Lagniappe Living: Adding A Little Extra To Your Cajun Lifestyle
Tumblr media
Ah, my cher, gather 'round as we delve into the heart of Lagniappe Living, a cherished aspect of our Cajun lifestyle. In the tapestry of Cajun culture, lagniappe is the extra dash of spice, the unexpected warmth, the little something special that adds a touch of magic to our everyday lives.
The Essence of Lagniappe
In the bayou, our doors are always open, and our hearts even more so. Lagniappe living is the art of welcoming others with open arms, inviting them to share in the abundance of our homes and the richness of our stories.
Culinary Delights Picture a table groaning under the weight of a hearty gumbo, a pot of simmering jambalaya, and trays of beignets dusted with powdered sugar. Lagniappe living is about serving up not just a meal but a feast, ensuring that no one leaves our table without a satisfied heart and a full belly.
Dance of the Bayou As the zydeco music drifts through the air, lagniappe living is about infusing our days with the spontaneous joy of dance. Whether it's a lively two-step or a soulful waltz, every day is a chance to move to the rhythm of the bayou.
Stories by the Fire Under the Louisiana night sky, lagniappe living is about gathering by the fire, sharing tales of the bayou that have been passed down through generations. It's about preserving our history and creating bonds that withstand the test of time.
Festivals and Feasts In the heart of Cajun country, every season brings a reason to celebrate. Lagniappe living is about embracing the festivals and feasts that punctuate our calendar, reveling in the unique blend of music, food, and camaraderie that defines each occasion.
Embracing Lagniappe Every Day
Lagniappe living extends beyond celebrations; it's in the everyday acts of kindness. A warm smile, a helping hand, or a kind word - these are the lagniappe moments that make life richer.
Sharing Traditions Passing down our traditions is a cornerstone of lagniappe living. Whether it's teaching the secret to a roux or showing someone the steps to a traditional dance, we enrich each other's lives by sharing our cultural treasures.
Embracing Diversity In the melting pot of Louisiana, lagniappe living is about embracing the diversity that colors our community. It's about learning from each other, respecting differences, and finding unity in our shared love for this vibrant land.
So, my loves, as we embrace the spirit of lagniappe living, let's add that little extra to our Cajun lifestyle. Whether it's in the flavors of our meals, the warmth of our hospitality, or the joy in our celebrations, let lagniappe be the thread that weaves through the fabric of our Cajun lives. Laissez les bons temps rouler - let the good times roll with a little extra Cajun magic!
Sharing The Magic
In times of hardship, a warm meal can be a comforting embrace for the soul. Ther will always be someone who is ill, who lost a loved one, or who is depressed or struggling with something. Sometimes it's them, sometimes it's us, but it will all balance out in the quickest, easiest, most pleasant way possible if we keep our hearts open to each other.
Here's a menu idea for creating meals, crafted with love and the essence of Cajun comfort to bring solace to those in need:
Meal 1: Chicken and Sausage Gumbo A hearty bowl of chicken and sausage gumbo, filled with a roux-infused broth, succulent meats, and a medley of vegetables, to warm the heart and nourish the body.
Meal 2: Shrimp Étouffée Delight in the flavors of the bayou with a comforting shrimp étouffée. A rich and flavorful stew, served over rice, to bring a taste of Louisiana to the table.
Meal 3: Red Beans and Rice with Andouille Sausage A classic Cajun dish featuring red beans, Andouille sausage, and a medley of spices, served over rice for a heartwarming and filling meal.
Meal 4: Jambalaya Savor the essence of Cajun cuisine with a delightful jambalaya, a one-pot wonder filled with a mix of meats, aromatic vegetables, and perfectly seasoned rice.
Meal 5: Crawfish Macaroni and Cheese Indulge in the comforting embrace of crawfish macaroni and cheese, a decadent dish that marries the creaminess of cheese with the delicate flavors of crawfish.
Ingredients
8 ounces elbow macaroni
1 pound peeled crawfish tails (fresh or frozen)
1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
Salt and black pepper, to taste
Chopped fresh parsley, for garnish
(Optional) 1/4 cup breadcrumbs (for topping)
Instructions
Cook Macaroni Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
Prepare Crawfish If using frozen crawfish tails, thaw them according to the package instructions. If fresh, ensure they are cleaned and peeled.
Make Roux In a large pot, melt the butter over medium heat. Stir in the flour to create a roux, cooking for 2-3 minutes until it's golden brown.
Add Milk Gradually whisk in the whole milk, ensuring there are no lumps. Cook, stirring constantly, until the mixture thickens.
Melt Cheese Reduce the heat to low. Stir in the shredded cheddar and Monterey Jack cheeses until melted and smooth.
Season Add Cajun seasoning, garlic powder, salt, and black pepper to taste. Adjust the seasoning according to your preference.
Combine with Crawfish and Macaroni Gently fold in the cooked crawfish tails and macaroni until they are evenly coated with the cheese sauce.
Bake (Optional) If you like a baked crust, transfer the mixture to a baking dish, sprinkle breadcrumbs on top, and bake at 350°F (175°C) until golden and bubbly.
Garnish and Serve Garnish with chopped fresh parsley and serve your Cajun Crawfish Macaroni and Cheese hot and flavorful.

