Rum and Honey Prawn and Avocado Skewers

Jules is home at the moment, so I reckon the three of us watching Death in Paradise together is reason enough to throw a little Caribbean Feast, especially when Sergeant Naomi Thomas is returning on her home island of St. Barnabas for her best friend’s wedding! And these Rum and Honey Prawn and Avocado Skewers are a delicious way to start the celebrations!
Ingredients (serves 3):
half-a-thumb piece fresh ginger
1/2 lime
1 heaped teaspoon honey
1 tablespoon Ginger and Lime Rum
15 beautiful prawns, steamed and cooled
1 ripe avocado
Peel ginger. Finely grate ginger, and spoon into a bowl. Grate in the zest of the lime halve, and thoroughly squeeze in its juice. Add honey and Ginger and Lime Rum.
Peel prawns and add them to the bowl. Toss well, with clean hands, to coat in ginger, lime, honey and Rum.
Place the bowl in the refrigerator, and allow prawns to marinate, at least a couple of hours (the longer, the better!), tossing them every now and then.
Peel and halve avocado. Cut its flesh into large enough dices.
Arrange a Rum and honey prawn and an avocado dice onto each of fifteen skewers, and place them onto serving tray. Chill until serving time.
Serve Rum and Honey Prawn and Avocado Skewers alongside Féroce d'Avocat, Fried Plantain, and Accras de Morue, and chilled Planters Punch or Queens Park Swizzles!

SALAD DRESSING: - Mix Greek yoghurt with the juice of 1 lime and caster sugar. Season with salt & pepper. Pour over salad leaves and place to one side..
Place linguine into a large saucepan and cover with boiling water. Set a timer for 10 mins..
Meanwhile heat the olive oil in a large frying pan. Add finely chopped garlic and deseeded finely chopped chilli. Fry gently for 30 secs (don’t let the garlic brown)..
Add raw king prawns to the frying pan and cook over a high heat for 3 mins until pink..
Add sliced tomatoes to the king prawns and cook for a further 3 mins until softened..
When the timer for the pasta goes off add sugar snap peas to the pasta and cook for a further two mins..
Drain the pasta & sugar snaps and mix into the frying pan..
Serve with fresh basil, a grating of Parmesan and the side salad.
What ensures that this seemingly simple dish evokes the sea is the rich prawn stock, layered with the other flavours, all unified at the end by finishing the linguine in the seafood sauce. Bacon + prawn = heavenly combo. with a sprinkling of lemon zest and thyme to keep it fresh. Zucchini (courgette) is one of my favourite vegetables and I love cutting them into fine strips as I find they cling so well to the linguine, as well as look really pretty. Health and wellness go hand in hand, but they are also different. Health is part of every human being and is constantly changing over time. Health can be considered good or bad, depending on whether a person is sick with an illness, a cold, or contains bacteria. Health is also divided into four separate types that include social health, mental health, emotional health, and spiritual health. However, well-being can depend on a person. Some people have a drive towards wellness in their everyday lives. Well-being is determined by the individual's responsibility to lead a healthy lifestyle. Wellness goals can be set and achieved through exercise, healthy eating, or even trying to follow a diet.
Although health and wellness are made up of many different factors, incorporating health, wellness and fitness into your daily routine is still a wealth of benefits.
I know it's hard to find healthy foods that will really hit your taste buds, but I've come up with a few that I think will provide people with very delicious and easy meals. Here are eleven easy and delicious foods:
1. Grilled chicken breast with shiitake mushroom sauce - it takes twenty minutes to cook and is a quick, delicious and easy solution.
2. Grilled snapper vera cruz
3. Skewers of roast beef with mustard and garlic - the cooking time is five minutes and this meal is not difficult to prepare.
4. Roasted eggplant salad - it takes ten minutes to cook and is healthy and light.
5. Roasted Chickpea Cakes with Chives and Lemon Oil: It takes time for all foods to develop (1 hour and 30 minutes) and is medium cooking.
6. Avocado Salad with Tomato, Lemon, and Roasted Cumin Vinaigrette - Another healthy type of salad that takes twenty five minutes to make and is super easy!
7. Grilled salmon marinated with ginger and miso - cooking time is only ten minutes!
8. Sweet potato salad with caramelized onions - Another salad option with many different flavors.
9. Prawns marinated with ginger, soy and lemon: five minutes of cooking and plain oysters, a healthy solution with a sweet, salty and tart flavor.
10. Frozen yogurt with boiled rum and pear raisins - healthy fruit dessert that can be made in just 20 minutes.

