25. Acid Reflux/Heartburn

Fao knew eating Chinese takeaway so  late at night had been a mistake. Him and Hars had both finished late after their shifts, exhausted and not about to cook. They picked it up on the way home, not walking in the door until about 9. By that point they were tired and starving, and curled on the couch, the food quickly disappeared. 
Full and content (and half asleep) the pair of them went to shower. After a long and frustrating day, the hot water was exactly what they needed. Fao slipped out for a smoke before bed whilst Harrison was in the shower, letting the dog out at the same time. 
The dog finished and looking for attention, Fao finished his cigarette and headed back inside. He took his evening meds, brushed his teeth, and then settled in bed with his boyfriend, content. Their day had not only been long, but emotionally draining too, and they spent a little bit of time talking softly about their day, able to offload on each other about their own worries. It was so nice, to have someone who got it. Their patients weren’t always the same, and the worries were often different, but there was a mutual understanding. Soon the conversation turned to lighter things, and not long after that the pair of them were asleep. 
Except Fao woke up a couple of hours later, nauseous and with a burning in his chest. There was admittedly a flutter of panic, concerned his AF was flaring again, but it eased slightly when he sat up, and as he woke a little more, he realised it was nothing more than acid. Of course it was. They’d eaten late, and Fao had picked a few of his favourites, with plenty of salt and chilli. He’d barely been able to eat all day, it was no surprise the sheer amount of food and the spice was setting him off after having an empty stomach all day. God, was this what getting old was like? Fucking heartburn. Way to make him panic in the middle of the night.
Rubbing his chest absently, he slipped out of bed, trying not to disturb his boyfriend and the dog. He padded across the room to the bathroom, digging around in the cupboard for some antacids. He knew there were some in there somewhere, he just couldn’t bloody find them.
Harrison had half woken up when Fao got up, missing the warmth of the bed. He figured Fao would be back in a few moments, but when he didn't hear the running of water and Fao didn't reappear, worry kicked in. 
"Fao? You okay?" He called, struggling to get his leg on quickly. 
“Mm?” Fao hummed distractedly. “‘M okay.”
"You haven't come back. What's wrong?"
“Heartburn.” He grumbled. “Can’t find the Rennies.”
"Heartburn?" Harrison's stomach flipped. "Are you sure?"
“Yeah. My own fault for eating too late and too much chilli.” He grumbled. 
Harrison had finally managed to get to the bathroom, and he wrapped an arm around Fao's waist. "Are you sure? Can you sit down?"
Fao leaned into him. “Hars, I’m fine.”
"You said that last time. Come on, sit, let me check you over."
“Seriously? I’m fine, I swear.” Fao said, but reluctantly sat down. “Can you at least find some antacids?”
He hummed, rummaging through the cupboards. "Where's the aspirin?"
“I don’t need aspirin, I took my meds tonight. I need fucking Rennies.” 
"But just in case."
“I don’t need it. My heart is fine.”
"You've got pain. In your chest."
“I’ve got heartburn because I sleep on my stomach. And I ate spicy greasy food just before bed.”
"Fine. Rennies now, then let me check you over."
“Yeah, sure.”
Harrison passed him the box before awkwardly crouching in front of him. "Let me check."
Fao took one from the box, unwrapping it and chewing on it. He winced at the flavour, but it would at least fix this problem. “Go for it. I’m fine.”
He took Fao's wrist in his hand, gently feeling for his pulse. He hated to admit that it felt normal, and Fao didn't look anything like he'd expected if he was having issues with his AF. Maybe Fao was fine, and maybe Harrison was overreacting just a little bit. As much as he would never admit it, their early wake up call with his AF had hit Harrison harder than he'd expected. Every stumble, every time he rubbed his chest, or stood up too quickly and had to steady himself had Harrison’s own heart racing, fear rising in his throat.
“All okay? It still feels a bit wonky sometimes when you take it but I feel completely fine.”
Harrison rocked back onto his heels. "Yeah."
“Can I go back to bed then?”
"If you're absolutely sure you’re fine?"
“I’m fine. This is just heartburn, go and find your steth if you’re so worried.”
"I don't want to leave you alone." He admitted, not looking Fao in the eye.
“I’ve got legs, I’ll come with you.”
"No. You can't."
“I’ll go to bed and wait there.”
"No, because then I'll have left you."
“Honestly, Tomcat, I feel fine. If you’re worried let me walk with you and give you peace of mind.”
"I just can't lose you."
“I’m not going anywhere. I’d tell you if I felt bad, honestly.” He stood up stiffly. “Come on, what can I do to put your mind at rest? Apart from an ECG, because we’ve not got one at home.”
"I don't know."
“Let’s just go back to bed, then?”
Harrison hung his head. "I can't."
“Hars, I love you, and I want to help you, but it’s the middle of the night and I’m tired. Can we go back to bed?” Fao said softly.
"If you want to help me," he admitted quietly, "you can help me up. I'm stuck."
“Oh.” Fao couldn’t help but laugh. “You idiot, come here.” He stood up and offered Harrison his hands. 
Harrison took them gratefully, struggling up to standing. "The ankle keeps locking up, I need to get it seen to."
“I can have a look tomorrow, if you don’t want to take it somewhere?” Fao offered. “Can’t promise I’ll help, but I’ll try.”
"It's okay. I'll just ignore it again."
“Nah, you’ll get stuck somewhere again.”
"You can just rescue me."
“I’ll follow you around then, waiting to scoop you up like a Knight in shining armour?”
Harrison leaned in, wrapping his arms around Fao. "Sounds good."
“A knight with a dodgy heart.” He murmured, leaning into him. 
"Better than one with no leg."
“We make a right pair, don’t we?”
After a moment together like that, the pair of them headed to bed. Fao curled up against Harrison, humming contentedly. He hadn’t meant to scare him, he’d just not been able to find the antacids. Now he’d found them, he felt better, and soon fell asleep again.

روزانه چه مقدار کالری نیاز دارید؟ معادله هریس بندیکت، به عنوان اصل هریس بندیکت شناخته می شود و به منظور برآورد مقدار BMR یک شخص ( میزان سوخت و ساز پایه ) و انرژی مورد نیاز روزانه می باشد. توجه: این معادله محدودیتهایی دارد. زیرا حجم مختلف توده عضلانی و توده چربی را در نظر نمی گیرد – یک فرد بسیار عضلانی به کالری بیشتری نیاز دارد حتی زمانی که استراحت می کند.