so, only three times a year does my mother create macaroni and cheese infused with shrimp, bacon, crawfish, as well as 5 different types of cheese.
i promised myself the last of this, as I had seen it in the fridge before I went upstairs to finish some work. the only person at home is my mother, who claims to not have eaten the last of the pasta.
so as I stare into this wretched fridge, I feel an immeasurable amount of rage overcome my senses. If I ever figure out who ate the last of the macaroni and cheese, they'll really wish they hadn't.

Staples in American Cooking
I consider myself something of an amateur cultural anthropologist in that I don’t have a formal degree, but I absolutely love learning about and studying other cultures. I have the utmost respect for these cultures, and one of my favorite ways to learn about them is through their food. Food seems to transcend all barriers (language, religious differences, political differences, regional boundaries, ect.) and it brings people together. It’s a way to celebrate different things. Food makes people happy. For dinner this afternoon I had haluski noodles (a traditional Czech recipe that I will share at the end of this post) for the first time. They were absolutely delicious! It was like taking a bite out of another country, so I decided to share a list of American cooking staples for anyone who is from somewhere else and might be interested to learn about our cooking the way I love learning about yours.
Please note that, just like anywhere else, staple ingredients vary from region to region, but overall, these are the most popular. Also, this is not meant to be a comprehensive list; I’m sure there are things I’ve forgotten, so please reblog with your additions.
-Chicken (we eat all parts of the chicken, but breasts and wings seem to be the most popular)
-Beef (most popularly ground beef)
-Pork (most popularly in the form of bacon and ham)
-Turkey (not as popular as the others, but we do eat a good bit of it)
-Shrimp
-Butter
-Noodles
-Cream of chicken soup
-Cream of mushroom soup
-Cream of celery soup
-Cheese (cheddar, mozzarella, Swiss, and parmesan are most popular)
-Cream cheese
-Velveeta (a pasteurized processed cheese that melts super smoothly and is popular in dips and casseroles)
-Chicken eggs
-Cow’s milk
-Heavy cream
-Sour cream
-Canned tomatoes in all forms (diced, fire roasted, crushed, tomato sauce)
-Rotel (canned diced tomatoes and chopped green chilies)
-Canned mushrooms
-White rice
-Worcestershire sauce
-Soy sauce
-Ketchup
-Ranch dressing (we will dip almost anything in ketchup or ranch dressing)
-Pre-packaged flour tortilla shells (we will roll up almost anything in a tortilla shell)
-Potatoes (one of the most versatile vegetables out there)
-Garlic
-Chicken and beef broths
-Strawberries
-Blueberries
-Peaches
-Flour
-Sugar
-Brown sugar
-Corn
-Carrots
-Bell peppers
-Cabbage
-Sausage (pork, beef, smoked, Polish, Italian, breakfast)
-Sweet potatoes
-Marshmallows
-Onions
-Jarred salsa
-Jarred spaghetti sauce
-Boxed macaroni and cheese
-Asparagus
-Celery
-Beans
-Salmon
-Tuna
-Grains like quinoa and couscous have become increasingly popular
-Taco seasoning
-Apples
-Cinnamon
-Pumpkin spice
-Olive oil
-Vegetable oil
-Sweetened condensed milk
-Ritz crackers (they make a buttery, crunchy topping for casseroles)
As I said earlier, staple ingredients vary from region to region. I am from the American South, so I would also like to share with you some popular dishes from my region. I don’t personally like all of these dishes, but nonetheless, they are wildly popular in my neck of the woods.
-Fried chicken
-Cornbread
-Collard greens
-Turnip greens
-Mustard greens
-Black-eyed peas
-Peach cobbler
-Blueberry cobbler
-Apple pie cooked in a cast iron skillet
-Venison (deer meat)
-Stuffed bell peppers
-Beef stew
-Pimento cheese
-Steamed crawfish
-Shrimp creole
-Fried turkey
-Fried catfish
-Coleslaw
-Potato salad
-Homemade baked beans cooked in a Dutch oven
-Fried pork skins
-All kinds of BBQ
-Tomato gravy over homemade biscuits
-Sausgae gravy over homemade biscuits
-Tomato sandwiches
-Fried squash
-Fried okra
-From-scratch spaghetti
-Fried chicken gizzards
-Meatloaf
-All kinds of casseroles
-Salmon patties
-Bacon-wrapped jalapeño poppers
-Deviled eggs
-Pigs-in-a-blanket (little smokies wrapped and baked in crescent roll dough)
-Butter beans (Lima beans cooked with meaty ham bones)
Now as promised, here’s that recipe for haluski noodles. I added more bacon than it calls for because four slices of bacon is practically a single serving, and after it came out of the oven, I added a tiny splash of Worcestershire and soy sauces to make it a little more moist and flavorful.