Another one of our London musts is @rokarestaurant in Mayfair where we always have a good time. Tonight wasn’t any different. We were seated in one of the round tables in the back for an early dinner. As we settled and started to look through the menus, we were surprised by the rowdy bunch of men beside our table who were obviously having a good time. We ordered our usual edamame and sashimi plus maki rolls: negitoro, soft-shell crab and prawn avocado with a half-liter bottle of cold sake to share. As the starters arrived the noise, table-banging and cursing was getting louder and we noticed the manager approach the table and ask them to please quiet down. Our main courses were served soon after: spinach salad and sesame dressing, grilled eggplant bonito, rock shrimp tempura, sea bream miso, skewers of beef-shishito and chicken-leek. By this point, our “next-door-diners” were arguing with the manager and didn’t want to leave. The manager stayed calm and carried on through all the table banging and shouting and succeeded in diffusing the situation and escorting the group out of the restaurant. Then he approached our table to apologize for the disturbance and offered us dessert with their compliments. Food Review: MasterChef Dubai's new Friday brunch

'IT'S SHOW TIME' as they say just before transmission begins on a production, and the same goes for Dubai's MasterChef, the TV Experience - a restaurant dedicated to bringing you celebrity culinary events - as the curtain rises on their much-awaited Friday brunch this weekend at the Millennium Place Marina venue. Taking place from 12.30pm, expect a fair dose of razzmatazz along with a slim-line version of the regular a la carte menu, which as always will feature recipes from the award-winning television programme's global editions. Recreated by head chef Margarita Vaamonde-Beggs and her team in the vibrant open kitchen adorned with the requisite number of famous '@m' symbols, at this brunch your table will enjoy unlimited starters followed by one main then never-ending desserts, all washed down with free-flowing beverages and set to the tempo of one of the best live bands in Dubai. The musical duo - performing every cover classic you could ever desire on a Friday afternoon - match each course for pace. Expect softer ballads during the entrees, building to an energetic pudding crescendo around 4pm. But what can you hope for from the main attractions? Straight out of the kitchen fly a trio of creations comprising baked Brie with pecan and maple drizzle by MasterChef US 2016 champion Shaun O'Neale, prawn bhaajis with avocado by MasterChef UK 2016 champion Jane Devonshire and lemongrass and ginger meatball skewers by MasterChef UK 2014 champion Ping Coombes. We've skipped over the bread served with a knob of delicious honey mustard butter in favour of dedicating more words to the best dish of the day: the baked brie. Sounding deceptively straightforward, the mini wheel of cheese emerges hot from the oven. Visibly gooey; its viscosity is only enhanced by the sticky sweetness of the North American confectionary pap. Smeared on a small piece of toast, we could (and did) make our way through two portions with zero shame. The skewers were also a triumph: tender and accompanied by fine condiments. The prawns, while generous in proportion, didn't overwhelm although the proceeding chilaquiles made from corn tortillas, eggs, pulled beef, queso fresco, black beans and salsa by MasterChef Australia 2016 champion Elena Duggan, rounded off the initial charge with typical South American/ Aussie cheer. Next up is the only decision of the day. Most plumped for the steak and eggs (Hangar steak, eggs, smoked paprika hash browns and chimichurri), though we couldn't resist the look of the fried chicken eggs Benedict (fried buttermilk chicken, poached eggs, Hollandaise sauce and coriander and tomato dressing). After the marathon that was the conveyor belt of starters, the thought of a huge second plate didn't immediately appeal. Thankfully portion sizes were manageable. The steak and eggs were well put-together, though, the stand out was the poultry. Lightly fried in crispy batter, saturated in Hollandaise - what a gourmet soul food recipe.   At this point - despite being a grazing, sharing or whatever concept menu you want to call it - we were filling up with the quantity of food on offer, so desserts were restricted to a quick taste. And even then we could only handle two! Ginger key lime pie and salted chocolate tart with beetroot sorbet were enough to have us exclaiming 'bravo' on this showbiz brunch. Where To Find The Best Vegetarian And Plant-Based Food In Barcelona
When you think of Spanish cuisine, chances are that most of the dishes involve animal products. Known worldwide for their love of ham, fish and cheese, the Spanish didn’t seem particularly welcome to meat-free consumers. For years, vegans had to rely on plates of Padrón peppers, grilled vegetables and patatas bravas (hold the mayo!) to get by in Spain — but things are changing. Like most cosmopolitan cities around the world, Barcelona is experiencing the same transitions, and here the plant-based movement is not only growing but exploding. Here are my picks for the best plant-based restaurants in Barcelona.
FLAX & KALE
Teresa Carles is known throughout Spain as a veggie restaurant pioneer, and her latest Barcelona restaurant has set the bar even higher. Flax & Kale isn’t actually a vegetarian restaurant, it’s ‘flexitarian’: while 80% of the menu is vegetarian or vegan, the remaining 20% contains some form of oily fish, be it cod, salmon or anchovies. There are three Flax & Kale restaurants in Barcelona, although the newest (and, I think, the best) is Flax & Kale Passage, which offers gluten-free vegan pizzas, healthy Asian fusion cuisine and even boasts its very own Kombucha Lab.

