It’s a mindset with which we have grown up and it’s a mindset that is difficult to change. However, eating anything knowing that it's bad for your health is not really the right thing to do. The point of food is to enjoy it, cherish every bite and not feel guilty about it. When you eat the pizza or a burger be aware that it is doing you some good, it has certain valuable nutrients that will do good to your body. When you consume anything knowing its value, it certainly does you and your health good.
Give me any cheat meal and I can convert it into a perfectly healthy meal without altering the taste drastically. It’s not tough it’s only a few very easy food replacements. Let’s call it a food swipe. Hell, even the FMCG giants now are very well aware of the change in demographic preferences. For the taco shells: Roll out small flatbreads out of bajra / ragi dough. Gluten-free- check!
For the stuffing:
Soak red kidney beans overnight and boil them before your meal prep.
For the gravy, you need 3 tomatoes+ garlic+ ginger+ red chilli + Carrom seeds. Grind and cook in a pan. Add boiled kidney beans to this.
Chop a cabbage or lettuce very finely.
Stuff the taco shell with the kidney bean prep and top it up with the cabbage, a little mustard sauce. Yes, it’s as simple as that!

No, no, I'm not talking about the boring daliya that you whip up instantly. In this article, I'll share a few savory recipes using broken wheat daliya, which are a perfect match for your evening coffee/tea. And compliment your health goals.

DALIYA KABAB:
These patties are made with broken wheat and vegetables. They are so yummy, filling, and nutrient-dense.
 INGREDIENTS:
·      1/2 cup - Broken wheat /Daliya
·      3/4 cup - Mix vegetables chopped
·      2 cup - Potatoes( mashed)
·      3 tbsp - Coriander
·      1 tsp - Cumin Seeds
·      2 tsp - Red Chilli powder
·      1/2 tsp - Garam Masala Powder
·      1 tsp - Mango / Amchoor Powder
·      1 tsp - Chaat Masala
·      4 tbsp - Cooking Oil
·      1.5 cup - Water
INSTRUCTIONS:
1.    In a cooker, add oil cumin seeds and daliya
2.    Saute it till daliya turns golden brown and aromatic.
3.    Now, toss in chopped vegetables and add water
4.    Cook this on a medium-low flame until three whistles.
5.    Transfer the cooked daliya to a plate and let it cool.
6.    Add mashed potatoes, cilantro, and other spices to the daliya and mix well.
7.    Grease your palms with oil and make the mixture into patties
8.    Fry these patties on a non-stick pan with little to no oil.
Serve these with green chutney or ketchup.
 BROKEN WHEAT DOSA:
It is an amazing crepe recipe when you have a little regular dosa batter left or searching for a new taste.
 INGREDIENTS:
·      2 cups - regular dosa batter
·      1 cup - broken wheat
·      2 cups - water
·      1 - medium onion finely chopped
·      1 inch -   ginger
·      2 sprigs - curry leaves
·      2 teaspoon - cumin seeds
·      2  - dried red chilies
·      1 teaspoon - salt
·      Oil for cooking
INSTRUCTIONS:
1.    Soak the broken wheat for about 30 mins
2.    Now add everything to the soaked broken wheat and grind them with the soaked water.
3.    Now, add the regular dosa batter to the broken wheat mix and fold them together.
4.    Now make them into crepes as you do traditionally.
Serve these crispy broken wheat dosas with coconut chutney or peanut chutney.

