One of our signature Rose truffles, and named after our 2nd longest serving chocolate advisor; Alyx KATOPODIS. This epicurean is made with organic cream, Greek rose petals, our 53%+ REGINA™ dark milk chocolate and a touch of organic Geranium (Kiouli). Enrobed in a smooth 73%+ MORETTA™ dark chocolate and sprinkled with either organic Rose Sugar or Golden Sugar (B1470,1471,1472) Pairing: Rosé, Syrah, Burgundy, Sonatina, Glenmorangie Quninta Ruban, black teas.

Two words: CHOCOLATE SALON! We literally ordered #allthethings and even went back for seconds. 😅 Hint: Just get two of the Bruleed Brioche, an extra Cake For Breakfast and another Quiche. (#youcanthankmelater). . . . Part of the joy that comes from sharing a meal with others is the places it can take you. Especially people you enjoy being with. Geographically, philosophically, there is so much ground you can cover. One person’s memories of a childhood growing up in proximity to the chocolate plantations in Venezuela came about because the Cacao Fruit Smoothie is very similar to something she drank growing up. The surprising combo of the The Iced Chocolate Chai. Trying to recreate food memories, the African Diaspora, what small batch truly means, and cobblestones (#freakinconquistadors). Everything was fair game. And through the laughter and info and education, the best part was bringing the conversation back to the place it all started. A sunny day in a beautiful environment, with people that don’t suck. Oh. And chocolate. SELEUSS:  We submitted our white chocolate honey truffles to this competition; Eden’s Honey and Bavarian Acacia Honey and both placed in the TOP 3.  Eden’s Honey Truffle won #2 and the Breitsamer Bavarian Acacia Blossom Honey Truffle won #3, and both received a 4 Star rating.
ACACIA HONEY TRUFFLE:  This delicate honey ganache is made with BREITSAMER’s Acacia Honey from Bavaria, local organic cream, and our specially formulated 32%+ light milk chocolate, for a taste of Spring Acacia Nectars.  Truffle: The Acacia Honey ganache is typically enrobed in our 40%+ Bauta™ White Chocolate and topped with either; Marigold flowers, Osmanthus, Safflowers, or Honey Crystals.

Eden’s Honey Truffle:  A taste of paradise, this special and limited production honey ganache is made with fresh local organic cream, our specially formulated 37%+ light milk chocolate and a delicate, buttery, golden honey gathered from wildflowers and apple blossoms around Lake Chelan. Truffle: This special honey ganache is typically encased in a 33%+ white chocolate first and then enrobed in our 40%+ Bauta White Chocolate and topped with either Northwest golden wildflower bee pollen or bits of Honeycrisp Apples.

All About the Chocolate Salon
I was honored to be a judge at the Fall Chocolate Salon in San Francisco last Sunday, November 10th. I'd been to several Chocolate Salons in the past, and I knew how much tasting there was to do (tough job, but someone's gotta do it), so I asked my little girl and her best friend come along and help me judge, along with my friend Cate (who is a great supporter of this blog). The girls were super excited and took my request very seriously. They planned a sleepover and laid their outfits out the night before, along with cute little "judging" notepads and pens. And those hats!

The Chocolate Salon is run by Taste TV, who also has a chocolate TV station. They have annual tasting events in Seattle, Los Angeles, Las Vegas, Napa, Sacramento, Santa Barbara, Monterey, and Tahoe, in addition to San Francisco.

As you can see, the Salon drew a large crowd of chocolate tasters...and there was much delicious (and beautiful) chocolate to taste! Pictured below are creations from Fera'wyn's Artisan Chocolates, who won 1st place for Most Artistic Designs.