Let’s start with the pizza, because it was the pizza that first blew me away. The crux of a good plant-based pizza is usually the “cheese,” but despite its rapidly improving taste and texture, this can still sometimes be hit-or-miss. Not at Flax & Kale. Here I had my first ever vegan four cheese pizza: plant-based cheddar, blue cheese, mozzarella and a Parmesan-style cheese cutely dubbed “parmigiano teresiano.” The cheeses were melted over a bed of San Marzano tomatoes, and it was gooey, creamy, stringy; I just wish I had a slice to present those who laugh at the very idea of vegan pizza. The gluten-free dough was also exceptional: crisp, light and chewy, it’s a blend of whole grain and non-wheat flours.

Also on the menu is “My Vegan Japanese Girlfriend Bowl,” something I ordered just because I loved the name so much. But happily, the dish itself was delicious: black rice and quinoa topped with jackfruit, green soybeans, onions and tomato, and innovative vegan “scrambled eggs” made from ackee. Another standout dish was the “BBQ Pulled Pork Bao,” where tender braised jackfruit perfectly replaced slow-cooked pork; the texture and taste really has to be experienced to be believed. Drizzled with vegan mayonnaise, chilli jam and fresh cilantro, these delightfully squidgy steamed buns were so satisfying that I had to order a second portion.

“Eat better, be happier, live longer” is the motto at Flax & Kale, and after dining here I can confirm that I left feeling very happy indeed – so happy that I’m wondering whether it’s foolish to fly to a different country just to eat at a restaurant there?
RASOTERRA
Tucked away in the narrow streets of Barcelona’s Gothic Quarter, vegetarian bistro Rasoterra is focused on slow food made with seasonal and local produce. On the menu, beside each dish, are denotations telling you which dishes are vegan, which are locally sourced and which are gluten-free. The best way to eat here is to share. You’re advised to choose five small plates between two, and the standout for me was the huitlacoche mushroom and avocado taco with bean cream, picked onion and green pepper. Nicknamed the Mexican truffle due to its earthy, pungent taste, huitlacoche isn’t really a mushroom: it’s actually a fungus that grows on corn, and it’s absolutely delicious.