Its a North African type pasta which i came across when i was living in Mauritius. I fell in love with this the first time i tried. It can be used in variety of ways. I made this like indian style mix veg upma with tomatoes. It can also be use in salads so it will be filling or like Pilaf/ Pulav. Recipe for 2: • 1 cup Couscous ( i have used the HT traders Moroccan style pasta from Harris Teeter @harristeeter ) • 1.5 cup water. Add 1/2 cup more water than your couscous qty. • 1/2 cup chopped onions • 1/2 cup chopped tomatoes • 2 green chillies slit ( use as per ur spice level) • 1/2 cup chopped mix veg ( carrots, french beans, peas etc) • 1/2 tsp cumin seeds • 2-3 curry leaves • 1 tbsp oil for tempering • Salt to taste • Chopped Cilantro / Coriander leaves Method: • Add oil in pan and let it warm. • Add cumin seeds, let it crackle. UMAMI MUSHROOM LASAGNA
Of all the Trendifresh dishes I've made this fall, this is the one I'm most proud of! It's got big, rich flavor on account of the layered umami notes in the mushroom sauce (red wine, soy sauce, etc.), but isn't as heavy as a traditional meat lasagna (because it's not made with red meat - or any meat at all!).
The recipe takes some elbow grease, but you can make it a day ahead (I did!) making it a great choice to impress at a dinner party, potluck, etc. In putting together the dish, I drew some inspiration from this Ina Garten vegetable lasagna recipe.
Also, adding protein is totally optional. I added some ground turkey and seitan (for the vegetarians) because I was serving it as a lunch dish, but it's just as delicious totally meat-free!
Finally, using fresh or fresh made pasta sheets (like I did!) is also totally optional but FUN! I made my pasta dough with half regular flour half durum wheat flour for some added healthiness (I always use Mark Bittman's How to Cook Everything recipe - 1 tsp salt, 2 cups of flour, 3 eggs, knead together until incorporated). If you've got a hand crank or a pasta attachment, it's super easy to make -- just roll your dough out to the SECOND lowest setting - don't go down to the first as the sheets will be too thin to hold up in the lasagna. Cut the pasta sheets to the length of the baking dish you're using. Blanch the sheets a few at a time (dunking in boiling water for a few seconds then pulling out with tongs and plunging into a bowl of ice water to stop the cooking process), and then run under cool tap water (to rinse off the excess starch) and pat them dry. There is some excellent color commentary on just how to do this here, including a recounting of Italian culinary icon Marcella Hazan's advice to rinse the noodles "like you're hand washing fine lingerie", squeezing gently before drying on paper towels.
Or, you can just use dry store-bought lasagna noodles, which should be just fine (thanks, Ina)! Just make sure to follow the instructions on the pack as to whether to pre-boil or soak them etc. Whatever pasta you use, it's best that it's not fully cooked through before you later it into the lasagna, as it will finish cooking and absorb the yummy sauce flavors as it does!

LASAGNA INGREDIENTS:
1 large zucchini, quartered into 1/8 slices 
1 large yellow summer squash, quartered into 1/8 slices 
About 10 oz lasagna noodles, dry or fresh (see commentary on this above!)
24 oz grated mozzarella
24 oz whole-milk ricotta
2 large eggs, lightly beaten
2 Tbsp dried basil
2 Tbsp dried oregano
1 cup grated Parmesan cheese, divided
Pepper and salt
Umami Mushroom Bolognese Sauce (follow the recipe in this article, from America's Test Kitchen and make it ahead if you wish!). To add protein, you can also add 16oz cooked ground turkey or seitan crumbles. Ingredients:
2 pounds cremini mushrooms, trimmed and quartered
1 carrot, peeled and chopped
1 small onion, chopped
1 (28-ounce) can whole peeled tomatoes
3 tablespoons unsalted butter
1/2 ounce dried porcini mushrooms, rinsed and minced
3 garlic cloves, minced
1 teaspoon sugar
2 tablespoons tomato paste
1 cup dry red wine
1/2 cup vegetable broth
1 tablespoon soy sauce
Salt and pepper
3 tablespoons heavy cream
INSTRUCTIONS
Make the umami mushroom Bolognese sauce first, or up to a day ahead of time.
Prepare the lasagna noodles based on the type of noodles you've chosen and set aside.  
Combine the ricotta, eggs, basil, oregano, 1/2 cup of the Parmesan, 1 1/2 teaspoons salt, and 3/4 teaspoon pepper in a bowl and mix until combined.
In a 9x13x2-inch baking dish: 
Evenly spread 1/4 of the Mushroom Bolognese sauce
Arrange a third of the cut zucchini & summer squash on top of the sauce and then sprinkle on 1/4 of the shredded mozzarella  
Lay on a layer of the noodles (completely covering the veggies & sauce - cut noodles to fit if needed)
Cover the noodles with a third of the ricotta mixture
Repeat two more times, starting with the Bolognese sauce.
Spread the last 1/4 of Bolognese on top and sprinkle with the remaining ½ cup of Parmesan.
Place the dish on a sheet pan lined with parchment paper and bake for 60 to 70 minutes, until the lasagna is browned and bubbly. Allow to rest for 10 minutes and serve hot. If you want the top to be extra brown & bubbly, you can run under the broiler for 3-5 minutes at the end, or do like I did and use a culinary torch to brown the top layer of cheese right before serving. :)
Make ahead note: you can assemble the lasagna completely and refrigerate for up to 1 day or freeze for up to 3 months before baking. If you freeze it, put it in the fridge the night before you plan to bake it to ensure it has time to defrost!