Harlem’s Seasoned Vegan feels like your mama’s house. There’s black art on the walls and a steady stream of soul tunes slipping from the speaker as you walk in. If you’re lucky, you may dine right next to some of those artists, like Stevie Wonder or India Arie, both of whom are fans of the restaurant. There are plates of macaroni and cheese, BBQ crawfish, and chicken parmesan. And as is tradition in any black home, there’s the matriarch in the kitchen, orchestrating these foods as their aromas waft into the other rooms, making your mouth water. If it weren’t for its name, you may not even realize Seasoned Vegan is a plant-based restaurant.
Brenda Beener, known as Chef B., is the founder and head chef. Her secret, I believe, is the perfect combination of love and, well, seasoning. Her restaurant is built on the idea that food is love, which translates into every aspect of the place and accounts for the warm feeling that envelops you as soon as you step inside.
Beener’s 33-year-old son, Aaron Beener, is general manager and co-owner. Their family has been vegan since the 1990s, when her husband emerged from a 21-day fast with a desire to remove all animal products from his diet. Chef B. was a stay-at-home mom at the time, and she welcomed the chance to make her already delicious food even more nutritious for her family. She “veganized” the Southern and creole staples passed down from her mom and created meals that eventually brought the whole (skeptical) neighborhood knocking. Together, Brenda and Aaron officially opened Seasoned Vegan in 2014.

Can You Freeze Crawfish? How To Store Crawfish In The Freezer

Crawfish is a freshwater crustacean that’s popular when it comes to seafood boils. Besides the name crawfish, depending on where you’re from, it is also known as crayfish, crawdads, freshwater lobsters, mountain lobsters, mudbugs, or yabbies. Whatever you want to call it, these crustaceans are delicious and packed with nutrition. Like other shellfish, crawfish tend to go bad quickly when they die. You’ll need to store them quickly in the fridge to keep it fresh for a couple of more days. What if you need to store them longer? Will the freezer keep the crawfish fresh?

So, can you freeze crawfish? Crawfish can be frozen in the freezer and they actually freeze very well. The crawfish can be frozen either as a whole or just the tail. Preparing them to be frozen is an important step to preserving their taste and texture.