APPELLO ALLA SOLIDARIETÀ INTERNAZIONALE CON IL MOVIMENTO ANARCHICO, GLI SQUAT, * RIFUGIAT* E * IMMIGRAT* E LA RESISTENZA SOCIALE E DI CLASSE IN GRECIA
Dall’estate scorsa – dopo le elezioni del 7 luglio ed il cambio di governo – è in corso una campagna repressiva di stato in Grecia, che, sin dall’inizio, ha preso di mira la popolazione che lotta – e in particolare il movimento anarchico – gli squat e le strutture auto-organizzate del movimento, * rifugiat* e * immigrat* e la resistenza sociale e di classe in generale.
Uno dei primi passi del nuovo governo di destra è stato l’abolizione della libertà di asilo universitario (per il quale l’esercito o la polizia non possono entrare in una sede universitaria senza l’approvazione del rettore), la militarizzazione del quartiere di Exarcheia – un quartiere di Atene con un passato e un presente ricchi di lotte – e lo sfratto di squat per rifugiati e il successivo trasferimento di centinaia di rifugiat* e immigrat* nei campi di concentramento, realizzando in questo modo le politiche anti-immigrazione dell’UE, dirette al moderno totalitarismo.
Questa campagna di repressione continua, sono previsti nuovi sfratti di squat, e intanto, per mezzo di una serie di nuove leggi, viene sostanzialmente abolita la libertà di sciopero, viene promossa la privatizzazione dei bisogni sociali di base ed è completamente liberalizzato il saccheggio delle risorse naturali da parte delle multinazionali in ogni parte del paese.
Dall’altro lato, i collettivi sociali, di classe e politici stanno già tentando di costruire le prime barricate contro i piani antisociali dello stato e dei padroni. La manifestazione di massa del 14 settembre 2019, organizzata dall’assemblea “NO PASARAN”, è stata una prima risposta dinamica contro i piani dello stato, da parte di migliaia di persone che lottano per le strade, affermando chiaramente che il movimento non si ritirerà davanti alla repressione statale. Continuerà a combattere su tutti i fronti, in cui si sta svolgendo un attacco statale e capitalistico.
Contro l’attacco repressivo dello stato greco e la sua imminente escalation, siamo solidali con il movimento anarchico, gli squat politici e gli squat per immigrati e rifugiati e le realtà di lotta – dagli squat Mundo Nuevo e La Libertatia a Salonicco, che è quasi completamente ricostruito, per lo squat Lelas Karagianni 37 ad Atene (con 30 anni di storia alle spalle), e con tutte le lotte sociali e di classe in Grecia.
Le rivolte popolari in Ecuador e in Cile, la vigorosa resistenza nel rivoluzionario Rojava, le continue mobilitazioni in Grecia, Francia, Turchia, Palestina, i piccoli e più grandi atti di resistenza in tutto il mondo ci danno speranza e forza e dimostrano che il nemico è forte ma non invulnerabile. Intensifichiamo e diffondiamo la lotta combattiva e organizzata per la rivoluzione sociale, per l’anarchia!

Growing to death: A punctuated extinction (part 3 of 3)
Fortunately, we have an increasing number of systemic-oriented movements challenging the mechanical minded, offering counter hegemonic options for a new social ecology4. The essence of such new social networks must reinforce as its primary function, the vitality of true systemic integration underlying a “one-earth lifestyle”1, 5. Should we remain unwilling to make needed variations to our excessive consumption, then we must be reminded that we are dealing with natural complex adaptive systems, and that adjustments will eventually and finally be thrust upon us, via nature’s own regulatory response1, should we not adopt a managed process by design5. The rapidity of our ecosystem changes5, should have alerted us into immediate action. Instead, all countries and nations are still instructed to pursue goals of constant growth, as opposed to seeking well-being5 (a key tenet of a new social ecology)1. Astute critics decries our selfishness, individualism and greed that drive consumption and acquisitiveness6. Others warn of problems arising from the expansion of the machine civilization, urging we end wars and human misery7. These holistic insights recognise our classic economic and development as flawed7, warning of the unopposed movement toward the “robotisation of the individual”7.
Today, this view of humanity is a reality, where we are seen and treated as consuming machines6 constantly having to pay taxes to governments, and profits to corporations. Mechanical leadership across both public and private sector fear a re-awakening in valuing how powerful we are as individuals who form collectives. As individuals we form the backbone of societies and thus expect to be governed by accountable and responsible persons, since it is the condition of basic freedom that we be ruled by an authority that we control6. In modern day acquisitive societies, both governments and corporations have a fixed interest in constantly promoting the accumulation of things – the one require citizens to pay taxes; the other demand profits. The chief mechanism of the acquisitive society promises “unfettered freedom” to the successful or strong, whilst the rest of us must strive toward this elusive goal6. This absorbing vision of infinite expansion, vaporise our moral fabric6, since we do not become religious or wise or artistic as these domains imply knowing and accepting limits. Instead, we wish to dominate and change the face of nature6. These warnings uttered almost 100 years ago has become our reality, and serve as a powerful exemplar of our negligence. Our destructive development models have taken us to the precipice of a self-induced extinction (Anthropocene). Institutional leaders continue to turn a blind eye and a deaf ear to our greatly flawed development path1. It speaks to the alluring power of consumption cartels, distracting us with our own vanity, and numbing our intellect by occupying us with irrelevant gadgets1, 6, 8.
Ironically, capital owners and industrialists retain models that plunder our GPG’s, whist indigenous peoples are trying to preserve it8. A power dynamic, evident between Rich-Poor or North-South that underlie exploitative themes that resist adoption of systemic lifestyles1, 6, and instead opt for congruence of self-interest8. It is fortuitous that we have so many movements speaking up, and who are committed to free us from the mechanistic leadership punting the fraud of “compete-or-die” logic9.

«Είμαστε πάντα ένα βήμα πίσω από τον ιό, κανείς δεν ξέρει πότε θα επιστρέψουμε στην κανονικότητα», δήλωσε ο κυβερνήτης της Νέας Υόρκης, την ώρα που ο Λευκός Οίκος εκτιμά ότι οι θάνατοι πιθανόν να φτάσουν τις 100 με 200 χιλιάδες.
Το στρατηγικό απόθεμα προστατευτικού εξοπλισμού για το ιατρικό και νοσηλευτικό προσωπικό καταστάσεις εκτάκτου ανάγκης έχει σχεδόν εξαντληθεί, δήλωσαν δύο αξιωματούχοι του υπουργείου Εσωτερικής Ασφαλείας των ΗΠΑ, ενώ το αντέκρουσε ο πρόεδρος των ΗΠΑ Ντόναλντ Τραμπ, τονίζοντας πως το υλικό μεταφέρεται απευθείας σε αυτούς που το χρειάζονται.
Αλλά και στην Τουρκία, επιστήμονες προειδοποιούν ότι «η ορμή του κορονοϊού είναι η ταχύτερη στον κόσμο». Η κατάσταση δείχνει εξαιρετικά κρίσιμη στη γειτονική χώρα όπου παρατηρείται απότομη αύξηση των κρουσμάτων και θανάτων, και σύμφωνα με τα τελευταία στοιχεία, όπως μεταδίδει η Αριάνα Φερεντίνου από την Κωνσταντινούπολη οι θάνατοι ανέρχονται σε 214 και μόνο τα επιβεβαιωμένα κρούσματα είναι 13.531. 21 τουρκικές πόλεις έχουν τεθεί σε καραντίνα.
Κομισιόν: «Σύστημα Στήριξης Κλινικής Διαχείρισης της νόσου»
Με στόχο τη βοήθεια στους ιατρούς των νοσοκομείων που αντιμετωπίζουν την έκτακτη ανάγκη του κορωνοϊού σε ολόκληρη την Ευρώπη, η Ευρωπαϊκή Επιτροπή εγκαινίασε το “Σύστημα Στήριξης Κλινικής Διαχείρισης της νόσου COVID-19”. Πρόκειται για ένα σύστημα διασύνδεσης μεταξύ των νοσοκομείων αναφοράς για τον κορονοϊό σε ολόκληρη την Ευρώπη, ώστε οι γιατροί να μπορούν σε πραγματικό χρόνο να ανταλλάσσουν απόψεις για τον τρόπο αντιμετώπισης σοβαρών και πολύπλοκων περιπτώσεων, όπως μεταδίδει ο Γιώργος Συριόπουλος.
Συγκλονίζει ο αριθμός των νεκρών στην Ισπανία. 9.000 οι θάνατοι και πάνω από 100.000 τα κρούσματα από τον κορονοϊό. Σύμφωνα με νέα έρευνα, ο ιός παραμένει ζωντανός στο σώμα όσων νόσησαν, ακόμη και 8 μέρες αφότου εξαφανιστούν τα συμπτώματα, συνεπώς μπορούν να τον μεταδώσουν σε άλλους, μεταδίδει η Δώρα Μακρή από τη Μαδρίτη.