The spinach croquettes with pine nuts, sultanas and vegan aioli were crispy on the outside and soft and fluffy on the inside, and packed with rich, piquant flavours. Zucchini also features heavily during the summer months, be it in soups, pastas or salads, but the stuffed zucchini flowers are exceptional. This Italian staple has been given a Catalan twist, and locally grown zucchini is steamed til perfectly firm-yet-tender, and their delicate flowers stuffed with parsley and a creamy almond pesto.

Other popular dishes include the Trinxat — a traditional potato and leek mash (with the addition of tempeh), that’s shaped into little cakes, lightly fried and then topped with hot mole and charred cherry tomatoes. Rasoterra is a principled restaurant (it even has its own manifesto: “Behind each of our dishes, behind each and every one of our ingredients, there is a story. Stories about traditions, cultures, places, secrets, arts and crafts. Stories of love, dedication and passion….”) and it’s clear that extreme care is taken with both the preparation of the food and presentation of dishes.

BARCELONETA SANGRIA BAR
You can’t visit Spain and not sip some sangria, and luckily for those following a plant-based diet, one of the best vegan restaurants in town is BarCeloneta Sangria Bar. Just steps away from the beach, this cool bar serves up vegan versions of Spanish tapas, as well as plenty of raw food dishes. The selection of sangria is large, multicoloured and varied, and there’s a great selection of local organic wines, too. The most popular dish is the aromatic plant-based paella, which comes with succulent yet chewy soy-based ‘shrimps and prawns’, artichokes and mushrooms; it’s excellent — and the first time I’ve encountered a paella with mock-meat and not just veggies.

There’s also an array of traditional Catalan tapas that have been veganised: Las croquetas – mushroom croquettes with sun dried tomato sauce, Patatas BarCeloneta – grilled sliced potatoes with romesco sauce and curried lentil cream, and “Langostinos” a la plancha – veggie “langoustines” (made with soy, wheat and konjac) and baby onions in balsamic, grilled with fresh lime and truffle. Another delicious dish was the organic chickpea and tempeh skewers with eggplant and sundried tomatoes, sauteed and seasoned with tomato jam and sesame.

TERESA CARLES
I can’t write about the veggie food scene in Barcelona without including Teresa Carles. As mentioned, Teresa Carles is the brainchild behind Flax & Kale, and the original pioneer of Spain’s vegetarian restaurants, but it was her eponymous restaurant that kicked things off in Barcelona back in 1979. Located in the buzzing El Raval neighbourhood, close to Plaça de Catalunya, today the restaurant is the epitome of modern style, with exposed brickwork, wooden floors, and a stainless-steel station where you can grab quick juices or salads. It’s usually packed out (you’ll need to reserve a table in the evening) and the weekly changing menu includes plenty of vegan options.

The menu is varied: from home-made cakes and pasta dishes to seitan hamburgers, risottos and soups, there’s something for everyone. Favourites include the Teresa Goes to Tokyo Salad, (wakame, cucumber in asazuke, turnip daikon, tofu, mirin, golden sesame and soy), the Red Devil Raviolo (bicollo ravioli stuffed with aubergines and dried tomatoes, layered on baked eggplant towers with a soft leek cream), and tofu marinated with beetroot, mushroom scallops, spinach, wild asparagus, and mushroom and thyme sauce. Many of the vegetarian dishes can be veganized if you ask, and most of the desserts are plant-based: save room for the vegan black forest cake with coconut cream, chocolate pearls and cherry jam.

Taste аnd add lеmоn juiсе and juѕt a littlе ѕеаѕоning if уоu nееd to.
3) Sрооn thе bеаnѕ оn tо рlаtеѕ with the lеttuсе, thеn add thе еggѕ and tоmаtоеѕ, with the tаhini drеѕѕing, сhilli аnd parsley, if uѕing.
Prawn & salmon burgers with spicy mayo

