Chefleclefs Vegan Gluten Free Gumbo enamored by Panfried Creamy Coconut Cornbread
Chefleclef's Vegan gluten free Gumbo enamored with garlic herb coconut cornbread Yield:serves 6 generously serves 7-8 conservatively alow 1.5hours of time to make intermediate recipe 12inch frying pan 5lt capacity 5lt pot  wooden stirring spoon Step 1.) veg stock ingredients 8cups of water 2 carrots peeled chopped 1/2 inch 2 onions 1/2 inch chop 5 celery stalks washed chopped 1/2 inch 3 bay leaves 1 tsp black peppercorns step 1a ingredients.)(remember save 2tbsp of this for your cornbread) 2 heads of garlic peeled and nibs off of each clove 1onion 6pieces of okra 1 small chile 2 sprigs of thyme stripped off branch step 1b ingredient.) One can of tomato paste(156ml) 2/3 cup olive oil step 1d ingredients.)    1/2cup of paprika 6tbsp dried oregano 6tbsp dried basil 6tbsp fennel seed ground 3tbsp chilli powder 2/3 cup corn flour step 2 ingredients.) 2 tbsp olive oil 2carrots peeled diced 1/2 inch 2 small white onions diced 1/2 inch 5 washed and deleafed stalks of celery diced 1/2 inch 1 zucchini diced 1/2 inch 2 green peppers seeded washed and chopped into 1/2 inch 1 head of garlic cloves skinned rough chopped 3pieces okra sliced into little wheels 1 head fennel cut fron off wash, and core  dice 1/2inch 4tbsp short grain raw rice preferably carnerolli or arborio sushi rice would work as well step 4 and 5 ingredients: celery salt and white pepper to taste (plain salt will suffice) lemon juice 1/4cup step 1.) Add vegetables and aromatics to water in a pot and simmer for 30min while starting step 1a.) step 1a.)take Garlic, Onion, chile, thyme  and okra  puree in a blender. set aside note (save 2tbsp of this for your cornbread) step 1b.)Med low heat add all the olive oil  and stir tomato paste in this until it gets nice and dark and has a crispy caramel colour to it roughly 15min-20.   step 1c.)add the puree from earlier, mix for 1 min Step 1d.) turn up to med heat and add all spice wait 30 sec, then add corn flour. mix constantly tell it resembles a dark brownish but not burnt malleable ball, that can easily be moved around the pan while still staying smooth and in ball form. (about 5-8min) take out of pan set aside. wipe pan and ready it for step 2 step 2.) take olive oil in 12inch frying pan med high heat add onions saute add rest of veg cook further 2min add rice step 3 turn heat down to medium reincorporate the ball of roux from step 1 into your sauteed vegetables mix tell everything has been disbursed evenly throughout.   step 4.)strain veg stock and add 5of the 7 cups  stir tell well mixed add the extra 2 cups depending on your preference of thickness simmer at low heat  for 25min so as the flavors meld and the rice cooks thoroughly. season with celery salt or plain salt at the end and white pepper to taste.  save the final cup to change consistency at the end (Note if you like it thicker cook it down to desired thickness if you like it thinner add that extra cup of stock.) step 5.) add 1/4cup of lemon juice serve on pan fried vegan cornbread find corn bread recipe below Pan fried Creamy coconut cornbread makes one 13x9 x1 inch slab you will need parchment paper  a 13x9x2 inch pan a 12 inch frying pan set oven too 350F
cooking time 20-25min 1cup of corn flour 1cup of corn meal 3tsp baking powder 3tbsp white sugar 2tbsp olive oil 2 tsp celery salt (if no celery salt use reg salt) 1 small can of coconut milk(400ml)                                                      1can cream of corn(398ml)                                                                  1/2cup of water 2 tbsp of onion puree saved aside from step 1a.)
1a.)mix dry ingredients in separate bowl 1b.)mix wet ingredients separately 1c.)make a pit in the dry ingredients and quickly mix wet ito dry tell a nice smooth batter is formed.   1d.)pour into a 13x9x2 pan lined with parchment paper that has been oiled or sprayed bake for 20-25min at 350F 1e.)let sit when done  for 10 min then flip onto cutting board remove pan and discard parchment get a frying pan with oil heated med heat 1f.)cut slab into how ever many squares you need for dinner 1g.) and give them a good pan fry med high heat on either side  tell crispy golden then place on plates or in pasta bowls and serve that delicious healthy gumbo on top.
Enjoy Folks! You can easily add meat to this recipe if you are the carnivorous type, but it would still be healthier then the good ol' buttery flour roux technique.

