I’ve been reading “Curry: A Tale of Cooks and Conquerors” by Lizzie Collingham.
It’s fascinating - for instance I had no idea that tea in India didn’t become a drink (it was purely medicinal beforehand) until after a lengthy and aggressive marketing campaign by the British-owned Indian Tea Association.
Even after tea-drinking caught on, the ITA disapproved of masala chai - an “unsavoury and badly prepared decoction” - because the inclusion of spices meant it required that much less tea...
The book includes numerous recipes, one of which follows.
I’m mildly - but only mildly - curious about whether measurement by cups means it’s a US recipe, or a UK one (noting that use of ”minced” not “ground” steak) converted for the US imprint of the book.
Either way, I don’t intend to try it.
​A 1970s curry (Serves 4–6)
Ingredients:
1 lb. topside steak cut into strips (or can use minced steak)
2 large stalks celery sliced
1 tablespoon soy sauce
1 tablespoon white vinegar
1 tablespoon oil
1 tablespoon brown sugar
1 cup water
2 whole cloves
2 heaped teaspoons curry powder
2 teaspoon each of ground ginger, cinnamon, and mixed herbs
3 heaped teaspoons fruit chutney
1 cup sultanas
3 cups tomato juice
salt
8 whole black peppercorns
1 or 2 rings fresh or canned pineapple (diced)
Method:
Heat the oil in a large saucepan. 
Sauté the celery and the meat until well browned.
Add the curry powder, stir, and cook for 3 minutes.
Add spices, tomato juice, chutney, soy sauce, vinegar, and sugar. Stir well.
Add remaining ingredients, stir well.
Cover and simmer for 50 minutes.
Serve with hot rice. 
Celery? Soy sauce? Pineapple?

Been busting my way through the party section of the book. Most of them are meant to serve like 50 little hors d'oeuvres portions, so I've scaled them down. This one was also a multi recipe. He claims you could train a crackhead rodeo clown to make these...

Starts out with a poached chicken breast. How boring. Smells really good while cooking though, I'll give it that. I got it almost exactly to temp, so it stayed pretty juicy even after it had completely cooled. Disregard my ugly ass bay leaves, I'm trying to finish a bag of shards.
Now for the more intricate part of this recipe...

This is where most of the actual work lies. The chicken salad is just a chicken salad. It's got walnuts and raisins in it, the only stand out part of the chicken is the curry powder.

I made this the day before, since it needs to be completely cooled to use. Those shriveled ballsacks are dried figs. He calls for the large dry fruit to be quartered. I think they should be smaller than that, but I did it his way. Soak the dry fruit for an hour in hot water.
Meanwhile, shredding pineapple is really, really annoying. Once the hour is up, drain the water and toss everything into a pot and boil. Then simmer for fifteen minutes until sufficiently sticky. Cool uncovered in the fridge.

I swear it's tastier than it looks. Also pretty damn spicy. I don't think I've ever put a whole teaspoon of cayenne in anything before. Plus a teaspoon of black pepper. Surprising.
The fig chunks didn't break down as much as I would have liked, I was almost tempted to blitz this a tiny bit.

Very pretty. Pretentious looking, even. The chicken salad was fine, but was made infinitely better by the addition of the chutney. I thought the endive was just for show, but the crispness of it balances the spicy chutney. Liked this more than I expected to.

Taste was a 4 out of 5. I could have eaten another plate of these.
Difficulty was a 3 out of 5. Prep heavy and finicky, but not a ton of cooking.
Time was roughly an hour, not counting the soak time for the chutney.
I could see serving these on mini naan bread instead of the endive, but I'm a bread fanatic. It would be more cost prohibitive though. These are good, but will definitely leave your lips tingly from the spice. The chutney would be best served on the side if you're not sure about your guests spice tolerance. Not ideal to have to add your own condiments to an hors d'oeuvres though. This one was a bit of a mixed bag.
