These Chicken Caesar Ciabatta Sandwiches are a delightful twist on the classic Caesar salad, featuring tender chicken breasts, crisp romaine lettuce, and savory Parmesan cheese, all sandwiched between soft ciabatta rolls.
Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 1 tablespoon olive oil. 4 ciabatta rolls, sliced in half. 1 cup Caesar salad dressing. 1 cup shredded romaine lettuce. 1/2 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 4 slices of bacon, cooked crispy optional.
Instructions: Add salt and pepper to the chicken breasts. Add olive oil to a skillet set over medium-high heat. Cook chicken breasts for about 6 to 8 minutes on each side, or until golden brown and fully cooked. Take the chicken out of the pan and give it a minute to rest. On the bottom half of each ciabatta roll, spread Caesar dressing. On top of the dressing, put the cooked chicken breasts. If you want, you can add crispy bacon slices, grated Parmesan cheese, chopped parsley, and shredded romaine lettuce on top. Put the top half of the ciabatta roll over it. Serve right away and enjoy!

This was me heading out to my last Christmas affaire of the season for Kinoko Deli. This was a labor of delight, to take care of their celebration. They serve incredible food, run a great spot, and give such incredible service that I really love to spoil them. I served them sticky brown sugar and clementine BBQ chicken, ono-licious Kaluha pork, Vegan Ultimate bbq butter beans, smoked cornbread, Chamoy and Honey dressed watermelon, Vegan Camaroonian style coconut corn on the cob, Vegan Miso Caramel candied yams, Vegan Halo Halo pie with lilikoi and strawberries, and Tomo's favorite Whisky, Brown Butter Triple Chocolate chip cookies and a Plum and Gooseberry iced tea to wash it all down with. I think it was a delicious way to fellowship. An honest moment to share your well wishes for the New Year and tighten up the bonds of comraderie. It's one of the reasons I love what I Do with true reverence. To ruminate, then research and put your intent in creating or making a dish to honor a hard working team (that does the same job, often thanklessly in the busy CBD) and execute at the highest level I am capable of, then serve them with an open heart and smiling with symbiotic pride....I mean what else is there in work? Creative. Decadent. Inclusive. Local and seasonal. Affectionate. Deliberate. Nurturing .Sexy. Primal. Sentimental. Joyful Seductive. Ministry. Thought Provoking. Dominant. Fun. Who doesn’t love risotto? And who doesn’t love easy?
When Michaela tried this, she said it tasted the same as my spinach feta orzo. And she’s not wrong (except that this uses parm, not feta). So there’s also an argument to be made for just sticking with that.
In making this, I accidentally forgot to start the pressure cook part of the IP (after sautéing), so I think my rice absorbed a lot of liquid and ended up being more... sticky?... than I wanted. So I’ll give this another try and see if it ends up significantly better or different than my orzo dish. If so, great. If not, I’ll stick with that.