Στην Ιταλία, η καμπύλη μετάδοσης δείχνει να ομαλοποιείται και ο ρυθμός μετάδοσης του κορονοϊού συνεχίζει να είναι χαμηλότερος σε σχέση με την προηγούμενη βδομάδα. Ωστόσο οι θάνατοι ανέρχονται σε 837 το τελευταίο 24ωρο. 12.400 συνολικά, ο απολογισμός, όπως μεταδίδει ο Κρίστιαν Μαυρής.
Στη Γαλλία, μετά το νέο ρεκόρ θανάτων, οι ΜΕΘ έχουν ξεπεράσει τα όριά τους. Μέσα σ`αυτό το κλίμα, ο υπουργός Εσωτερικών προειδοποίησε ότι δεν φεύγει κανένας διακοπές το Πάσχα, κατα τη διάρκεια καραντίνας. Από το Παρίσι μεταδίδει η Θωμαϊς Παπαϊωάννου.
«Μας στέλνουν στον θάνατο με γυμνά χέρια»,
καταγγέλλει το υγειονομικό προσωπικό μπροστά στην έλλειψη προστασίας στην Ρουμανία, μία από τις φτωχότερες χώρες της Ευρωπαϊκής Ενωσης, όπου ο αριθμός των θανάτων έφθασε σήμερα τους 85. Ορισμένοι υπογράφουν διαμαρτυρίες, άλλοι στρέφονται στα μέσα κοινωνικής δικτύωσης για να εκφράσουν την οργή τους και άλλοι – μερικές δεκάδες μέχρι σήμερα- παραιτούνται. Στα 2.450 επιβεβαιωμένα κρούσματα στην χώρα, τα 300 αφορούν μέλη του υγειονομικού προσωπικού.
Στη Βρετανία, ο αριθμός των θανάτων είναι 1824, δηλαδή έχει διπλασιαστεί τις τελευταίες 24 ώρες, με ένα 13χρονο αγόρι να είναι το νεαρότερο θύμα, στο Ηνωμένο Βασίλειο. Δύο ημέρες νωρίτερα στο ανατολικό Λονδίνο απεβίωσε 19χρονος χωρίς υποκείμενο νόσημα, υπενθυμίζει η ανταποκρίτρια της ΕΡΤ, Ευδοξία Λυμπέρη.
Στη Γερμανία, οι θάνατοι ανέρχονται σε 732 και τα κρούσματα ξεπερνούν τις 67.000. Σύσκεψη με τους τοπικούς πρωθυπουργούς συγκάλεσε η Άνγκελα Μέρκελ, ενώ εκτιμάται ότι οι δυσμενείς εξελίξεις δεν αφήνουν κανένα περιθώριο για άρση των μέτρων. ¨οπως ενημερώνει από το Βερολίνο ο Γιώργος Παππάς, συνεχείς είναι οι προειδοποιήσεις για δραματική συρρίκνωση της οικονομίας.
Υπέρ της έκδοσης ευρωπαϊκού κορονο-ομολόγου τάσσονται οι Γερμανοί Σοσιαλδημοκράτες, προκρίνοντας ταυτόχρονα το ΕυρωπαΙκό Ταμείο ESM, χωρίς αυστηρούς όρους.
Στο Βέλγιο, τα κρούσματα έφτασαν τις 14.000 και οι ειδικοί παρατηρούν επιβράδυνση της εξάπλωσης. 5000 ασθενείς νοσηλεύονται, εκ των οποίων 1088 στην εντατική. 2100 άνθρωποι θεραπεύτηκαν, αλλά ο αριθμός των θανάτων αυξήθηκε στους 828.
Στην Ολλανδία, ο Μαρκ Ρούττε ανακοίνωσε παράταση των ειδικών μέτρων μέχρι τις 28 Απριλίου αναφέροντας πως ‘η εικόνα στα νοσοκομεία και τις μονάδες της εντατικής δεν αφήνει καμία άλλη επιλογή’, και άφησε ανοιχτό το ενδεχόμενο ��ια περαιτέρω παράταση, χωρίς ωστόσο να επιβληθούν επιπλέον μέτρα, από όσα προβλέπει το λεγόμενο ‘έξυπνο κλείδωμα’. Κίνα: Τράπεζα δεδομένων στις μέχρι πρότινος εστίες
Οι υγειονομικές αρχές της Κίνας άρχισαν από σήμερα να δημοσιοποιούν δεδομένα για τα ασυμπτωματικά κρούσματα μόλυνσης από τον κορωνοϊό, στο πλαίσιο της προσπάθειάς τους να καθησυχάσουν την κοινή γνώμη, που φοβάται ότι η επιδημία θα αρχίσει να εξαπλώνεται ξανά, από ανθρώπους που δεν γνωρίζουν καν πως είναι φορείς.
Αυτό εγείρει ανησυχίες για το ενδεχόμενο χιλιάδες άνθρωποι που αγνοούν πως είναι φορείς του ιού να αρχίσουν να κυκλοφορούν χωρίς να έχουν υποβληθεί σε τεστ.
Μέχρι σήμερα, ο αριθμός των γνωστών ασυμπτωματικών φορέων παρέμενε απόρρητος δεν συμπεριλαμβανόταν στα επίσημα δεδομένα που δημοσιοποιεί η Εθνική Επιτροπή Υγείας.
Η Νότια Κορέα ανακοίνωσε στο μετξύ, ότι έχει λάβει αιτήματα από 121 χώρες για να τις βοηθήσει με τα τεστ του κορονοϊού. Στα διαγνωστικά τεστ, που έγιναν μαζικά στη Νότια Κορέα σε συνδυασμό με την εντατική ιχνηλάτηση των επαφών των κρουσμάτων, πιστώνεται ότι συνέβαλαν στην επιβράδυνση της διάδοσης του κορονοϊού στη χώρα, η οποία είχε κάποτε τα περισσότερα κρούσματα μετά την Κίνα.
ΟΗΕ-ΠΟΕ: Υπαρκτός ο κίνδυνος παγκόσμιας διατροφικής κρίσης
Τον κώδωνα του κινδύνου ότι υπάρχει κίνδυνος «διατροφικής έλλειψης» στην παγκόσμια αγορά λόγω των διαταράξεων που συνδέονται με την COVID-19 στο παγκόσμιο εμπόριο και στις αλυσίδες εφοδιασμού σε τρόφιμα, κρούουν οι πρόεδροι δύο υπηρεσιών του ΟΗΕ και του ΠΟΕ.
«Οι αβεβαιότητες που συνδέονται με τη διαθεσιμότητα των τροφίμων μπορούν να προκαλέσουν ένα κύμα περιορισμών στις εξαγωγές», με αποτέλεσμα μια «έλλειψη στην παγκόσμια αγορά», δηλώνουν σε ένα σπάνιο κοινό ανακοινωθέν ο Κινέζος Κου Ντονγζιού, που διευθύνει την Οργάνωση των Ηνωμένων Εθνών για τα Τρόφιμα και τη Γεωργία (FAO), ο Αιθίοπας Τέντρος Αμπχανόμ Γκεμπρεγεσούς, γενικός διευθυντής του Παγκόσμιου Οργανισμού Υγείας (ΠΟΥ) και ο Βραζιλιάνος Ρομπέρτου Αζεβέδου, διευθυντής του Παγκόσμιου Οργανισμού Εμπορίου (ΠΟΕ).Οι τρεις οργανισμοί ανησυχούν ιδιαίτερα για την «επιβράδυνση της κυκλοφορίας εργαζομένων της αγροτοδιατροφικής βιομηχανίας» που μπλοκάρουν πολλούς αγροτικούς τομείς δυτικών χωρών, και για τις «καθυστερήσεις στα σύνορα» των εμπορευματοκιβωτίων που προκαλούν «αναταραχές στα φθαρτά προϊόντα και αύξηση της διατροφικής σπατάλης».

