Lemongrass Chicken Noodle Soup

Ingredients (serves 1):
1 1/2 tablespoon toasted sesame oil
half a thumb-sized piece fresh ginger
1 small fresh lemongrass stick
1/3 hot chili pepper
1 medium carrot, rinsed
leftover Roast Chicken (a small thigh or breast or wings)
1 tablespoon Hot Pepper Sauce 
1 1/2 tablespoon sweet soy sauce
1 cup Chicken Stock, warmed
90 grams/3 ounces egg noodles
boiling water
1 tablespoon demerara sugar
Heat toasted sesame oil in a medium saucepan over medium-high heat.
Peel ginger, and cut it into thin slices. Add to the oil, and and fry, a couple of minutes.
Cut lemongrass stick into chunks, and cut each open lengthwise, without going all the way. Add to the saucepan. Fry, a couple of minutes more.
Thinly slice hot chili pepper, and stir it in as well.
Cut the carrot into thin slices, and add to the saucepan. Cook, another minute.
Roughly chop the meat of leftover Roast Chicken, and stir into the saucepan. Cook, 1 minute.
Deglaze with Hot Pepper Sauce and sweet soy sauce. Reduce heat to medium. Then, stir in warmed Chicken Stock. Stir in demerara sugar Bring to the boil, cover with a lid, and simmer, 5 minutes.
Meanwhile, place egg noodles in a bowl. Cover with boiling water and a lid. Allow to soak and cook, about 3 minutes.
Once cooked, add the noodles, with half to a full cup of its cooking water, to the saucepan. Increase heat back to medium-high, and bring to the boil.
Enjoy Lemongrass Chicken Noodle Soup very hot.

Bo Kho (kinda)
Ingredients:
1 lb beef stew meat (or chuck roast, whatever you want to use) - marinated in 1 Tbsp Bo Kho seasoning
(Optional) 1/2lb - 1 lb tendon (looks good in her recipe)
3 tbsp Bo Kho seasoning (marinate)
6 cup water
1/4 onion
2 carrots (chunked)
~3 cloves garlic, minced
3-4 tbsp minced lemongrass
1 tbsp sugar (brown or white)
1 tbsp chicken bouillon
2 tsp fish sauce
salt + pepper (to taste)
Instructions:
Brown the meat in a skillet.
Add onion and cook together until onion is translucent.
Add water. Bring to a boil. Simmer for 50 mins with the lid on.
Add carrots. Bring to a boil. Simmer for 20 minutes, until carrots are tender.
Season with chicken b, fish sauce, and sugar. Add Bo Kho seasoning. Season to taste. Notes:
01/10/2024: Made this in a dutch oven - the garlic one to be exact. That thing is difficult to cook in, would recommend just serving stuff in it in the future. The top is impossible to lift and remove because there's essentially no handle. Added potatoes, this was just Jacob's beef stew recipe. And tomato paste, not sure if it needed that.
Would garnish in the future with fresh lime, chopped/sliced onion, cilantro, and maybe some vietnamese herbs. Could water this down with chicken stock and make it a noodle soup. Beef stew meat was good. I wanna try it with LEMONGRASS next time!! I guess next time I'm at the Viet market I need to buy and prep... it's kinda hard because we don't do that much Viet cooking, also lemongrass is smelly.

Nara Thai Cuisine in SM Megamall recently received its second Thai SELECT Award as a symbol of its continuing culinary achievements. This award is given only to selected restaurants in each country that pass the highest standards set by the Ministry of Commerce and the Royal Thai Government itself. The Hungry Kat was invited join the celebrations a few weeks ago as Nara Thai Cuisine presented its outstanding selection of authentic Thai dishes.

You can find its pioneering Philippine branch at the third floor of the SM Fashion Hall in SM Megamall. Nara Thai Cuisine started in 2006 in Bangkok and has since expanded to several branches across Thailand and other countries around Asia. It has consistently been voted as one of Bangkok’s Best Thai Restaurants and has just opened a new branch in Molito, Alabang.

It was great to be back at Nara Thai once again as we gathered with our other media friends for a bountiful Thai lunch. Nara Thai Cuisine uses authentic Thai recipes and serves them with quality ingredients prepared by their in-house Thai executive chef and Thai-trained sous chefs.

I started the afternoon by ordering my favorite Thai beverage, the Nara Thai Milk Tea (P185). I really love this compared to other milk teas especially because it is not too sweet. Another popular drink at Nara Thai is their Iced Lemongrass Tea (P165).

For our appetizers, the Roti with Massaman Sauce (P350) is a great way to begin our Thai adventure. Get a piece of the Roti bread and dip it in the massaman sauce which gives is a rich and deep curry flavor.

The Yum Phak Khom (P350) is a crispy starter with its fried spinach leaves served with a minced pork and prawn chili lime dip. The spinach is very light and crunchy with a mild kick from the chili dip.

Another tasty appetizer is the Goong Kabeuang (P550) or Deep Fried Crispy Prawns Pancakes. This is similar to an omelette dish but highlighted with flavorful prawns.

For those who like heavier starters, the Gai Pak Panang (P520) is a good option. These are Spicy Barbeque Chicken skewers served with vinegar that can also be a main dish by itself.

