Sugar-Free Baklava

For when you need something sweet and elegant, but sugar hurts your joints.

Ingredients:

1 Cup Water

1 3/4 Cup Honey

2 tsp Orange Extract

1 whole Nutmeg

1 TBS Lemon Juice

6 oz Pistachios

6 oz Hazelnuts

6 oz Almonds

3 TBS Honey

1 pinch Nutmeg

16 oz Phyllo Dough

Up to 16 oz Sunflower Oil

First, the Sauce!

Combine the water, honey, whole nutmeg and orange extract in a pot and bring to a boil.

Reduce to a simmer and let cook for 25 minutes

Remove from heat and add lemon juice

Remove whole nutmeg

Let cool

Next, the Filling!

Chop the nuts together

Mix in the cinnamon and a pinch of nutmeg

Mix in 1-3 TBS Honey

Finally, the Phyllo!

Coat baking dish with oil

Lay down 2-3 sheets of Phyllo dough and use a pastry brush to coat with oil

Repeat step 2 until 1/3 of the Phyllo dough has been used

Cover evenly with 1/2 of the nut mixture

Repeat step 2 until 1/3 of the original Phyllo remains

Cover evenly with remaining nuts, reserving a few to sprinkle overtop the dish at the end

Repeat step 2 until there is no remaining Phyllo

Cut the uncooked baklava into rhombuses

Bake at 350 for 35-45 minutes, until golden and a toothpick comes out clean at the center

Pour cooled syrup over hot baklava

Allow to set and soak for 4-8 hours

Spooky Season - Who Needs A Pumpkin Patch?!

It's that time of year again - Spooky Season!

Families are spending valuable time and money on booking pumpkin patches to try to get that family day out and take that annual photo for Facebook & Instagram!

We stumbled on this absolute hidden gem, where there is no pumpkin patch, but there is plenty to do and so many photo ops!

Located a stone's throw from Ashbourne, Co. Meath - just outside of Dublin - Newbarn Farm has something for everyone in the family.

The Donkey Shed Restaurant is open 7 days a week, offering farm-to-fork dishes for both adults and children, as well as amazing coffee and treats for the whole family.

Newbarn Farm Shop provides homegrown vegetables, as well as locally sourced products, just like a small farmer's market.

The open farm is available to all customers, whether you sit down for a meal, grab a takeaway coffee or hot chocolate, or simply buy carrots to feed the donkeys, goats, pigs or sheep!

Most importantly, they have a huge variety of pumpkins for Spooky Season - all grown on their very own farm!

They even have a deal on in Newbarn Farm Shop - spend €25 and get a FREE pumpkin!

And last, but not least, Newbarn Farm know the struggle of locating and booking pumpkin patches... So, although they don't have a pumpkin patch, they offer something spooky for a family photo op - The Spook Booth!

There are plenty of blackboards with quotes, masks galore, and some gruesome guests to take photos with!

With this on offer, who needs a pumpkin patch?!

Have a look for yourselves, but Newbarn Farm is budget-friendly, family-friendly, dog-friendly (with outdoor seating for furry friends), and has something for everyone!

It is our time staying at the Homewood hotel in Bath. So far so good, the restaurant has a separated gluten-free menu. Both food and wine were really nice.

What I was really impressed with was my whole sea bass. The sea bass was amazing and it was actually deboned and still cooked as a whole fish. I never see fish that have been cooked in this way. It was so thoughtful and tasty!

I cannot wait to try more food in the restaurant.