Is 2019 the year of the coffee competition statement? At two separate North American competitions this past weekend, competitors from the United States and Canada used their stage time to make the case for change in the specialty coffee industry.
Social statements and impassioned messaging on the competition stage have a long history, and are part of what we love so much about these events. This year we’re seeing competitors risk serious points and intentionally jeopordizing their ability to advance in order to make some of the biggest, boldest statements we’ve seen yet. In Toronto, at the 2019 Canadian Barista Championship, competitor Chris Tellez confronted a long-established rule that disallows plant milks on the World Barista Championship stage. That would be Rule 2.2.2, which states “a milk beverage is a combination of one single shot of espresso… and steamed cow’s milk.” Tellez broke the rule willingly and with purpose, serving his judges milk drinks made using Minor Figures oat milk, earning zero points for the milk drink portion of his routine and resulting in a de facto disqualification.��Check out the full rules here (via download) and you’ll see it under the section “Beverage Definitions.”

It’s fair to say this rule is outdated AF. In this day and age, so many coffee professionals work at the highest level using alternative milks—because their customers prefer it, mostly, though for some the choice runs deeper. Tellez, who is vegan, feels strongly that the competition stage can be a place for positive change. “There is not a single rule in the competition besides this one which puts into question a fundamental value that a person may have,” he tells Sprudge in the interview below. “[This rule] forces them to compromise in order to compete.”
Coffee competition rules are not etched upon some great inviolate tablet; indeed, they are annually evaluated and codified before each event season begins. The small group of coffee professionals who cooked up the barista competition format 20 years ago could have never predicted the quality of alternative milk we have today, especially the delightful steaming properties of oat milk. Hey Chris — thanks for speaking with Sprudge. How did the plan for this statement come into place? How long have you been working on it?
Chris Tellez: I had thought about this idea since my last time competing, but was unsure of how to make it work, especially because the availability of great plant-milks is a pretty recent occurrence. I first shared this idea with my partner, and then my very dear friend Priscilla Fisher of Floozy Coffee Roasters. I think right away they both saw the intention behind it, and how important it was to me and encouraged me to make it happen. I really went back and forth, trying to decide if this was the best course of action for a long time, but once it came time to actually sign up I knew two things for sure. That I wanted to compete, and that I just could not justify using an animal product in order to do so.
What was the reaction in the room like? Have you heard from a lot of people since the performance?
Pin drops followed by a wave of applause… pretty wild actually. I have never received that kind of a response from a performance. I can say that it definitely wasn’t the most tight, perfect performance I have ever given, but I think the honesty of what I was doing resonated with people.
I have heard from a ton of people, lots of friends, lots of people I’ve never met. Overall it was a very positive response, though I am sure I will continue to hear from people in the next little while with all kinds of reactions, though I hope these come in the form of thoughtful discourse, as that is really what I am trying to create with all this.

Talk to us about coordinating your routine with a petition—we’ve never seen something quite like that before. 
Floozy was paramount in making this happen, and we most definitely planned to have the petition ready to sign once the performance was over. I also want to be super clear that the petition is coming from a place of huge respect and admiration for the competition. This competition has meant so much to me and my career over the years, and this is simply about testing the waters to see how many other people are interested in creating a dialogue surrounding this potential rule change. Floozy was a huge part of making this happen I truly hope that the WCE view this simply as a barometer of the industry, rather than an attack on all the incredibly hard work they do for us as baristas. I want this to spark respectful, honest dialogue and to help us all move forward, if that is what enough of the industry decides is important.
What role did your veganism play in the decision to make this statement?
I am vegan, and have been for the better part of the past 13 years. There was a short period where I was consuming animal products again, which coincided with a pretty heavy bout of depression, and manifested in an eating disorder. It was through becoming plant-based again that I was able to regain some of my balance and work through some of that trauma. this is something I’ve been really open about in the industry, and even lead a talk last year at the SCA Canada workshop all about Personal Wellness in the coffee industry.
My veganism most definitely played a role in my decision to do this, but regardless I think just looking at the pure environmental impact of milk and it’s major role in the carbon footprint of the coffee industry at the cafe level is enough to give anyone pause. Most of the numbers I pulled were from the United Nations’ FAO report on Dairy production, and since this is a global competition it felt like the most accurate numbers to describe our situation as an industry.
The other reality is that there are a lot of places in my life where I am not the most sustainable, eco-friendly and responsible as I could be, so this is no way is some kind of holier than thou sort of thing. I still drive a car, I still buy new clothing instead of getting everything first hand, I still have an iPhone, I have all the same habits as everyone else, but my veganism, and by extension this routine is my way of trying to offset those things a little, especially considering how environmental demanding our industry can be.