1) Briefly blitz half the рrаwnѕ, half thе salmon, the ѕрring onions, lеmоn zеѕt аnd hаlf thе coriander in a fооd processor until it fоrmѕ a coarse раѕtе. Tip into a bowl, ѕtir in the rest of thе prawns аnd salmon, season wеll and shape intо four burgеrѕ. Chill fоr 10 mins.
2) Mix the mayo аnd сhilli sauce together in a ѕmаll bowl, ѕеаѕоn and add ѕоmе lеmоn juice tо taste. Mix thе lеttuсе with thе cucumber, dress with a little of thе rеmаining lеmоn juice and 1 tѕр оlivе oil, thеn set аѕidе.
3) Hеаt thе rеmаining оil in a lаrgе frуing раn аnd frу the burgеrѕ for 3-4 minѕ each side оr until thеу have a niсе сruѕt аnd thе fiѕh is cooked through. Sеrvе with the ѕаlаd on thе ѕidе оr in tоаѕtеd burgеr bunѕ, if уоu like, with a good dollop оf thе ѕрiсу mауо.

1) Soak еight bаmbоо skewers in wаtеr. Using sharp kitchen ѕсiѕѕоrѕ, chop the сhiсkеn intо small рiесеѕ. Pор intо a plastic box with a lid. Pаrе ѕtriрѕ оf lеmоn zеѕt from thе lemon using a vegetable peeler, thеn juice the lеmоn аѕ wеll. Add bоth the рееl and thе juiсе to the сhiсkеn in thе box аlоng with the оrеgаnо and thе gаrliс, сruѕhеd in. Season generously, mix and put in the fridge fоr 15 mins with thе lid оn. Dеѕееd and chop the рерреrѕ intо ѕimilаr-ѕizеd pieces to thоѕе оf the chicken.
2) Heat a griddlе pan tо high while you gеt thе chicken оut. Diѕсаrd thе lеmоn zеѕt аnd thrеаd the chicken onto the ѕkеwеrѕ, аltеrnаting every fеw bits of chicken with a piece of rеd рерреr followed by a рiесе оf yellow рерреr. Griddlе fоr 10 minѕ, turning halfway.
3) While the ѕkеwеrѕ аrе сооking, mаkе thе tzаtziki. Gеt a box grаtеr аnd a bowl. Cut thе сuсumbеr intо long lеngthѕ, diѕсаrding the watery seedy соrе. Grаtе intо thе bоwl, then grаtе thе ¼ gаrliс clove. Sеаѕоn gеnеrоuѕlу аnd ѕtir in thе Grееk уоgurt. Drizzlе with a littlе еxtrа virgin olive оil.
4) Serve thе ѕkеwеrѕ hоt оff the griddlе with thе diр, оr take thе сhiсkеn and рерреrѕ off thе ѕkеwеrѕ, leave tо сооl and расk into whоlеmеаl wraps ѕрrеаd with a little tzаtziki аnd rоllеd uр with bаbу spinach and a fеw рiсkеd lеаvеѕ оf parsley.

3) Rеmоvе from the hеаt аnd stir in thе red оniоn, limе juiсе, fiѕh sauce аnd hеrbѕ. Spoon thе роrk into the lettuce lеаvеѕ and serve with riсе, if you like.

1) Pоur thе lеmоn juiсе into a lаrgе bоwl and whiѕk whilе уоu ѕlоwlу аdd the оil. Whеn аll thе оil hаѕ bееn аddеd аnd the mixture starts to thiсkеn, ѕеаѕоn.

