Now add 2 spoons of curd, a little red chili, turmeric, coriander powder and salt and mix it well.
Let the paneer marinate with these spices for 15 to 20 minutes.
While it is my night, dry roast all the proof spices lightly in a pan and prepare the masala in the mixer grinder.
Now heat oil in a pan and lightly fry the paneer pieces in it and keep them aside.
After this add a little more oil as per the need in the pan and fry the big cardamom and small cardamom a little.
Now add ginger garlic paste, red chili powder, coriander powder and turmeric and fry it, now add tomato and onion and fry it.
Along with this, also add green chilies cut lengthwise.
Add some water to it and cook its poverty in medium femme.
After the poori is cooked, put paneer pieces in it and mix it.
Now add garam masala and prepared masala to this poori and mix well.
Add kasoori methi and garnish with green coriander and serve with roti, naan or paratha.

CHOLE RICE

Chole Chawal is a typical North Indian street food made with rice and chickpeas, which makes a delicious and healthy meal.
Every market in Delhi is always crowded, with both wide and narrow lanes. One could spot hawkers every two minutes. It is unbelievable, but true. From rich to poor, everyone would crowd up these hawkers and eat their favourite food. There are many perfect places to explore the flavours of street food.
There are many chole walas in the market, but this one in the Gaffar market in Karol Bagh is one of the best. His stuff sells like hotcakes. The rice is made with some peas and tiny cubes of paneer. It is beautifully decorated with tomatoes, chillies, paneer, etc. The interesting part of this dish is the cottage cheese, where the vendor fills a plate with rice, tops it with chole, and then tops it with some spicy spinach. The spinach is topped with a slice of cottage cheese and some freshly made mango or carrot pickles, depending on the season.
One achieves a great sense of satisfaction after eating this protein-rich bowl. a street food bowl with high chilly content, low oil, fresh green spicy spinach that tastes like chutney, crunchy onions, tangy mango pickles to bite in between, and if you get that sharp chilly taste, bite into the paneer piece…wow…can you absorb the flavours?
Chole chawal, also known as chole rice, is my all-time favourite north Indian dish, and it can be found in almost every household during weddings, parties, or festivals. 80% of the people you meet will have this on their favourite menu.
Since I am very talkative so as not to waste much of your time, I will bring to you my Mom’s Secret recipe straight from her kitchen!!!!

INGREDIENTS
RICE
1 cup of rice
1 large cardamom
2 small cardamoms
1 or 2 bay leaves
cumin
1 teaspoon oil
1/2 teaspoon cumin seeds
Salt to taste
Chole/Chickpeas
1 /2 cup chickpeas , soaked overnight
Salt to taste
4 tablespoons oil
2 tbsp Ghee
3-4 cloves
2 bay leaves
1 tsp cumin seeds
2 green chilly, slit into two
3 medium tomatoes , puréed
1 tomato, chopped
2 tsp coriander powder
1 tsp red chili powder
1 tsp red pepper powder or Kashmiri red chili powder
1 tsp black pepper powder
1 tsp. amchur powder
½ asafoetida
½ garam masala
Fresh coriander leaves for garnishing
Rice
In a large mouth vessel, heat 1 tablespoon of oil.I chose this so that the grains of rice can get enough space to spread and cook.
Add the bay leaves, cloves, cardamom, and cumin.
Roast till we get an amber colour.
Add 2 cups of water. We took one cup of rice, so we always took twice as much water as rice.
Let boil, and add salt.
Add rice and cook till it’s done.
(You may also add peas at the point when the rice is 80% cooked, cover, and cook on a slow flame till done .)
Chole
Pressure Cook the chickpeas with bay leaves (you may also add tea bags, gooseberry tied in muslin cloth) salt for 4-5 whistles or until completely done. (Remove the tea bags and gooseberries, once boiled.) .
Purée three tomatoes and chop one tomato.
Add the slit green chili to the hot oil.
Next, add the puréed tomatoes, and as soon as you add the puree, add salt to taste.
(Remember your boiled chickpeas’ water also contains salt, so add accordingly.)
Add red pepper powder/Kashmiri red chilli powder, amchur powder, black pepper powder and pomegranate powder.
(NOW IT’S TIME FOR THE SECRET INGREDIENT.)
On a hot tawa, take coriander powder, cumin, and cloves, and on low flames, roast them until they change colour and turn aromatic.
Remember not to burn it.
Then combine them with the tomato puree and cook until the oil separates.
This gives a good black and brown colour to your chickpeas.
(You can use tea bags and soda together while)
Add the drained chana and simmer for 5–10 minutes.
Turn off the heat.

