Before I knew you all existed, I marveled at the beauty of all of this alone. 1️⃣Shan Lin Xi from @ecochateas in a hand carved tea scoop (a collaborative project between myself and my father in law) made from semi-petrified 20,000 year old Fir. 2️⃣sunlight and shadow as the leaves rest in the hot water being coaxed to open 3️⃣influenced by the previous pour, they gather to one side, awaiting the next infusion. 4️⃣by this time I’m only getting two sips of soup per steep as the expansion of the leaves capitalizes the space in the 70ml gaiwan. 5️⃣heres the thing.. those scissors are basically new. 2017 Da Yu Ling from @taiwansourcing. For me origin tea's 105K DYL is my benchmark for all green oolongs... you could brew 1/3 of a gaiwan/pot dry leaf for 30 seconds minimum and get the most delicious tea with amazing hui gan... to me real DYL should be pushed hard for the best results! I pushed this tea harder than last week in terms of water/leaf ratio and it is holding up very well! Vegetal, a little bitterness that turns to citrus sweetness in the finish, long aftertaste and good body. This Zhu Ni Shiu Ping is from the early nineties. It has been brewing High Mountain Oolongs for me a beautifully since it found me. The high fired clay has a very nice ping when the lid gently strikes the pot. The teapot's shiny red color deepens when hot water is poured into and over it while brewing.
