made gf sourdough today and i didn’t have very high hopes (it was just the recipe on the flour bag that called for the starter to be made just the day before) but it turned out actually pretty good!!!

#the last time i made bread it was like. completely solid and stodgy bc it hadn’t risen at all so any air bubbles at all feels like a huge #success!!#and it tastes good! not super sourdoughy obvs bc. day old starter. but i haven’t had good crusty bread in years 😭#i want to make an actual gf sourdough started but gf flour is sooooooo expensive so discarding half every day for a while to get it #started sounds so agonizing....... even if i'm able to use the discard it's just SO much money that i wouldn't've spent. but sourdough.....#oh my god and i made it in a dutch oven that apparently my mom got for christmas years ago and never used it's a GORGEOUS #marquette like bright red and giant and i didn't know we had it!!! so i'm gonna use it for other stuff i think bc it's just gotten dusty in #the back of a cupboard for god knows how long. i'll save you princess

8 DAYS I AM VIBRATING!!! we're on a good track to having everything all packed! today i have to clean our appliances that have been neglected for a while but aside from things we will be using up until the move, we're pretty set!! still lots of other things to get done like cleaning the loveseat, setting up electricity in our name, verifying the UHAUL, etc. but im feeling really good!!

i'm so thankful to have all of this! the apartment is in the most perfect place i could imagine and there's a queer scene!! we're going to have furniture which is so awesome bc i wasn't expecting to have anything apart from a mattress pretty much, but we'll have a loveseat, TV, lamp and a side table that my bf's dad is letting us have!

i have a killer migraine today but im really excited :p

Sometimes I like to be fancy. Like having my belt match my shoes even if the belt is covered by an untucked shirt. You might not notice, but I do, and it makes me feel good. I will even order pizza without having a coupon. Well, at least one time.

For lunch today I made baked macaroni and cheese with grilled chicken and bacon.

This was not a Pioneer Woman recipe.

I started with box of Kraft mac & cheese. It was aged, like good wine or cheese ("best before December 2022").

As the noodles boiled, I grilled a chicken breast that had been hanging out in the back of the freezer for a while.

The milk I used was fresh. So was the butter. When the noodles were ready I sniffed the pouch of powdered cheese-mix-product. Not smelling anything that made me wince, I stirred together all the mac & cheese ingredients.

When that was done I spread the mac in a small baking tray. I covered that with grilled chicken slices and some bacon pieces that came out of a plastic pouch. There are probably some preservatives in that bacon.

That all got covered with shredded Tillamook aged sharp cheddar cheese, aged "over 9 months." This had been aged at the cheese factory, not in my refrigerator. It wasn't too fancy for this dish because I got it at a terrific sale price.

The small pan went into my Ninja Foodi 6*-in-1 air fryer where I broiled it for five minutes. That shredded cheddar cheese got browned and crispy as did the edges of some exposed chicken breast.

It was fantastic. I feel fine too.

Guys, if you haven't tried this yet, this is your sign to drizzle some rice cakes with any sugar free syrup and put them in the air fryer for a few minutes, trust me it's a game changer. Especially if you're craving popcorn.

#I drizzled some sf caramel syrup on them #popped them in the air fryer for like 3 minutes then took them out and sprinkled some salt on them #game changer I tell you #also you can probably do the same in the oven! i just used an air fryer cause it's faster
