Ingredients:

2 cups frozen corn kernels

1 cup pure liquid egg whites

1 cup shredded cheese blend

1/2 cup mayonnaise

1/4 cup sour cream

1/4 cup chopped fresh cilantro

1 jalapeño, finely diced

1 teaspoon chili powder

1/2 teaspoon cumin

salt/pepper to taste

tortilla chips

Instructions:

Preheat the oven to 375°F (190°C).In a skillet over medium heat, cook the frozen corn until it's lightly charred. Set aside to cool.

In a mixing bowl, whisk the pure liquid egg whites until slightly frothy. Add shredded Mexican cheese blend, mayonnaise, sour cream, chopped cilantro, diced jalapeño, chili powder, cumin, salt, and pepper to the whisked egg whites. Mix until well combined.

Gently fold in the charred corn kernels, ensuring they are evenly distributed in the mixture.

Transfer the mixture to a baking dish and spread it evenly.

Bake in the preheated oven for 20-25 minutes or until the dip is bubbly and golden brown on top.Remove from the oven and let it cool for a few minutes before serving.

Garnish with additional cilantro and diced jalapeño if desired.

Serve the creamy Mexican corn dip with tortilla chips and enjoy the delicious blend of flavors!

Yesterday was push day!
