a front mount seat for $13. We got this thing mounted and took a nice bike ride with the family today. I have to say Chloe loved it, especially going down hills, laughed the whole way. Although she fell asleep towards the end. All I see is her little head bobbing up and down, so I took off my jacket sleeves and tired them around her helmet so her little head was resting on my chest. Mother's resourcefulness!

Almost there! I'm probably more excited than Rach, we are so close to being finished with school work and I really need a break. It has been unusually stressful trying to help a first grader, a tenth grader, and trying to keep a 1 yr old occupied and happy. I really just want to make my daughter to finish all her work in a week, so I can be done. I am really hoping next year becomes easier as the little one gets older. On a slightly more upbeat note, I made eggs with, red bell pepper, asparagus and mushrooms chopped very small and Chloe ate all of it! I am so happy I started trying new ways to get my picky eaters to consume vegetables. It doesn't work every time but the wins are huge for me. Also, I have been getting a lot more walking in our lives. Although, that last hike has my legs still aching but it didn't stop me from walking 1hr with Chloe in the stroller while the other two were in karate class. Here's to keeping the movement up and finding more creativity in meals!

Fallen off the healthy train
This weekend was harsh! Celebrating Birthdays, Mother's Day with cookouts and cakes and dessert. I can honestly say I did not choose healthy and I went a few days with no crunches or leg lifts, that is the con's of my weekend, the pro's would be, I did get a lot of walking in with the family. I weighed myself this morning and I weighed exactly 200. My first goal for myself is to get under that mark. So I'm close and I know I don't want to put too much emphasis on my weight because of fluctuations, but that felt good! Heres to getting back into the workout groove and working in those veggies.

I understand what your going through. Rach (doesn't have a filter on mouth yet) likes to tell everyone, by everyone I mean, doctors, dentist, and random people, of the time "mommy got stuck in the tub!" I was in so much discomfort when I was pregnant, I thought it would be nice to take a nice warm bath. I do not recommend this to anyone 8 months pregnant and as big as the tub. I did get stuck, had to have my poor little 14 yr old help pull me out. It was a situation where minutes literally felt like hours, not to mention the damaged I probably did to my oldest daughter.
This heating pad is nowhere near the heat levels I require to soothe my back 😒

Chicken Spinach and more... Made a chicken, spinach, mushroom, orange bell pepper and what I think brought it all together nicely feta/goat cheese crumbles. This is so fabulous. Had to make a Hawaiian pizza for the itty bitties also.

Can Pizza be Diet Food?
I skipped my two exercises today but I knew I'd be walking Chloe in the stroller while the older sister were in karate class . I walked for about an hour and plan on more tonight. I figure my pizza isn't going to be super healthy when I'm done with it. I have chicken, spinach, asparagus and I'm not sure if I can successfully work that into a Hawaiian pizza (kids choice), but I do love Hawaiian pizza! So I'll give it my best shot, might do half and half. Working hard to figure out creative ways of getting more vegetables in all our diets. That's very hard when they don't touch them if they look like a vegetable. I'll let you know how it goes and if its really awesome I'll post a recipe/picture.

I love my middle child, Rach, for her very candid talk. She also knows how to hurt with that candid talk. She's not meaning to yet, she's only 7. I'll be the first to admit I have not taken good care of myself. I am at least 50 pounds overweight. My hairstyle is quick and easy ponytail, no fuss. I don't dye my hair because we don't have the funds for frivolous things. The only thing I buy new for myself are shoes, when my other shoes wear out. With birthdays coming up, mine included, Rach starts asking about age. She asked how old is her Aunt, whom just celebrated her 47 birthday. Then she asked how old I am, so I told her I will be 45 next month. Her observance to details pointed out that I look much older than her Aunt! Depressed to say the least. But here's to the hard work of getting myself back into healthy weight goals.

Holy Splinter Batman, Let's split
Breakfast with Vegetables-✔ Exercise-✔ Homeschool day complete-✔ High Speed Walking- ✔ This last check is where my day got interesting. Our school day was almost done and I had a brilliant idea to take a local history/art walk for a little exercise and fun. We were about 45 minutes from home, got a few archetecture pictures taken when my very dramatic middle child decided she would show us a very smooth tree( telephone pole). She did so by running her hand down the pole. Keep in mind, she doesn't just cry if she gets a splinter, she screams like the entire telephone pole split and impaled her a bazillion (sorry, I hear that number a lot around little ones) times. So here I am in the middle of downtown, scrunched down in front of this child screaming a death call, trying to get two splinters from her finger. I managed to get one but we had to wait for the second one until we got home. Did I mention 45 long minutes from home...... Screaming the entire way. High Speed Walk ✔

On Track
Good morning! So far, so good, keeping with the exercise ( all two of them). Although I found some Cookie Butter on sale at Meijer last night for $1 and couldn’t pass up the great deal, I will force moderation, a treat spoonful, a little dab will do. Welcome to my life! For a one income family of 5, I can’t pass up good deals. As I’m trying to improve eating habits for myself and my children, I notice how much more expensive fresh and healthy food is compared to the sweets. I’m going to have to get creative to make this happen. To be continued….

I just made this and it was such a hit with my daughters.
Coconut Cake using white beans, no flour.
1 can of white beans- I used great northern. 3 eggs 2 tsp vanilla extract 1 tsp almond extract ¼ c coconut oil 1 c sugar 2 ½ tsp baking powder 1 c coconut In a food processor Blend beans until smooth Add eggs, blend until incorporated Add all other ingredients blend again. Pour into lightly greased pan (I used 8×8) Bake at 350° for 30 minutes

For some reason last night, while trying to sleep, I thought about this wonderful piece of artwork. This beautiful building and it’s life. Beautiful on the outside but decaying on the inside. It was closed down in 1990! That is the short amount of time it took to rust, shed and fall apart because it was not being taken care of from the inside. Then it came to me how this building is much like our body, if we take care of it from the inside, it should remain healthy and strong for years to come. Unfortunately, I stopped maintaining my “building” and it started bulging from the inside out. I realized I need a complete reconstruction. I need to work on the interior design and exterior foundation. Create a legacy that will be passed on to my three awesome children.
