I've been gone for a while. In that time I've gone 99% veggie (only exception is game meat hunted and processed by people I know) and have been traveling around from job to job. Here is venison stuffed pepper from south carolina when I was working as an environmental educator.

My last meal in my current apartment. And the last time I'll be cooking for myself for 2 months, as I'm going away for a bit. Using up the fridge extras to throw together a chorizo veggie hash topped with fried eggs. I usually avoid breakfast but I figured I'd treat myself today :)

Don't knock it til you try it. Fish burgers are cheap, full of nutrients and surprisingly delicious! Homemade oven fries don't hurt either.

Moving time is coming.
As I graduate college, I realized that I need to start clearing out the nonperishables I've horded over the past 3 years. These next few weeks are going to be using less fresh, and more canned, and dry ingredients as I'm only allowing 1 small trip to the store. Hopefully I can help you begin to see "budget" ingredients in a different light! Let challenge mode begin!
