Chicken and Sausage Jambalaya recipe from Budget Dinners Good Housekeeping Cookbook. I've made this dish at least 3 times for my family :) Try it for yourself!
Ingredients:
8 ounce(s) kielbasa (smoked Polish sausage) or hot smoked sausage links, thinly sliced
3 teaspoon(s) vegetable oil
2 pound(s) skinless, boneless chicken thighs
6 clove(s) garlic, crushed with press
3 large celery stalks, sliced
2 medium green and/or yellow peppers, cut into 1/2-inch pieces
2 medium onions, chopped
3 cup(s) (long-grain ) white rice
1 teaspoon(s) paprika
3/4 teaspoon(s) dried oregano
1/2 teaspoon(s) dried thyme
1 teaspoon(s) salt
1 3/4 cup(s) (one 14 1/2-ounce can) chicken broth
1 can(s) (14 1/2 ounces) diced tomatoes
1 cup(s) water
1/2 teaspoon(s) hot pepper sauce
Directions
In deep 12-inch skillet with oven-safe handle and lid (or with handle and lid handle wrapped in double thickness of foil for baking in oven later), cook kielbasa over medium-high heat 2 to 3 minutes or until browned, stirring occasionally. With slotted spoon, transfer kielbasa to medium bowl.
Add 2 teaspoons oil to drippings in skillet, then add chicken, in 3 batches, and cook 5 minutes per batch or until browned, turning over once. Transfer chicken to bowl with kielbasa. Preheat oven to 425 degrees F.
Reduce heat to medium. Add remaining 1 teaspoon oil to skillet. Stir in garlic, celery, peppers, and onions; cover and cook 12 to 15 minutes or until vegetables are tender, stirring occasionally. Add rice, paprika, oregano, thyme, and salt, and cook 1 minute, stirring.
Return chicken with its juices and kielbasa to skillet. Add broth, tomatoes with their juice, water, and hot pepper sauce; heat to boiling over high heat.
Place skillet in oven and bake jambalaya, uncovered, 15 minutes. Remove skillet from oven and stir mixture. Cover and bake 10 minutes longer or until rice is tender. Remove skillet from oven; let stand, covered, 10 minutes. Spoon jambalaya onto dinner plates or spoon desired amount into freezer-safe containers.

5 ingredients stir-fry:
Large yellow onion
Ground Beef
Baby Bok Choy
Egg Noodles
Stir-Fry Sauce
1. Fry chopped onion until golden;
2. Add ground beef. Cook until browned;
3. Add stir-fry sauce to taste. Simmer for 5 min.;
4. Add baby Bok Choy and simmer for another 10 min;
5. Mix in cooked Egg Noodles.
Sprinkle with some fresh chopped green onion and serve!

Strawberry vinaigrette recipe (makes 3 servings):
4 tbsp olive oil
1.5 tbsp strawberry jam
1 tsp chopped fresh basil
2 tbsp white wine vinegar
3/4 tsp dijon mustard
Fresh ground pepper to taste

Looking for something new to try? Ohn No Kwyaswe - Authentic Burmese recipe for coconut noodles passed on to me by my Mother-in-Law. This is my first attempt in cooking Burmese dish and according to my husband it tastes very authentic!
Try to make it yourself!
1. In a large pan on MED heat add 1 tbsp oil, fry 1 chopped red onion, 4 chopped garlic cloves and 5 tbsp grated ginger for 2-3 min.
2. Add 2 chicken breasts cut in small peaces, simmer until cooked.
3. Add hot water, enough just to cover the chicken. Boil for 2-3 min.
4. In a separate bowl mix 2 tbsp chickpea powder (there's no substitutions..) with 1/3 cup cold water. Add it to chicken.
5. Add 1 tsp smoked paprika and 1/2 tsp chili powder. Boil for 2-3 min.
6 Add 1 (560 ml) 20 fl oz can coconut milk. Boil for 2-3 min.
7. Add 1tbsp fish sauce (add more to taste). Boil for 2-3 min.
8. At this step you can add more ginger if you like.
9. Time to add our instant egg noodles. I used 3 single servings of Diamond Brand instant noodles I picked up at Save On Foods. You can use any brand, as long as noodles are thick. Simmer for 3 min. Done!
10. Garnish with fresh chopped shallots or red onion and boiled egg and it's ready to be served!
You can also add cooked fishcakes and prawns (optional) at step #9.