We are proud to present the results of the 6th Annual TRUFFLE ARTISTRY AWARDS Competition.
The International Chocolate Salon Awards for the 6th Annual CHOCOLATE TRUFFLE ARTISTRY AWARDS are based on the combined total number of votes received by each entrant from the Judging Panel.
The Judging Panel consists of National and Regional Magazines, Newspaper and Blog Editors, plus Topic Experts, Local Chefs and Food Gurus.
SELEUSS:   We submitted our popular beer truffle, the Porter 75% and the fruity Peaches & Cream truffles, both received a Bronze Metal and 3.5 Stars rating.
Porter 75:  Our Dark Chocolate Truffle made with organic cream, Porter 75% Dark Chocolate, and our proprietary blend of Porter style beer malts, for an unique chocolate ganache with tastes of sweet malt, burnt sugar, raisins, nuts, and roasted coffee.   Truffle: The Porter 75% dark chocolate ganache is typically encased in a 52% semisweet chocolate first and then enrobed in our Moretta™ 75%+ dark chocolate. Some times with roasted cacao nibs or dusted with either Dark Muscovado or Dutched Cocoa Powder. If hopped, then dusted with grounded hop flowers or as indicated below. Pairing: Your favorite Porter style beers, Port Wines, or Coffees. Malts & Hops: We use only the best specialty brewer’s malts and hops from around the world; from our own state of Washington, to Wisconsin, and across the Atlantic to the United Kingdom, Belgium, and Germany. Lower quality corn and tapioca syrups are never used in our chocolates! 
Peaches & Cream:  A Happy-Go-Lucky, Summer time desert popular in the South, and reminiscence of the song; Peaches, by The Presidents of the United States of America. Ours Peaches & Cream is made with organic cream, peaches, mangos, oranges, and a touch of Italian Prosecco, along with a specially formulated 34% light milk chocolate that complements the essence of the peach.  Truffle: The Peaches & Cream ganache is typically encased in a 34% white chocolate first and then enrobed in our Moretta™ 75% Dark Chocolate or one of our fine chocolates below and then dusted with either Peach powder or Osmanthus flower powder. Pairing: Riesling, Chenin Blanc, Gewurztraminer, Sauternes, Muscat, Pinot Noir, and Peach Wine. National Peaches ‘N’ Cream Day: Observed annually on June 21st, a perfect way to start the Summer Solstice. Peaches ‘n’ Cream is a simple, traditional and delicious summertime dessert. Georgia peach is in season during the month of June, as are those grown in Florida, California and South Carolina.  Make some homemade vanilla ice cream to sweeten the deal and your peaches ‘n’ cream will be all the cooler.  Source: NationalDayCalender.com

Topped with either Crown Maple’s organic Maple Pearls or Maple Sugar. Pairing: Bourbons, Whiskeys, Ruby Ports, Glenmorangie Quinta Ruban,  or contrast pairing with Lattes or milk teas. Crown Maple’s Madava Farm: 800 acres of pristine, sustainably managed land in Dutchess County, New York, located in the heart of the Hudson Valley. Hibiscus & Violet Cream:  The Crème de Hibiscus is derived from the gentle maceration of hibiscus flowers in organic cream, to achieve a vibrant magenta cream with tastes of tart cherries and fruity bouquets. To this, a specially formulated 38%+ fine milk chocolate is folded in along with Rothman & Winter’s Crème de Violette to create a balanced ganache of tart Hibiscus and sweet Violet. Truffle: The ganache is typically enrobed in our 60%+ COLOMBINA™ Semisweet Dark Chocolate or one of our fine chocolates below and topped with either violet sugar or crystallized violet flower petals.   Pairing: Lambrusco, Sangue di Giuda,  Cabernet Sauvignon-Syrah, Syrah, Viognier, American Riesling, Pouilly-Fumé, Champagne, Glenmorangie - La Santa.  History: Among the native wildflowers found in the Alps are the Queen Charlotte and March Violets. Saffroncello(TM): This exotic “Golden Yellow” colored chocolate ganache is achieved by the gentle maceration of “Special Grade” Pure Persian Saffron (CyrusSaffron.com) in local organic cream, it is further infused with premium Italian Limoncello, along with our specially formulated 31%+ light white chocolate, for that perfect balance between Saffron’s floral honey taste and Limoncello’s fresh citrus flavor. Truffle:  The SaffronCello™ chocolate ganache is typically enrobed in our 40%+ Bauta White Chocolate or one of our fine chocolates below and topped with either; Marigold flowers, Safflower, Barberries (Zereshk) or granulated orange peels. Pairing: Perfect with Chardonnays, Champagnes, or your favorite Limoncello Cocktail: Limoncello & Bubbles, Stirred Sour, or Limoncello Collins.