In this short guide, we’ll through the proper way to freeze crawfish, how to prepare them for the freezer, and how long they’ll last. If these are the information you’re looking for, keep reading.

Can You Freeze Crawfish?

Due to their texture, crawfish can be stored in the freezer. This is great for those who want to store crawfish for longer than a month.

You can freeze crawfish with their entire body or just the tail.

Freezing The Whole Crawfish

Crawfish are usually cooked in a large pot and in large quantities. More than likely, you’ll end up with leftover cooked crawfish.

Cooked crawfish are highly perishable and will spoil quickly, especially in hot weather. Therefore, it should be stored in the fridge or the freezer right away after everyone has finish eating.

It should be stored in the fridge if the crawfish are going to be eaten within a day or so.

Otherwise, to keep them from spoiling, you’ll need to store them in the freezer.

The whole crawfish tend to lose quality quicker than just the tail meat. If you’re planning to freeze the whole crawfish, make sure to consume them within a month.

However, the crawfish is still safe to eat after a month, but the quality of it will deteriorate. It’ll just lose some of its flavors and the texture will change a little.

Freezing Crawfish Tail Meat

The tail meat is the most edible part of the crawfish. This is the section that most people will freeze. Once the crawfish are cooked, the tail meat will become hard and it will easily freeze.

Freezing the tail meat is great for storing in the freezer. These tend to last for 3 months or even longer.

Also, freezing just the tail meat will save space in the freezer as well. For the same sized freezer bag, you can store up to 5 times more than you would be freezing the whole crawfish.

Does Crawfish Freeze Well?

Like other seafood, the texture and flavor of the crawfish will deteriorate over time. This is due to freezer burn when the crawfish is stored for a long time.

Both cooked and uncooked crawfish can be frozen and they freezer very well too. However, it’s recommended to cook crawfish first before storing them. Cooking them beforehand will help preserve their flavor and texture.

On the other hand, for uncooked crawfish, they too can be frozen. However, you’ll most have them frozen for about 2 or 3 weeks before the quality starts deteriorating.

How Long Can You Freeze Crawfish?

Cooked crawfish will stay fresh for up to 3 months in the freezer. After that, they’ll still be safe to eat, but the quality will start to deteriorate. The longer they stay in the freezer, the more the flavor will become bland.

Three months is usually how long they will retain their freshness in a freezer bag or an airtight container. If you want them to last even longer, the crawfish should be stored in a vacuum seal bag. Vacuum sealing the crawfish will remove all excess air from the bag. The less air that’s in the bag, the lesser the chance the crawfish will get freezer burn. By storing them in a vacuum-sealed bag, the crustaceans will have an extra 4 to 5 months in the freezer.

As for live crawfish, they too can be frozen. However, their shelf life in the freezer is very short. The crawfish will last for about 14 days. Since the crawfish hasn’t been cooked, the flesh will easily get freezer burn. Crawfish that is cooked will last longer since almost all the moisture in the flesh is removed.

Live crawfish should always be stored in a freezer bag to prevent them from getting freezer burn too quickly.

How to Freeze Crawfish

When it comes to crawfish, you can either freeze them while it’s still alive or cooked. However, it’s recommended to cook them first so they’ll stay fresh in the freezer longer. Freezing fresh live crawfish will only keep them fresh up to 14 days in the freezer. If you’re planning to eat them within that time, it should be fine.

Freezing Fresh Live Crawfish

When it comes to freezing fresh crawfish, it’s important to freeze them before they die. Once they die, toxins will start to release from their internal organ, and spread to the meat. When this happens, eating the crawfish could make you sick. Additionally, once the crawfish die, bacteria will start growing on them quickly.

Here’s how to freeze fresh crawfish:

Place the crawfish in a large container and pour clean water into. Let them sit for about an hour.

Go through the container and throw away any dead crawfish.

Separate the body from the tail and place the tail in the colander.

Rinse the tail under running water for about 20 seconds.

Dip the crawfish tail in diluted lemon juice. This will help preserve the coloration.

In a freezer paper, put the tail in there. If you have a large quantity, it’s best to make multiple small bags of them.