There is perhaps a critique to be made that by making this statement in competition you “took away a spot from someone else” or somehow demeaned the competition culture. Have you heard this critique? How do you respond?
This is a really, really important point. In fact, one of the competitors brought it up to me immediately after my performance backstage. She had been lucky enough to get a space after being on the wait list, and she was understandably upset with the idea of a competitor doing something like this. I believe she felt that I was not taking the competition seriously and that I was taking away a spot from someone who would. This is a valid critique and it is one a thought about a lot both before the competition, and since competing yesterday. I am really grateful that she expressed her feelings about it, and it was a really honest and respectful conversation, one I hope we can actually continue after the competition . I have two main points about this.
Firstly, she should be mad, it’s ridiculous for a competitor to have to either take zeroes or get disqualified for choosing not to use a product that disagrees with their value system. It’s a waste of a spot and it is not fair to any competitor, including myself. There is not a single rule in the competition besides this one which puts into question a fundamental value that a person may have and forces them to compromise in order to compete. We may disagree with aspects of drink or presentation scoring, or technical evaluation, but I really can’t think of a rule which is quite like this one in. So I am glad she is upset, and I think we should focus that into seeing some change.
Secondly, I sat out of the competition for three years, waiting for this rule to change, and nothing happened. I really wanted to compete this year, I mean, I love the competition, but I just couldn’t compartmentalize my beliefs just to compete. I took the competition seriously and I have great respect for it, but I just couldn’t agree with this one rule. You could argue that if you don’t agree to the rules, you shouldn’t be in the competition, and I understand that thinking, but I also know that real change happens more readily and rapidly when people take chances. I have a good record in the competition, and I think I could have done really well this year if I had used dairy milk, so just as much as I took a spot from another competitor, I put my own chances of winning aside in order to open dialogue that I really hope speaks for a group of people in the industry that perhaps have never competed because of a rule like this. I hope the net benefit is larger than just a single competitor.
I suppose people can look at it like a stunt, or like I am just trying to be controversial, but what I hope is that more and more the competition is used as a platform for change in our industry, in a way which still honours the competition culture itself, which was the concept of my entire routine and speech. Just this weekend at the US Coffee Champs we are seeing some really progressive conversations happening on stage, and I really just hope that this is seen in this light.
What’s your all-time favorite desert island alt milk?
Well, I ended up using the Minor Figures Oat milk for the competition, because it worked best with my coffee, and they’ve been super supportive of us in our cafes. But for everyday use at home in smoothies, cereal or whatever else, I am trying my best to make milk myself, because there is no waste in packaging and I can use Canadian oats and hemp!

Sprudge caught up with Tellez digitally in the middle of one hell of a North American coffee competition weekend. Verily this story was originally intended to be a brief news piece but the interview came back great so we’re running the whole thing. Read on.

Hey Chris — thanks for speaking with Sprudge. How did the plan for this statement come into place? How long have you been working on it?
Chris Tellez: I had thought about this idea since my last time competing, but was unsure of how to make it work, especially because the availability of great plant-milks is a pretty recent occurrence. I first shared this idea with my partner, and then my very dear friend Priscilla Fisher of Floozy Coffee Roasters. I think right away they both saw the intention behind it, and how important it was to me and encouraged me to make it happen. I really went back and forth, trying to decide if this was the best course of action for a long time, but once it came time to actually sign up I knew two things for sure. That I wanted to compete, and that I just could not justify using an animal product in order to do so.
What was the reaction in the room like? Have you heard from a lot of people since the performance?
Pin drops followed by a wave of applause… pretty wild actually. I have never received that kind of a response from a performance. I can say that it definitely wasn’t the most tight, perfect performance I have ever given, but I think the honesty of what I was doing resonated with people.
I have heard from a ton of people, lots of friends, lots of people I’ve never met. Overall it was a very positive response, though I am sure I will continue to hear from people in the next little while with all kinds of reactions, though I hope these come in the form of thoughtful discourse, as that is really what I am trying to create with all this.

Talk to us about coordinating your routine with a petition—we’ve never seen something quite like that before. 
Floozy was paramount in making this happen, and we most definitely planned to have the petition ready to sign once the performance was over. I also want to be super clear that the petition is coming from a place of huge respect and admiration for the competition. This competition has meant so much to me and my career over the years, and this is simply about testing the waters to see how many other people are interested in creating a dialogue surrounding this potential rule change. Floozy was a huge part of making this happen I truly hope that the WCE view this simply as a barometer of the industry, rather than an attack on all the incredibly hard work they do for us as baristas. I want this to spark respectful, honest dialogue and to help us all move forward, if that is what enough of the industry decides is important.
What role did your veganism play in the decision to make this statement?
I am vegan, and have been for the better part of the past 13 years. There was a short period where I was consuming animal products again, which coincided with a pretty heavy bout of depression, and manifested in an eating disorder. It was through becoming plant-based again that I was able to regain some of my balance and work through some of that trauma. this is something I’ve been really open about in the industry, and even lead a talk last year at the SCA Canada workshop all about Personal Wellness in the coffee industry.
My veganism most definitely played a role in my decision to do this, but regardless I think just looking at the pure environmental impact of milk and it’s major role in the carbon footprint of the coffee industry at the cafe level is enough to give anyone pause. Most of the numbers I pulled were from the United Nations’ FAO report on Dairy production, and since this is a global competition it felt like the most accurate numbers to describe our situation as an industry.
The other reality is that there are a lot of places in my life where I am not the most sustainable, eco-friendly and responsible as I could be, so this is no way is some kind of holier than thou sort of thing. I still drive a car, I still buy new clothing instead of getting everything first hand, I still have an iPhone, I have all the same habits as everyone else, but my veganism, and by extension this routine is my way of trying to offset those things a little, especially considering how environmental demanding our industry can be.

There is perhaps a critique to be made that by making this statement in competition you “took away a spot from someone else” or somehow demeaned the competition culture. Have you heard this critique? How do you respond?
This is a really, really important point. In fact, one of the competitors brought it up to me immediately after my performance backstage. She had been lucky enough to get a space after being on the wait list, and she was understandably upset with the idea of a competitor doing something like this. I believe she felt that I was not taking the competition seriously and that I was taking away a spot from someone who would. This is a valid critique and it is one a thought about a lot both before the competition, and since competing yesterday. I am really grateful that she expressed her feelings about it, and it was a really honest and respectful conversation, one I hope we can actually continue after the competition . I have two main points about this.
Firstly, she should be mad, it’s ridiculous for a competitor to have to either take zeroes or get disqualified for choosing not to use a product that disagrees with their value system. It’s a waste of a spot and it is not fair to any competitor, including myself. There is not a single rule in the competition besides this one which puts into question a fundamental value that a person may have and forces them to compromise in order to compete. We may disagree with aspects of drink or presentation scoring, or technical evaluation, but I really can’t think of a rule which is quite like this one in. So I am glad she is upset, and I think we should focus that into seeing some change.
Secondly, I sat out of the competition for three years, waiting for this rule to change, and nothing happened. I really wanted to compete this year, I mean, I love the competition, but I just couldn’t compartmentalize my beliefs just to compete. I took the competition seriously and I have great respect for it, but I just couldn’t agree with this one rule. You could argue that if you don’t agree to the rules, you shouldn’t be in the competition, and I understand that thinking, but I also know that real change happens more readily and rapidly when people take chances. I have a good record in the competition, and I think I could have done really well this year if I had used dairy milk, so just as much as I took a spot from another competitor, I put my own chances of winning aside in order to open dialogue that I really hope speaks for a group of people in the industry that perhaps have never competed because of a rule like this. I hope the net benefit is larger than just a single competitor.
I suppose people can look at it like a stunt, or like I am just trying to be controversial, but what I hope is that more and more the competition is used as a platform for change in our industry, in a way which still honours the competition culture itself, which was the concept of my entire routine and speech. Just this weekend at the US Coffee Champs we are seeing some really progressive conversations happening on stage, and I really just hope that this is seen in this light.
What’s your all-time favorite desert island alt milk?
Well, I ended up using the Minor Figures Oat milk for the competition, because it worked best with my coffee, and they’ve been super supportive of us in our cafes. But for everyday use at home in smoothies, cereal or whatever else, I am trying my best to make milk myself, because there is no waste in packaging and I can use Canadian oats and hemp!