The Thai love their salads so the Som Tum Kai Khem (P520) or Papaya Salad with Salted Egg is also highly recommended. This is a refreshing and healthy salad dish complemented by the flavors from the salted egg.

The Tom Yum Goong (P480) is probably the most recognized soup dish from Thailand and Nara Thai Cuisine presents a very red and fiery version. The broth has big prawns in a spicy lemongrass and lime soup, but don’t let the bright red colors scare you, because the spice level is actually just right for Filipinos. I found myself able to handle the spiciness, so that means most diners should be able to as well.

Another soup option is the Kuay Tiew Rua Nua (P520) or Ayuthaya Beef Boat Noodles in Rich Dark Soup. This one comes with a meatier flavor without the spiciness.

I also love eating Thai curries so the Kang Kiew Wan Nuea (P620) or Green Curry Beef was another popular dish that afternoon. This was also served with white rice which is a must when eating curries.

For crab lovers like me, the Phu Phad Pong Karee (P920) or Stir-Fried Crab with Yellow Curry Sauce is another big hit. There’s no need to get your hands dirty because all the crab meat is peeled already. All you need to do is scoop up the crab meat and curry sauce and place them on your rice.

Speaking of rice, the Khao Phad Kra Prao (P385) or Fried Rice with Chili and Hot Basil can be a complete meal on its own. This is served with Chicken or Pork which you can mix up together.

One of the favorites that afternoon was the Phu Nim Tord Sauce Ma Kam (P990) or Fried Soft Shell Crab with Sweet Tamarind Sauce. These crunchy, bite-sized portions of soft shell crab were so flavorful and yummy, I wanted to have the entire plate to myself!

To complete our Thai journey, we had an assortment of colorful Thai desserts on our plate. These included the Khao Niew Ma Muang or Mango and Sticky Rice with Coconut Milk, the Bua Loy Kai Kem or Coconut Milk Rice Dumplings with Salted Egg, and the Khanom Tako Sakoo

That wasn’t all, because they brought out this giant Thai Summer Mix (P455) for everyone to marvel at and enjoy. This Thai halo halo version comes with Shaved Ice, Coconut Cream, Coconut Ice Cream, Red Monggo Beans, Kaong, Jackfruit, Nata De Coco and Water Chestnut. We also had the Durian Sticky Rice with its gooey and sticky rice covered in durian sauce and durian ice cream.

Incredibly Flavorful Wild Blue Mexican Shrimp & Noodle Soup
This soup is full of complex, amazing flavor that’s perfect for approaching cooler weather. Although making the broth and paste separately might seem like extra work, trust me - it’s well worth the effort. This soup is a real showstopper and the incredible flavors will have you making this recipe again and again. As an added bonus, all of the herbs and spices make this warm and nourishing broth an excellent choice for anytime you might feel a cold or sore throat coming on. Our wild blue Mexican shrimp are the perfect starring ingredient for this soup and are always Fair Trade, deveined by hand and easy to peel.
Ingredients: For the aromatic broth:

Introduction :
"Dear Foodies today's recipe is Tom Yum Kung".Tom Yum Kung is one of the famous dishes of Thailand.It is famous in Thailand as well as the whole South East Asia.Tom Yum Kung These three words have three meanings.Tom refers to the boiling process, while yam means 'mixed',Kung means shrimp .It is a dish made with shrimp, which is loved by people of all ages. And it is not too difficult to make at home.So let's start without delay.
Ingredients Needed Step by Step Instructions:
- 300 gm peeled shrimp (heads on) - 100 gm mushrooms - 2 shallots - 2 lemongrass stalks - 4 - 5 galangal slices - 5 kaffir lime leaves - 3 cups chicken broth or stock - 2 tablespoons fish sauce - 1/2 cup evaporated milk - 1 tablespoon Thai chili paste - 3 tablespoons lime juice - 5 Thai chili peppers - salt :to taste - Small handful cilantro
Preparation:
- Peeled the prawns . - Cut the mushrooms into small pieces. - cut the lemongrass stalks. - Take out the lemon juice and put it in a bowl.
Cooking Method:
- First heat the wok and then pour in the chicken stock. - Heat the chicken stock over low heat. - When the chicken stock is slightly hot, add lemongrass ,shallots,Thai ginger slice. - When you see that the soup is starting to boil a little, then add the mushrooms. - Now after the mushrooms are cooked for 1 to 2 minutes add the shrimps. - This time the shrimps should be cooked well for 5 minutes, when you see that the color of the shrimps has become golden then add the other ingredients. - Shrimps are cooked very quickly so you add the rest of the ingredients like fish sauce, chili paste, evaporated milk, chilli pepper ,lime leaves to the soup. - Cook this time for 2 minutes. Finally, add salt and lemon juice. Stir a little and take it down in a bowl. - Now take milk and chili paste oil in a small bowl, mix well and pour it into the soup and stir a little. - You will see that the color of the soup looks delicious and creamy. So This time add cilantro leaves on the soup to garnish. - Now your dish is ready serve hot.

Cooking time for this recipe is 40 minutes.