1) Heat thе oil in a mеdium nоn-ѕtiсk, ovenproof frying раn. Tiр in thе ѕliсеd оniоnѕ аnd сооk over a mеdium hеаt fоr аbоut 10 minѕ until ѕоft and golden. Yotam Ottolenghi’s corn recipes
We’ve enjoyed more “corn time” than usual thanks to the long summer, which makes me very happy indeed. The little yolk-coloured kernels’ sweetness is brilliantly enhanced by the smoke of a barbecue, the savoury notes of fresh herbs and the fiery intensity of chilli. I also like adding milk and butter, which boost the creaminess, but coconut milk does the job just as well. Whatever your combination, don’t miss out on this glorious golden bounty.
Cornbread with cheddar, feta and jalapeño (pictured above)
The “bread” in cornbread is a wonderful euphemism for “cake”. You can spread it with lots of butter and have it for breakfast, but you can also serve it as part of meze spread or with a roasted chicken.
Prep 15 min Cook 50 min Serves 10
2 small fresh corn cobs, kernels shaved off (150g), or 150g frozen corn kernels, defrosted 140g plain flour 1 tsp baking powder ½ tsp bicarbonate of soda 1 tbsp ground cumin 1 tsp cayenne pepper 50g light brown soft sugar Salt and pepper 180g instant polenta 360g soured cream 2 large eggs 120ml extra-virgin olive oil, plus 1 tbsp extra for greasing 4 spring onions, trimmed and roughly chopped 10g coriander leaves, chopped 1 fresh jalapeño chilli, finely chopped
For the topping 100g feta, broken into roughly 2cm chunks 100g mature cheddar, coarsely grated 1 fresh jalapeño chilli, cut into thin rounds ½ small red onion, peeled and cut into 5mm slices 2 tsp nigella seeds
Heat the oven to 170C/335F/gas 3½.
Put a large ovenproof cast-iron saute pan, about 25cm wide, on a high flame. Once hot, add the corn kernels and dry-fry for four to five minutes, stirring from time to time, until slightly blackened. Remove from the pan and set aside to cool.
Sift the flour, baking powder, bicarbonate of soda, cumin and cayenne into a large bowl. Add the sugar along with one and a half teaspoons of salt and a good grind of pepper. Stir through and set aside.
Add the polenta, soured cream, eggs and oil to a separate bowl and whisk lightly. Add to the dry ingredients, then fold in the spring onion, coriander, jalapeño and toasted corn until just combined.
Lightly oil the base and sides of the pan used to toast the corn, pour in the cornbread mixture and evenly scatter over all the topping ingredients. Bake for 40-45 minutes, until a skewer comes out clean. Serve the cornbread hot straight from the oven or leave to cool for 30 minutes and serve warm or at room temperature the same day. If serving it the next day, warm through in the oven just before.
Red pepper, corn and sriracha pancakes

The avocado salsa works a treat here but the pancakes are also great just as they are, with a squeeze of lime. If you want to get ahead, the batter can be made the day before and kept in the fridge. Hold back on the baking powder and egg whites if you do this, adding both to the mix just before cooking.
Prep 15 min Cook 1 hr 15 min Makes 12
2 large red peppers (420g) 2 whole fresh corn cobs, papery husks removed (500g) 3 large eggs, yolks and whites separated 150ml whole milk 100g unsalted butter, half melted, and half to fry the pancakes 2 tbsp sriracha, plus extra to serve, if you like 200g plain flour 2 tsp baking powder ¾ tsp salt
For the avocado and lime salsa 4 ripe avocados, roughly chopped 2 green chillies, deseeded and finely chopped 4 limes – juice 2 to get 2½ tbsp, and cut 2 into wedges, to serve 1 tbsp olive oil 10g coriander, roughly chopped ⅓ tsp salt
Heat the oven to 220C/425F/gas 7. Put the peppers on a small baking tray and roast whole for 25 minutes, until browned all over, then transfer to a bowl and set aside, covered with clingfilm, for 15 minutes.
Meanwhile, grill the corn for 10 minutes under a high heat, turning throughout, until charred all over. Set aside to cool for five minutes and then slice the charred sweetcorn off the cob.
Now peel off and discard the skin, stalk and seeds of the peppers. Finely chop the flesh of one pepper, transfer to a bowl and set aside. Put the second in a food processor and set aside.
Add one half of the corn to the chopped pepper. Add the other half to the food processor and blitz with the pepper until fairly smooth, then add this to the chopped pepper and sweetcorn. Add the yolks, milk, melted butter and sriracha, mix and set aside.
Mix the flour, baking powder and salt in a separate, large bowl, add the wet mix and stir to combine. In a separate bowl, whisk the egg whites to stiff peaks – about three minutes if whisking by hand – , then gently fold this in, too.
To cook, add 10g butter to a large, nonstick frying pan on a medium heat. Once hot, add about three tablespoons of batter per pancake to the pan and fry for four to five minutes, turning halfway through, until cooked through and golden brown. Keep each one warm while you make the rest, adding more butter to the pan with each batch.
For the salsa, simply stir everything together. Serve two or three warm pancakes per person with a generous spoonful of the salsa, a wedge of lime and a drizzle of extra sriracha if you like it spicy.
Spiced semolina with fried corn, peanuts and coriander