  My name is Geordie and have been a moderate fan of Star Trek my whole life, not extreme but somewhere in the middle. My Father and Step Mom live on the prairies and as part of My Wife's and my vacation we made the drive out for a visit.  While there I had a friend I had not seen in many-many years but lived in Lethbridge quite a distance from where my wife and I were staying. So when making plans to meet, I Google Earth-ed the area coordinating the meeting  with my bud, him and I both decided it would be best to meet halfway. So while scanning the map there it was Vulcan Alberta- It was just meant to be- We drove down one cloudy day.                                                                                                          I had a Star Trek Shirt that I had picked up off of Teefury "Death Before Dishonour" by Iambleach earlier in the year, and figured naturally it would be a great fit to wear that day (if we decided to take photos which of course we did)naturally.   Our meeting went well; when we got down there we had lunch and caught up as if we had just seen each other a week prior. It was a great time and really nostalgic, there is a saying "A life friend is someone you can be away from for some time and just pick up right where you left off with"  No that's no it:) (still quite early in my day and I am grasping at the exact wording of the saying but it goes along those lines).
The visit sadly came to an end and it was almost time to head back. But being from the coast, even the mild weather we experienced out there at the time was enough to keep us mostly inside the vehicle. Almost being enough to sway us from getting out and taking some pics of the site, harboring the infamous "U.S.S Enterprise." So the day that we were there most other tourists  I'm sure did get swayed to stay in the car,I say this because when we got there to the shrine it was like a ghost town. There was only one other couple at the Statue, of which the lady had freaking Vulcan ears on which was Awesome to see. Both couples exchanging words we took a shot of them and they reciprocated the gesture soon after we were alone finishing off our photo shoot in of the area “thathatha ca ca cold” Readying our need at a later date to run down memory lane. I had satisfied an urge and trip we had wanted to make for some time- it was just meant to happen. Now you’ve read this enjoy the pictures provided and stay tuned for the next blog.

Gah Trying to wrap head around Vector graphics
Been getting quite comfortable at "Gimp" over the past 1/2 year
and now have decided to learn Ink Scape  for its superior vector graphics.Its just not happening for me atleast right now. I find myself just staring at screen continuosly  drawing a few incoherent lines. Pausing, closing program and starting the process again ad again.-  Time to watch some tutorials.
This is going to be a long process.  In order to get good at this any time soon my  fear is I must cut "gimp" out cold turkey. so it will be awhile untill I can crank another design out thats good enough to present to the public.
Until than there is a sticker giveaway on my Facebook wall

Boston Terriers
Since deciding last week that if I were to get a dog, and just to fill you in a little.(I'm not much of a dog lover)  That if Iwere to get one, it would be a "Boston Terrier"  Since than it seems to be the only type of dog I have come in contact with and furthermore it appearsto be increasing in frequncy the times of contact. this week from my neighbour running into me the other day, too  some one on the street tonight, and both times the dog came to me paws up on me legs licking hands. They are so bumpin cool lookin dudes somwhere between a mini boxer and a pug now I just have to convince my Cat loving Wife I need another man in the house:) note this post is going directly onto my wifes facebook wall. Also I hear they are uber expensive its kind o crazy you can finance pets now but the word is on the street if you get a brown boston terrier they are 1/2 the price.
Regardless  I am now on a mission
To find my Boston Terrier "Vice Admiral Dewolf" where are ya boy

Sky Painted With Bacon
Sunday Feb 5th 2012 somewhere between sleep and punch in: roughly 4:45am pst Am on the 5 a.m breakfast shift this morning, aside from the spectacular blanket of stars still rolled out in the space above my head (on my early morning stroll). I was three blocks down wind of our Hotel.  Nostrils were filled with the insense of a bacon filled oven. A simple contentness filled my mind of its quickly awakening neurons.