African swine fever: China marks new front in battle against deadly disease
BEIJING (Reuters) – China is battling to control the rapid spread of deadly African swine fever (ASF) across the world’s largest hog herd after four outbreaks in three weeks, stoking worries the disease could spread to Southeast Asia.

The discovery of ASF in China, which accounts for nearly half the world’s pork production and is the world’s highest per capita consumer of the meat, marks a new front in the disease’s spread from Europe through Russia.

“The swine industry has never seen an ASF outbreak in such a production landscape, and control measures are untested,” warned the Swine Health Information Center, a U.S. research body.
*SYMPTOMS
ASF is the most devastating swine disease. It causes fever, hemorrhaging in the skin and internal organs and death in 2-10 days, according to the World Organisation for Animal Health (OIE).
Mortality rates can be as high as 100 percent.
It is transmitted by ticks and direct contact between animals, and can also travel via contaminated food, animal feed, and people traveling from one place to another. There is no vaccine. It is not harmful to humans.
*FROM RUSSIA, WITH SWINE FEVER
Russia, the largest country by land mass hit by the infection, has spent a decade struggling to control the disease. ASF has killed around 800,000 pigs, infected pig farms owned by top agricultural companies, including Miratorg and RusAgro, and reduced small-hold farm pork production by half.
Its gradual spread over the past year or so across Russia toward China’s borders, had left Chinese pigs vulnerable to infection, experts say.
An outbreak in Irkutsk in March 2017 marked the disease’s first long jump from central eastern Europe to eastern Russia, 1,000 km from the Chinese border, according to the United Nations Food and Agriculture Organization (FAO).
The strain discovered in China is similar to the one in Russia, Georgia and Estonia, Wantanee Kalpravidh, project regional manager at the FAO’s Emergency Centre for Transboundary Animal Diseases in Bangkok, Thailand, told Reuters on Friday.
From 2007 to July 2017, there were 5,445 cases in continental Europe, including 903 in Russia.
*CHINA’S CHALLENGE
The FAO warned in a report in March that the spread of AFS to China would have “devastating consequences for animal health, food safety and food security and raise the possibility of further spread to Southeast Asia.”
Experts are still trying to establish the source of the first infection in the city of Shenyang in the northeastern province of Liaoning on Aug. 3, said the FAO’s Kalpravidh.
The vast distances between outbreaks in China, with infections appearing in four provinces in a short period of time, has highlighted the challenge for Beijing in controlling the disease.
To put the distance into context, the four provinces that have reported infections have a combined size around that of Spain.
To reach Wenzhou, the location of China’s most recent case, from the first outbreak in northeastern Liaoning, it’s a 2,150 km (1,335 mile) drive south through the pig producing provinces of Hebei and Shandong, as well as Jiangsu, another infected region.
A rapid expansion of the northeastern pig farming sector in recent years means more live pigs travel thousands of kilometers from farm to market to slaughter and processing in the central and southern regions.
Wide varieties of farm sizes from backyard family-run pens to large-scale commercial operations, as well as a large wild boar population, make it difficult to prevent and control the disease, the FAO says. Backyard farms account for 27 percent of China’s output.
China’s large population of wild boar, which can harbor the disease without showing symptoms, is estimated to total around 33.5 million, according to Reuters calculations based on FAO data. Pigs may also have access to untreated or uncooked food waste and swill.
The country has prohibited hunting of wild boar since 1994 unless farmers can demonstrate they are responsible for crop damage.

*DIFFICULT TO ERADICATE
The disease was first detected in Africa almost a century ago and spread to continental Europe in the 1960s, where it took three decades to eradicate.
All successful eradication programs have involved the rapid diagnosis, slaughter and disposal of animals on infected premises, thorough cleaning and disinfection, removal of insects such as ticks, movement controls and surveillance, according to the OIE.
The most recent case in Europe was reported in Georgia in 2007 and it has since spread to Armenia, Russia and Azerbaijan. It reached Ukraine and Belarus in 2012 and 2013 respectively, and hit Romania in 2017.
It has never occurred in the United States.

미국 내에서 일본식 라면의 인기가 지속적으로 늘고 있다. 일본 현지의 방사능 오염 이슈로 인해 ‘스시’의 인기가 한풀 꺾였다면 이제는 ‘라멘’이 그 자리를 대신하고 있다고 해도 무방할 정도로 뉴욕의 이름난 라멘집에 사람들이 줄을 서서 차례를 기다리는 모습을 쉽게 볼 수 있다. 돼지뼈를 오랫동안 고아 만든 돈코쓰라멘에서부터 일본식 된장인 ‘미소’를 넣어 만드는 미소라멘, 간장베이스의 감칠맛이 있는 쇼유라멘을 기본 메뉴로해 가게마다 저마다의 색깔을 입힌 ��뉴가 미국인들의 입맛을 사로잡고 있다. 심지어 일본식 레스토랑이 아닌 곳에서도 라멘을 서빙하는 경우를 볼 수 있을 정도이니 앞으로 라멘은 버거나 피자, 핫도그처럼 누구나 손쉽게 즐겨 찾는 미국화된 인기 메뉴로 성장할 가능성이 높다.

육고기를 절여서 만드는 Charcuterie는 전채 음식에서 빠질 수 없는 대표 메뉴다. Charcuterie는 미리 준비해 둘 수 있고 저장 기간이 다소 길며, 플레이팅 및 서비스도 어렵지 않기 때문에 셰프들에게도 효자 노릇을 톡톡히 해왔다. 요즘 캘리포니아, 플로리다 등의 해안지역에서는 전통적인 육고기를 사용한 Charcuterie를 해산물로 대체하는 레스토랑이 늘고 있다. 소위 ‘Sea-cuterie’라 불리는, 해산물을 이용해서 Curing하는 Seafood Charcuterie이다. 최근 몇 년간 신선한 농축산물을 고객의 테이블로 가져오는 Farm to Table이 화두였는데, 연관된 개념으로 수산물을 이용한 Ocean to Table의 선두 주자로 Seafood Charcuterie를 꼽아 본다.

피자는 대중적으로 인기가 높은 먹거리로 이미 커다란 시장을 형성하고 있지만, 미국 소비자들에게 너무나도 매력적으로 다가오고 있는 새로운 형식의 피자가 있다. 바로 ‘Cone Shaped Pizza(고깔모양의 피자)’인데 Forbes지가 이를 떠오르는 10대 푸드 트렌드의 하나로 꼽았을 정도로 커다란 주목을 받고 있으며, 이미 미국의 많은 레스토랑들과 투자자들이 눈여 겨 보고있는 아이템이다. 이렇게 많은 인기를 끌고 있는 가장 큰 이유는 기존의 피자에 비해 절반에 불과한 칼로리에 있다. 다시 말해, 피자를 찾는 이에게 ‘Guilty Free’, 즉 칼로리에 대한 부담으로부터의 자유를 제공해 준다는 점이다. 여기에 재미있는 모양과 손쉬운 휴대성 덕분에 더욱 넓은 층의 고객들에게 어필하고 있다는 점도 눈여겨 볼 부분이다.