In a heavy-duty freezer bag, place the freezer paper of crawfish tail in there.

Leave about an inch of space at the top of the bag so you can zip the bag.

Squeeze out as much air as possible from the bag and seal it tightly.

Label and date the bag.

Place the bag into the back part of the freezer.

You can freeze live crawfish as a whole, but it will take a while for them to be killed as they are being frozen. Therefore, it’s best to kill them before putting the crawfish in the freezer. They will remain fresh for up to 2 weeks.

Freezing Cooked Crawfish

There are many different ways of cooking crawfish, but we’re not going to be covering it in this article. If you’ve cooked some crawfish already and need to store them for the long-term, freezing them is the best option.

Here is how to freeze cooked crawfish:

After everyone is done eating, look through the leftovers, and find those that have a straight tail. This is a sign that the crawfish is bad and the meat is spoiled. It’s best to throw it out.

Place all the crawfish in a colander and let it sit for about 10-20 minutes. You want the crawfish as dry as possible.

In a freezer bag, place the entire crawfish in there or just the tail meat.

Leave about an inch of space at the top of the bag so you can seal it.

Squeeze out as much air as you can and seal the bag tightly.

Label the bag and place it in the freezer.

They will remain fresh for up to 3 months.

How Do You Defrost Crawfish?

If you bought a crawfish in a frozen package, follow the direction on the package. Due to the ingredients used and how it was cooked, following the direction on the package will ensure the best tasting crawfish.

For all other crawfish that are frozen, the simplest way to defrost them is to transfer the entire package of frozen crawfish to the fridge. Let it sit there overnight to thaw. Doing so will help the crawfish retain their texture and flavor.

If you need them quicker, place the entire package into a bowl of cool water for about 30 minutes. Putting frozen crawfish into hot water will cook the crawfish and cause them to lose their flavor. Also, the flesh will become mushy and break apart.

Using Frozen Crawfish

When it comes to crawfish, most people will cook boil crawfish. This is the most popular way to cook crawfish. Besides eating them fresh, crawfish are versatile and can be used as part of many different entrees.

Here are some of the delicious entree you can use crawfish with:

Crawfish bisque

Crawfish bread

Crawfish pasta

Crawfish pie

Crawfish etouffee

Crawfish boil

Fried Crawfish Po’ boy

Crawfish Macaroni and Cheese Fritters

Crawfish Cheesecake

Crawfish Boudin

Crawfish Crêpe Cake

Shrimp and Crawfish Roll

Crawfish and Corn Chowder

Crawfish Gumbo

Crawfish Gratin

Crawfish Salad Puffs

Crawfish Quesadillas

Crawfish Burgers

Crawfish Macaroni And Cheese

Crawfish fettuccine

As you can see, there are many entrees you can make with crawfish besides eating them fresh. These crustaceans are perfect for making the above entrees and other foods as well.

How Long Does Crawfish Last?

At room temperature, live crawfish will last for a week or even more if they are stored properly. This means storing them in a cool and damp container. You’ll also need to provide them food as well. Bread and cornmeal are great feeders for crawfish.

Once live crawfish are dead, you should never store them in the fridge or the freezer. It’s best to cook them right away or throw them again.

For cooked crawfish, they should be consumed within 6 hours. After that, the crawfish will start to lose moisture and the flesh will begin to shrink. Also, bacteria will start growing on the crawfish as well.

In the fridge, you can store cooked crawfish for up to a week to retain their freshness. Make sure to put them into a sealable freezer bag or an airtight container. The cool air will help prevent them from spoiling, while the plastic bag or container will prevent air from drying out the flesh.

Related Questions

Do you eat the poop in the crawfish?

The poop is located in the intestine, which lines the back of the tail meat. While most people get disgusted by it, they’ll still eat it though.

Why do crawfish turn black?

Crawfish turn black because they have reached maturity. Therefore, they will no longer need to molt out of their shell anymore and it becomes darker. The shell will be much harder and will tougher to peel.
source https://familycuisine.net/how-to-freeze-boiled-crawfish/
