Cozy Treats
With the cold weather already hitting us, I’ve found myself often reaching for sweaters, blankets and most importantly, food and drinks with those warm cozy flavours. You know what I’m talking about? Those flavours that warm your heart, make you feel all cozy and that fit the cold season so well. We all enjoy these flavours in different ways, some of us bask in the 8$ pumpkin spice lattes from Starbucks. Others may go for a strong glass of eggnog, bite into a gingerbread cookie, or a nice chunk of peppermint bark. My baking changes as soon as it’s cold enough to throw on a sweater, no more bright summer treats. I’ll be going through my favourite cold weather treats for you guys.
The first recipe that I love is Cream Cheese Stuffed Pumpkin Cookies by InBloom Bakery. They have the perfect pumpkin flavour with a nice sweet creamy filling that balances it all out. These are cookies that taste so good, seem a little complicated but in reality are super easy to make in my opinion. When I make these cookies I tend to make a double batch and freeze half because these cookies freeze really well and all you have to do is thaw them on the counter overnight and they’re still fresh. I made these cookies a couple weeks ago for a teacher and they loved the surprise filling in the center.
Next up on my list are Baked Apple Fritters by BakedByAnIntrovert. These are THE donuts of cold weather, the apple and cinnamon flavours in these will warm a soul on the coldest of days. I make these apple fritters at the start of fall every year after me and my family head to the apple orchards and come home with pounds upon pounds of apples. I especially love this recipe because they are baked and not fried like your usual apple fritter. I prefer this because they create less of a mess when baking and they last much longer since they’re not coated in oil from the fryer so they don't become soggy after 2 days.
My final recipe that I want to share with you isn’t a dessert or bread, but a syrup. If you are in fact that person that spends 8$ on a pumpkin spice latte at Starbucks, this is the Pumpkin Spice Syrup that I make for my mom and me that tastes better than the Starbucks one. I find making the syrup much better than going to Starbucks or buying a bottle of it because it’s cheaper and I can add or remove flavours and spices. For example my mom finds that the pumpkin flavour in the Starbucks ones is lacking, so when I make our syrup for the month, I add more pumpkin to it for a stronger flavour. Those are my top 3 cozy treats for the start of the cold weather season, I use a lot of pumpkin in my fall baking because me and my mom take 1 day in early October, buy around 7 pumpkins, and make our own pumpkin puree to freeze and last us the whole season. Apple Streusel Bars
I adapted THIS RECIPE and also made it gluten-free.
Crust
2 1/2 cups gluten-free all purpose flour*
1/3 cup granulated cane sugar
1 cup grass-fed butter
Filling
5 cups apples peeled and diced
1 Tbsp lemon juice
1 cup coconut sugar
1/4 cup gluten-free all purpose flour*
2 tsp ground cinnamon
1/8 tsp ground nutmeg
Topping
1/4 cup coconut sugar
1/2 cup gluten-free old fashioned rolled oats
Optional: whipped cream
Preheat oven to 375 degrees and line a baking pan with parchment paper. Butter paper to prevent sticking.
To make the crust, mix together flour and sugar and cut in the butter. Set aside 1 1/4 cups of the mixture for the topping. Press the remaining mixture into the pan. Bake 15 minutes.
To make the filling, mix apples and lemon juice in large bowl. Add remaining filling ingredients and mix. Pour apple mixture onto baked crust and spread in pan.
To make the topping, add sugar and oats to the reserved mixture and stir. Spoon topping over filling. Bake 45-55 minutes. The topping should be crisp. Cool completely in the pan and cut into squares. Optional: serve with whipped cream.
* I used Cup4Cup gluten-free all purpose flour