This falls somewhere between a savoury semolina pudding and an Indian . Serve as a hearty brunch, with some toasted flatbread, or for dinner with some grilled prawns. Asafoetida is a pungent onion-garlicky spice used a lot in southern Indian cooking.
Prep 15 min Cook 20 min Serves 4
2 tbsp vegetable oil ½ tsp black mustard seeds 1 tsp cumin seeds ½ tsp ground cinnamon 2 whole cloves 15 fresh curry leaves 60g blanched peanuts ⅛ tsp 3-4 large corn cobs, kernels shaved off (350g), or 350g frozen corn kernels, defrosted 1 green chilli, deseeded and finely chopped Salt 2 limes – juice 1 to get 20ml, and cut the other into wedges, to serve 2cm piece ginger (10g), peeled and finely chopped 2 garlic cloves, crushed 200ml coconut milk ¼ tsp ground turmeric 75g ground semolina 5g picked coriander leaves, to garnish
Add a tablespoon of oil to a large saute pan and put on a medium-high heat. Add the mustard seeds, cumin seeds, ground cinnamon, cloves and curry leaves and fry for about 30-60 seconds, until the seeds start to pop. Add the peanuts and asafoetida and cook for two to three minutes, stirring a few times, until the peanuts have taken on some colour.
Add the corn, half the green chilli and ½ teaspoon of salt, and cook for a further two minutes. Add the lime juice, then take off the heat.
Discard the cloves, transfer half of the mixture into the bowl of a food processor and blitz to a coarse paste. Set both corn mixtures aside, separately, until ready to use.
Add the remaining tablespoon of oil to a medium saucepan and put on a medium-high heat. Add the ginger, garlic and remaining green chilli and fry for one to two minutes, until fragrant. Add 400ml water, the coconut milk, turmeric and three-quarters of a teaspoon of salt and bring to a boil. Once boiling, reduce the heat to medium and slowly add the semolina, whisking constantly to avoid any lumps. Continue to whisk for two minutes, until the consistency is that of thin porridge.
Add the blitzed corn mixture and cook for one minute, stirring constantly, until thickened.
Divide the porridge between four bowls and top with the sauteed corn mixture. Sprinkle over the coriander leaves and serve with a lime wedge.

The Rocks Cafe
Char-grilled crocodile patty with watercress, tomato, roasted garlic aioli and served on brioche with crispy fries. It might be one of the most unusual burgers but tasted similar to what we usually eat. The crocodile patty was very lean, tasted like chicken breast to me. It was well-marinated and flavourful, there isn’t any unpleasant taste in the mouth.

If you have seen my previous post on Crocodile Burger, we’ve also tried Kangaroo Burger. Char-grilled kangaroo patty with rocket leaves, tomato, red onion, cheese, beetroot relish and roasted garlic aioli. The kangaroo patty had a tough texture with an unfamiliar taste. Unfortunately, the beetroot relish did not help to mask the gamey smell which I cannot stand it. This is gonna be the first and the last time for kangaroo burger.

“Please resolve any disputes over dessert-sharing amicably + fairly” written on the menu. And I understand this statement after the first mouthful. There are eight choices of dessert to choose from. Medjool date shortcrust tart with fig syrup, Chantilly cream, pistachio ice cream. I am amazed by the taste after the first spoon. The Medjool was very soft and sweet and the smooth salty pistachio ice cream in every bite giving your mouth a taste of dessert heaven. Even my boyfriend who is an avowed date hater has been convinced by it.
This is part of a course meal.