미국의 2015년 주요 음식트렌드 분석들은 밀, 보리, 메밀, 호밀 등의 곡류가 초콜릿, 커피, 와인 등의 기호식품만큼이나 중요한 인기식품으로 떠오르고 있음을 지적하고 있다. 점점 바빠지는 삶 속에서 사람들은 간편하면서도 몸에 필요한 에너지나 포만감을 주는 음식을 찾기 때문에 밀을 주재료로 하는 식품군의 소비가 증가하고 있다. 여기에 크래프트 맥주(Craft Beer, 고급맥주)의 폭발적 인기가 그 주재료인 곡류에 대한 소비자의 재인식을 불러오고 있다는 견해도 제시되고 있다. 이에 따라 외식업계에서도 곡류가 더욱 더 중요한 재료로 떠오르는 추세다. 실제로 몇몇 최고급 레스토랑의 셰프들은 맛, 신선도, 질감을 좀 더 살리기 위해 밀을 직접 재배하거나, 믿을 수 있는 농장과의 직거래를 통해 보다 나은 품질의 곡류를 찾기 위해 노력하고 있다.

2015년에도 미국 크래프트 맥주 시장의 뜨거운 열기는 계속되고 있다. 1930년 금주령 해제 이후 2007년까지 80여 년간 미국 내 양조장의 개수는 1500개로 증가했으나, 그 후 10년 사이에 양조장의 수는 급팽창해 3000개 이상으로 두 배나 늘어났다. 특히, 새롭게 나타난 대부분의 양조장들은 기존의 대량 생산 맥주와는 차별되는 재료를 사용해 개성이 강한 맛을 지닌 고급맥주를 만드는 소규모 양조장들로서, 이른바 크래프트 맥주라는 새로운 시장을 탄생시켰다. 그 여세에 힘입어 이제 ‘마시는 맥주’를 넘어서 ‘요리하는 맥주’까지 인기인데, 맥주에 사용한 곡물의 맛과 향, 그리고 발효를 통해 생성된 감칠맛까지 요리에 입히려는 시도인 것이다. 또한, 맥주와 음식의 마리아주를 찾는 맥주-푸드 페어링(Beer & Food Pairing)을 전문으로 하는 레스토랑도 증가하는 추세라서 당분간 크래프트 맥주는 그 열기가 쉽사리 식지 않을 Mega Trend로 꼽을 수 있다.

유지류 부문에서 아보카도 오일과 코코넛 오일의 빠른 성장이 눈에 띈다. 특히, 코코넛 오일은 은은하고 달콤한 풍미를 지닌 특징이 있는데, 과거 한때 포화지방산 함량이 높아 건강에 해롭다고 알려진 적이 있었다. 하지만, 최근의 연구결과 함유된 포화지방산이 우리 몸에 좋은 ‘중사슬 포화지방’이라는 사실이 밝혀져 오히려 심장병 예방과 미용 및 다이어트에도 탁월한 효능이 있는 건강한 오일로 새롭게 각광을 받게 됐다. 또한, 추가적인 연구를 통해 코코넛 오일에 함유된 항생효과 물질을 이용한 질병 예방효과에 대한 가능성이 제시되고 있으며, 딱딱하고 두꺼운 코코넛 껍질에 싸여 있는 과육에서 추출하므로 농약이나 오염으로부터 상당히 자유롭다는 점에서 안심하고 사용할 수 있는 스킨케어 및 화장품 원료로도 떠오르고 있다.

건강을 중요시하는 트렌드는 이미 오래 전부터 꾸준히 자리매김해오고 있는데, 여기에 ‘단순함’이라는 주제가 최근 새롭게 연결돼 부상하고 있다. 이는, 조리법이 간결하고 손쉽게 만들 수 있는 건강한 음식을 의미한다. 특히, 미국에서 커다란 시장을 형성하고 있는 에너지 바 제품들 중에서도 각종 곡물과 과일 등을 주재료로 만든 그라놀라바가 건강에 유익하면서도 간단히 즐길 수 있다는 장점을 바탕으로 높은 성장세를 보이고 있다. 이에 따라, 자신만의 개성을 살리면서 보다 다양한 건강식재료를 넣은 곡물바를 직접 만들어 판매하는 레스토랑 및 제과점들이 늘고 있다.

Peel to Stem이 소비자와 업계의 커다란 호응을 얻게 된 이유는 기존에 버려지던 식재료를 모두 사용함으로써 식재료 구입비용 및 음식쓰레기 처리비용을 줄일 수 있을뿐만 아니라, 보다 많은 영양소를 섭취하는 효과를 볼 수 있게 됐기 때문이다. 한 예로, 발표된 자료에 따르면 브로콜리의 머리부분보다는 버려지는 줄기부분에 약 3배 이상의 영양소와 식이섬유가 존재한다고 한다. 이렇게 경제적, 영양학적 장점이 뛰어난 Peel to Stem 트렌드는 업계에 빠르게 확산, 전파될 것으로 예상된다.

마차(또는 말차)가 커피를 대신할 카페인 음료로 떠오르고 있다. 이는 새로운 맛을 원하는 소비자 욕구를 반영하는 트렌드이지만, 동시에 말차의 건강기능성에 보다 많은 소비자들이 호응하고 있다는 점에 주목할 필요가 있다. 알다시피, 녹차와 마차는 동일한 찻잎을 이용하지만 공정과정과 식음방법이 다르다. 말린 잎을 뜨거운 물에 우려 마시는 녹차와 달리 마차는 잎맥을 제외하고 통째로 갈아서 마시는 차다. 미국의 대표적인 건강지 ‘Health’는 ‘마차’ 칼럼을 통해 말차에는 녹차보다 건강상 혜택이 많다는 연구결과를 발표했다. 잎에서 우려낸 수용성분만 섭취하는 것이 아니라 잎을 통째로 먹기 때문에 물에 용해되지 않는 미네랄, 비타민 및 섬유질을 추가로 섭취할 수 있다는 것이다. 또한 미국 임상영양저널의 논문 역시 마차의 건강기능을 널리 알렸는데, 이에 따르면 마차에는 강력한 항산화 성분인 EGCG(카테킨)이 다량 들어 있어 신진대사를 북돋우고 암세포의 성장을 지연시키는데 기여한다고 한다.

기존의 디저트가 단맛에 집중했다면, 최근 트렌드로 떠오른 ‘Savory 디저트’는 그 단어가 의미하는 것처럼 다양하고 색다른 첨가재료들의 감칠맛이 단맛과 충돌, 보완, 융합하면서 주는 유니크한 미각경험에 포인트를 둔 새로운 디저트이다. 이는 현대 소비자들의 미각이 보다 발달, 다변화되면서 기존의 맛의 조합에는 없었던 새로운 차원의 맛을 추구하려는 욕구에서 발생한 트렌드로 볼 수 있다. 이에 따라 기존의 디저트 레시피에서는 함께 등장하는 일이 적었던 커피, 고추, 후추 등 독특한 재료들을 사용한 새로운 시도들이 음식 트렌드의 중심지인 뉴욕 등을 중심으로 활발히 진행되고 있다.

