Candied Almonds in Air Fryer
Satisfy your sweet tooth with this easy candied almonds air fryer or oven recipe. It turns ordinary nuts into a delightful snack.
Candied almonds (around here called brännti Mandle): Roasted too, but what makes them special is the warm and spicy sugar wrapping they get, spreading a cloud of cinnamon and caramel and everything good above every local fair. Since it is the first day of Autumn (in the North, where I live), I thought I'd share a recipe for candied almonds! These are heavily based off of the almonds made at the Larkspur Renaissance Festival, but I always thought it was odd to eat them during Summer. They seem much more like an autumn snack to me. These are really easy to make, and the recipe makes a lot because they will dissappear immediately whether you live with family or by yourself
Ingredients
♡ 1 cup sugar (I do a mixture of white and brown sugar, with about a tablespoon of brown sugar and the rest being white)
♡ 1/2 cup water
♡ 1 tsp vanilla extract
♡ 1 1/2 tsp cinnamon
♡ 1/4 tsp nutmeg
♡ 1/4 tsp allspice
♡ 4 cups almonds, lightly salted
Instructions
☆ Combine all ingredients except nuts in a saucepan which is large enough to stir things in. I used a wok and this worked well, so consider that if you have one
☆ Let boil for about five minutes (this should be a low boil), stirring often
☆ Add nuts to pan and coat completely, then take off the heat.

I've decided I want to share recipes for some holiday favorites of mine. I snack on candied almonds like my life depends on it. IT'S SO GOOD. It also makes for a nice Christmas present.
This recipe will require you to stir a whole lot, so get ready for an arm workout!
Instructions under cut.
Ingredients:
200g almonds
100g sugar
1 dl water
1 teaspoon vanilla sugar
1 tablespoon butter
1 tablespoon oil
If you want the almonds to be extra crunchy; put in 200°C oven for about 10 minutes.
Instructions • 40 mins
Add almonds, sugar, vanilla sugar and water to a wide pan with high walls (you can also use a wide pot but I prefer pan). Cook on medium heat. Stir constantly until sugar crystallizes.
Keep stirring until the sugar melts again and the almonds become shiny. Add butter and mix.
Lather a piece of parchment paper with oil, and pour the almonds over. Pull them apart with two forks so they're not touching (they'll harden and stick together), and let them cool. If you like the salt-sweet combo I recommend sprinkling flake salt on the almonds after you've spread them out.

I kept and washed some peanut butter jars so I could put candied almonds in them to give as a gift to my aunt and uncle!
I like reusing the parchment paper by wiping off the oil and cutting it into small squares that'll cover the top of my jars, then securing with a rubber band or string.