Check this out! Asian Cold Noodle Salad is a great lunch/dinner idea for a hot summer day!
4 table spoons of oil (canola preferred)
1 red onion diced
1/2 red onion finely sliced
2 tsp of chili flakes
1 tsp of salt
1 tsp of pepper
Fettuccini noodles (or any noodles you want)
1 tbsp of lime juice
3 cloves of garlic finely minced
4 boiled eggs
handful of chopped cilantro
1 tbsp of fish sauce
1/2 tbsp of soy sauce
1/2 cup of ground peanuts
1 tsp of tamarind sauce (optional)
1. Heat the oil with the diced onions
2. add the garlic when the onions are golden brown and crispy
3. add the boiled Fetuccini noodles to the sauce (you can remove the friend onions, but I prefer to keep them in)
4. add the chili, ground peanuts, soy sauce, fish sauce, lime juice, salt and pepper, tamarind and the 1/2 finely sliced onion and mix thoroughly by hand
5. serve with the eggs on the side (slice them first) and cilantro

I had some friend over, so I've made a Sponge cake with whipped cream and fresh strawberries #yumm 😋 it's #queenvictoria 'a favourite cake as I learned from the Interner :) to make your own, follow this easy steps: whisk 1 cup of sugar and 1/2 cup melted butter together, mix in 6 eggs, blend in 1 cup flour and 1 tsp baking powder, cook in a greased pan at 400F for 20 min. Lemon-Thyme-Honey chicken drum sticks recipe inspired by Gordon Ramsey
Instructions:
•In a large frying pan heat up 2 tbsp olive oil
•add chicken drumsticks (8-10 pcs), fry until browned
•put 2.5 tbsp of white vinegar and equal amount o soy sauce
•stir chicken to coat
•put in 1 tbsp of lemon zest, 5 thin slices of lemon, and 2 tbsp of lemon juice
•sprinkle fresh thyme and put 4-5 springs as well
•stir chicken to coat
•add 1/2 cup of water or chicken stock and let it reduce on med heat for 10 min
• add 3 tbsp of honey
•stir it and let reduce for another 10 min or until the mixture is thick
DONE!
Serve with parley (optional) over rice.

Penne with Ricotta & Mushrooms
In a large frying pan on a MED heat olive oil, add garlic (6 chopped cloves), cook for 1 min, add 1 tsp chopped rosemary, fry until fragrant, add 500g mixed sliced mushrooms, brown them ( about 3 min) season with fresh black pepper, add chopped green onion ( a bunch) cook for another 2 min, then add 1 cup of water in which you cooked pasta, simmer for 10 min. Add cooked penne noodles ( 1 package 450 g), stir in ricotta cheese ( 1 package 475g) and chopped parsley ( to taste). Cook until warmed through. Sprinkle Parmesan cheese before serving

Mmmmmmm.. Lasagne (slow cooker version, but if you don’t have one, you can still use it, just use large 12”x18”x 3” baking dish and cook it in the centre of the oven oven at 350F for 1 hour or until lasagna is bubbling in the middle and topping is browned :) recipe follows :)
This recipe yields 10 servings!
Ingredients :
1 pound lean ground beef
1 onion, chopped
2 teaspoons minced garlic
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 (about 10 sheets) package lasagna noodles
1/2 cup finely chopped spinach
12-15 ounces package of ricotta cheese
1/4 cup grated Parmesan cheese
2 cups shredded mozzarella cheese
Directions:
In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well incorporated. Cook until heated through. In a large bowl mix together the ricotta cheese, spinach, grated Parmesan cheese and shredded mozzarella cheese. Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used. Cover, and cook on LOW setting for 4 to 6 hours.

My to-go Pork Roast recipe borrowed from "The Can't Cook Book" by Jessica Seinfeld :) It was the recipe that started everything!
Rub pork roast ( mine was 2 lbs) with a mix of 1 tbsp olive oil, fresh ground pepper, salt (enough to cover the roast) 3 crushed garlic cloves and about 7 springs of thyme. In a baking dish add 1 quartered red onion and 2 quartered pink lady apples (cores removed), drizzle with 1 tbsp olive oil, some salt and pepper and them mix until they all covered. Put pork roast with the fatty side on top!( fat will melt nicely and makes meat tender and juicy)in the centre of the baking dish and bake for 50-60 min at 400F.
