Chickpea Salad 🥗🥗 A versatile salad, which is one of my favorites on a hot summer day. I love chickpeas in any form - as a salad, as kababs, pindi chhole with bhature or rice, or blended as in hummus etc etc. Soaked the chickpeas overnight and boiled them the next day. Added tomatoes, red and yellow peppers, cilantro and mint to make this salad. Squeezed a lime and added some chaat masala, and relished it for lunch. . Somehow, salads loaded with raw greens are just difficult for me to take in. So, going big on lentils is the only way I love to have my salads. I am so crazy after chickpeas, that I boil double the batch required. The second half of this batch was used to make some Chaat recipes. Been in a crap mood on and off today. I feel off and it's a day where I'm really tired of being in the house but nervous about going for a run. Sometimes I dread social media for the reminders of people who are no longer here with us. I feel an indescribable weight that rests on me whenever I log on, particularly Facebook. I can honestly say this is the first time in a long time that I'm happy to see "pretty little pictures" and videos on a screen. I can elect to be one of those people who don't read captions when it's too much. But because I'm not that person, it's hard. My brain reads everything and feel shit that I don't want to feel. It's hard when your form of metaphorical oxygen can literally kill you. I fucking miss running without worrying if I'm going to catch something or be the reason why someone's not here if I am a carrier. Practicing patience. Practicing calm. Practicing grieving. Practicing loss. Drowning all of my feelings into creating bright dishes and pushing my bike painfully hard these days. If cooking was yoga, I'd be zen AF. By: Robin Broadfoot and Tasty - Ingredients for 4 servings 2 tablespoons olive oil 4 boneless, skinless chicken thighs, sliced salt, to taste pepper, to taste 1 lb green beans (455 g) 2 cups cherry tomato, halved (400 g) ½ cup basil pesto (115 g) Preparation In a large pan, heat olive oil and add chicken thighs. Season with salt and pepper. When the chicken is completely cooked through, remove from pan. Slice into strips, and set aside. Add green beans and cook until crisp tender. Return the chicken strips to the pan, then add tomatoes and pesto. Stir until fully incorporated. Serve immediately or divide into 4 food storage containers and store in the refrigerator. Can be kept refrigerated for up to 4 days. #Repost @beabos.care (@get_repost) ・・・ Low-carb, high protein, easy chicken stuffed zucchini boats 🚣‍♀️ 🚣‍♀️ Great recipe by @feelgoodfoodie 😄 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ INGREDIENTS 3 zucchinis Cooking spray 3/4 lb. chicken breast cut into cubes 1 Tbsp olive oil 1/4 tsp Italian seasoning 1/4 tsp garlic powder 1/4 tsp salt 1/4 tsp ground black pepper 3/4 cup pasta sauce 1/4 cup grated parmesan cheese 1/4 cup shredded mozzarella cheese . INSTRUCTIONS Preheat oven to 400°F. To prepare the zucchini, cut the zucchini in half lengthwise, then use a spoon or melon baller to scoop the center flesh and seeds from the zucchini. Repeat for the remaining zucchini. Place the zucchini in a baking dish or cookie sheet cut-side up and lightly coat with cooking spray. Place in the pre-heated oven for 15 minutes until the zucchini cooks slightly and becomes tender. Meanwhile, to prepare the chicken, heat the olive oil in a large non-stick skillet over medium-high heat. Add the chicken along with the seasoning, salt and pepper. Cook for 8-10 minutes until the chicken is cooked through. Add the pasta sauce and cook for an additional 2 minutes, stirring occasionally. Scoop the chicken mixture into the zucchini boats.