Flavoursome Matka Veg Biryani
Most of you have heard about matka biryani or manpaanai biryani in hotels and restaurants. Vegetarians typically prefer these matka biryani, but the flavour of layered rice and gravy cooked over a slow fire lends an incredible taste. The basmati rice enriches the taste with every bite. Keep reading the blog to learn how to make a simple and tasty matka veg biryani with sunflower oil manufacturers in India.
Ingredients 
Basmati rice, 1 cup
Water, 5 cups
Whole spices: one cinnamon, one clove, one cardamom, one black stone flower, and one bay leaf
Salt is required as per taste.
For gravy 
Sundew refined sunflower oil - 3 to 4 tablespoons
One-bayleaf
One big onion
Ginger and garlic paste - ½ teaspoon 
Two: tomato
Red chilli powder, 1 teaspoon
Dhaniya powder - ½ teaspoon 
Garam masala, 1 teaspoon
turmeric powder - ¼ teaspoon 
Curd: - ¼ cup
Salt and water - as per required 
Paneer pieces or mixed vegetables, as per requirement
To garnish 
A handful of dried onion
Saffron milk, 2 tablespoons
Mint and coriander leaves: required as per taste
Ghee, 1 tablespoon 
Method 
Wash and soak Basmati rice for at least 30 minutes. Bring 5 cups of water to a boil, then stir in the whole spices and season with salt to taste. Cook until the rice is 75% done. Remove the rice to a plate and drain the excess water. Allow it to cool.
In a bowl, Mix in the chopped paneer. Allow it to soak in water until ready to use. Cut the onions and tomatoes into small pieces. Fry one thinly sliced onion until golden brown and set aside.
In a mud pot, heat the oil and sauté the bayleaf and onions. Cook thoroughly. Mix in the ginger and garlic paste. Cook until the tomatoes are mushy. Combine the turmeric powder, red chilli powder, dhania powder, and garam masala powder in a mixing bowl.
Add some salt and sauté well. When it thickens, stir in 1/4 cup curd. Add the paneer pieces when the sauce has thickened to a semi-gravy consistency. 
Cover the mud pot with a layer of rice and gravy. Layer the remaining rice on top of the gravy. Top the salad with the mint-coriander leaves and fried onions. Pour in the saffron milk. drizzle with the ghee. Close it with a sheet of thermal foil followed by a plate. Keep a bowl of water on top of the plate. Place the mud pot in DUM for 5-8 minutes over a low flame. If you keep it for an extended period of time, the bottom layer may become burned.
If you want to keep this mixture in DUM for a long time, heat a dosa tawa on high heat for 10 minutes before placing the mud pot with thermal foil arrangements on it. Let it heat on a low flame for 10-15 minutes.
Now the steamyy, spicyy, and delicious matka veg biryani is ready to be served.

PROTEIN STARTERS

“PROTEIN PIZZAS”
Ingredients-
1/2 cup moong sprouts
1 green chilly
1 inch ginger
1/4 teaspoon jeera
2 tbsp homemade paneer (made from cow’s milk)- Recipe given below
250 ml cows milk
2 medium sized Tomato finely chopped
1/2 Onion finely chopped
1/2 Capsicum finely chopped
Juice of 1 lime
green chilly garlic paste( made from 2 cloves of garlic and one green chilly)
Oregano flakes
Chili flakes
2 tsp oil( one tsp for dosa and one tsp for sauce)
1 tbsp sugar
Method-
Take a Non-Stick Tawa
Put 1 tsp oil and spread it evenly on the tawa
Now make mini dosas from the moong sprout batter and keep aside
Remove the mini  dosas from the tawa
Take each dosa and top with pizza sauce, paneer,oregano and chiil flakes
Put the mini dosa on the tawa again and cover it and heat for one to two minutes.
Piping hot protein pizzas ready to serve with ketchup
How to make the moon sprouts batter- Take 1/2 cup Moong Sprouts + 1 Green Chilly + 1 inch Ginger + 1/4 tsp Jeera + salt and grind with little water to dosa batter consistency
How to make 2 tbsp paneer at Home- Take 250 ml cows milk. Boil the milk. While boiling milk add 1 lime juice and stir well. Now strain this milk using a muslin cloth and press it hard on a smooth surface to remove excess water Your paneer is ready .
How to make the pizza sauce- Take 1 tsp oil in a pan and heat it. Add green chilly garlic paste, 1/2 onion, 2 tomatoes, 1/2 capsicum,1 tbsp sugar and salt to taste.Cover the pan and let it cook on a slow flame for five minutes. Now allow the mixture to cool. Grind this mixture finely into a paste and your pizza sauce is ready.
