Vegan apricot and blueberry crumble, perfect with a dollop of coconut yoghurt/cream 😋😋 For the crumble mixture I used 1 cup rolled oats, ½ cup almonds, 1 cup oat flour (or other flour of choice), 5 tbsp blackstrap molasses/maple syrup, 85g vegan butter (olivani) ¼ tsp salt and the zest of 1 lemon. Also soaked the fruit in lemon juice and maple syrup before baking in the oven at 200 C for 40 minutes :)