사회, 경제의 발달과 더불어 오늘날의 소비자들은 포만감을 위해 음식을 찾는 것을 떠나 이제는 음식을 통한 몸과 마음의 힐링을 추구하고 있다. 때문에, 미국 외식시장을 주도하는 트렌드를 살펴보면 건강을 주제로 한 트렌드들이 매년 빠지지 않고 등장하고 있는데, 해가 거듭할 수록 건강 레시피 트렌드에 세분화가 이루어지고 있다는 점에 주목할 필요가 있다. 올해 새롭게 부각되고 있는 건강 관련 트렌드는 ‘미니멀 프로세싱’이다. 이것은 말 그대로 요리 공정을 최대한 간소화해서 재료 본연의 맛과 모양을 살리고 영양손실을 최소화하는 것을 의미한다.
요거트샐러드

요거트는 널리 알려진 대중식품이다. 지난 수년간 기존 요거트와 달리 염도와 당도가 낮고 건강에 더 유익한 Greek Yogurt가 대세였다. 웰빙 시대의 적인 설탕과 소금의 섭취를 줄일 수 있기 때문이다. 여전히 Greek Yogurt가 주류시장을 이끌고 있지만, 2015년 요거트 시장에 큰 바람이 불고 있다. 바람의 주인공은 Savory Yogurt. 사전적 의미로 Savory는 ‘맛이 좋은, 향긋한, 풍미 있는’이라는 뜻이다. 실무적으로 얘기하자면, 기존의 밋밋한 맛을 가진 Greek Yogurt에 다양한 자연적인 맛을 추가한 것이 Savory Yogurt이다. 국제연합식량농업기구(FAO)에 따르면, 곤충은 풍부한 아미노산과 높은 단백질 함량, 포화지방보다 불포화 지방산 함량이 높은 음식으로, 영양학적 가치가 매우 크다. 또한 쇠고기와 비교해 미네랄과 비타민, 섬유질의 함량도 높다. 더욱이 2050년에 이르면 90억에 이르는 인구가 먹을 식량이 절대적으로 부족하게 되며, 이대로라면 육류 생산에 따른 물 부족과 이산화 탄소로 인한 지구온난화 현상 역시 심각할 전망이다. ‘곤충’은 이러한 여러 문제점을 해결할 수 있는 ‘Game- Changer’로 떠오르고 있으며, 새로운 트렌드를 쫓는 뉴욕과 샌프란시스코의 몇몇 레스토랑에서는 실험적으로 메뚜기나 밀웜을 이용한 메뉴를 선보이고 있다.

미국은 다양한 인종과 문화가 하나로 융합된 나라이다. 때문에 음식 트렌드에 있어서도 여러 나라와 시대를 넘나드는 다양한 요리가 뜨고 지기를 거듭해왔다. 파이는 기원전 9500년 신석기시대의 이집트에서 탄생하여 오늘날까지 이어져오는 역사가 긴 음식이다. 로마의 부유층이 발전시키고 남아프리카, 호주, 동남아 지역에서 다채로운 진화를 거듭한 고기파이(Meat Pie)가 2015년 미국에서 재현돼 커다란 인기를 얻고 있다. Meat Pie는 다양한 나라에서 변형되어 만들어져 왔던 만큼 그 재료에 크게 구애받지 않는다. 육류, 어류, 갑각류 등 다양한 재료를 Meat Pie의 속으로 사용할 수 있기 때문에 고객의 다양한 취향을 충족시킬 수 있다는 것이 큰 장점이다.

‘Gyro(지로, 혹은 자이로)’ 샌드위치는 이태원 등의 한정된 지역을 제외하곤 아직 한국시장에선 익숙하지 않은 이름이지만 이미 세계적으로 널리 알려진 대표적인 샌드위치의 한 종류다. 켜켜이 쌓아 올린 양념고기를 벽난로처럼 생긴 오븐 앞에서 돌려가며 구워내고, 알맞게 잘 구워진 부위를 조금씩 베어내어 샌드위치에 사용한다. 그리스 방식으로 만들어진 이 샌드위치는 ‘Tzatziki(차지키)’라는 그리스식 요거트 베이스의 소스를 듬뿍 뿌려먹는데, 고기와의 궁합이 절묘하게 조화를 이룬다. 2015년 현재 미국의 푸드 트렌드를 선도하는 뉴욕, 샌프란시스코, 시카고 등지에서 Gyro가 좀 더 수준 있고 신선한 먹거리로 재조명 받으면서 현지인들의 입맛을 사로잡고 있다.

Growing to death: A punctuated extinction (part 2 of 3)
The extravagant lifestyles that consumers are “required” to pursue, are allied to constant growth models. A model that demand compulsive consumption to be supremely pervasive, despite it being scientifically impossible (since it breaches both first and second laws of thermodynamics). It is must therefore be anti-leadership that continue to direct us to chase impossible lifestyles?
We are bombarded across media platforms, to pursue the unattainable – a misdirection that keep us occupied, whilst surreptitiously ensuring we remain unthinking gluttonous consuming machines. This elaborate ruse covers factory-styled value chains that are end-to-end, from: manufacturers, retailers, advertisers, financiers, advisors, and consumers - all being equally blind and daft to believe in continuous growth? The global focus upon constant growth (e.g. GDP of nations), are relentlessly pursued by destroying Global Public Goods (GPG’s). A global public good (GPG) is a good that can be used, but not be destroyed for future generations – more exactly, a GPG has 2 key properties: (1) non-rival and (2) non-excludable12. Non-rival imply consuming the good by one person, does not diminish obtainability of the good for consumption by another. Non-excludable imply none can be excluded from using the good. If both requirements are completely satisfied, a public good is said to be pure13. Typical examples of GPG’s include the earth’s air, water, oceans, forests, animals, space, GPS, etc. Importantly, GPG’s are known to be a poorly managed global problem14.
 All of these “free” vitally, inter-locked life-sustaining resources continue to be abused by inward and selfish leadership, unwilling to grasp the true cost of “big-is-better” developmental premise. To put it bluntly, even if each human on earth, theoretically had sufficient financial capital to afford a “1%-lifestyle”, the direct impact upon GPG’s would result in ecological collapse. In other words, our physical and finite planet, does not have the resource capacity to sustain it. Sadly, very few leaders are willing to admit this since all of humanity, from City to Village, are still sold a lifestyle that can only end in devouring the planet4. The opulent, hi-tech lifestyles we are “required” to pursue under continuous consumption models, have inherent threats, like: defying earths limits; increase inequality; increase poverty and oppression; and most vitally - destroying the planet’s ability to sustain complex life4. So, our mechanistic leadership across public and private sphere’s endorse corrosive development models that murder living systems (ecosystem). As an example, if everyone in the world today could enjoy a lavish lifestyle, then we would need 5 planets (5 earths)14, to support it. Planetary viability (earth’s survival) requires us to change the thinking from the dominant mechanical stupidity, to systemic enlightenment1, for this is the only way to fundamentally change our relationship with one another and the ecosystem.
